Steps:

  • This makes an 1 1/2 pound loaf.
  • Add the ingredients to the machine according to manufactures directions.
  • Select whole grain cycle or basic white bread cycle.

NO-KNEAD HARVEST BREAD



No-Knead Harvest Bread image

This bread makes wonderful sandwiches -- from a simple panini with sliced green apples and brie, to a sandwich stacked high with turkey (and cranberry mustard or relish) . . . YUM! Another great recipe for no-knead bread . . . they're so easy to make, just requires some advance planning. Recipes comes from King Arthur flour, with a slight variation. As with other no-knead breads, a cast-iron dutch oven or a covered stoneware baker is needed to achieve the best crust. Time indicated does not include fermentation.

3 3/4 cups unbleached all-purpose flour (13.75 ozs.)
1 cup whole wheat flour (4 ozs.)
2 teaspoons salt
1/2 teaspoon instant yeast
1 3/4 cups cool water
3/4 cup dried cranberries
1/2 cup golden raisin
1 cup coarsley chopped walnuts
1 sheet parchment paper

Steps:

  • In large bowl or container mix together the flours, salt, yeast and water.
  • Stir until all the flour is incorporated and the dough is a sticky ball (you may have to use your hands to thoroughly mix in in the flour).
  • Stir in the fruit and nuts -- do not overmix.
  • Cover the bowl with plastic wrap and let rest at room temperature for 8 to 18 hours.
  • Shape and Bake:.
  • Turn the dough out onto a lighly floured surface and quickly shape into a ball by gently stretching the surface of the dough around to the bottom on all four sides, rotating the ball a quarter-turn as you go. Most of the dusting flour will fall off. The bottom of the loaf may appear to be a collection of bunched ends, but they will flatten out during resting and baking. The dough ball should be smooth and cohesive and take no more than 30 to 60 seconds to shape. (To form a log gently stretch the dough. It may be helpful to gently roll it on a floured work surface.).
  • Place the dough in the pan lined with parchment paper.
  • Cover and let rise at room temperature for approximately 2 hours; until a slight indentation remains when you poke it with a finger.
  • Just before baking make several slashes to allow for expansion.
  • Place lid on pot and place bread in cold oven.
  • Set the temperature for 450 degrees.
  • Bake for 45 minutes, then remove lid and continue to back another 5 to 10 minutes; until it's a dark brown color (should be 205 degrees in center).
  • Remove from oven and turn out onto a rack and cool before slicing.

This 2008 Cooking Light Ultimate Reader Recipe Contest winner quickly became one of my baking main-stays. Often I'll double the batch and freeze the extra loaf. I've adapted Jennifer Dunklee's original recipe by adding whole wheat flour, nutmeg and cloves while decreasing cinnamon and maintaining apple skin. 1/2 cup all-purpose flour
1/2 cup whole wheat flour
3/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup apple, grated (about 1 small Granny Smith)
1/2 cup carrot, grated (about 1 small)
1/2 cup zucchini, shredded (about 1/2 small)
1/4 cup walnuts, chopped and toasted
1/4 cup canola oil
1/4 cup fat-free buttermilk
2 large eggs, lightly beaten
cooking spray

Steps:

  • Preheat oven to 350 degrees. Coat a loaf pan with cooking spray and set aside.
  • Combine flours and next five ingredients (through salt) in a large bowl until dry ingredients are well blended.
  • In a separate small bowl whisk together canola oil, buttermilk and eggs. (Kitchen tip: sour milk can substitute for buttermilk. Milk can be soured by adding a small dash of vinegar to a bit less than 1/4 milk. Let milk sour for a few minutes before mixing into wet ingredients.).
  • Add wet mixture to dry mixture, stirring until moist. Fold in grated apple, zucchini and carrots and walnuts, mixing until evenly distributed throughout batter.
  • Pour batter into greased loaf pan. Bake at 350 degrees for 50 minutes or until a wooden pick inserted in the center comes out clean. Let cool on wire rack.

1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon clove
1/2 cup butter, softened
1 cup sugar
2 eggs
3/4 cup canned pumpkin
3/4 cup chocolate chips
3/4 cup chopped walnuts, divided

Steps:

  • Combine flour, baking soda, salt and spices and set aside.
  • In a large bowl, cream butter and sugar, mixing well. Blend in eggs.
  • To the butter and sugar mixture add flour mixture and pumpkin alternately, beginning and ending with flour mixture.
  • Stir in chocolate chips and 1/2 cup chopped walnuts.
  • Spoon into greased 9 x 5 inch loaf pan. Sprinkle with remaining 1/4 cup walnuts.
  • Bake at 350 degrees for 40 to 60 minutes. Test periodically with a toothpick or cake tester until it comes out clean.
  • Cool in pan for about 10 minutes, then remove and cool completely on wire rack.

This Garden Harvest Vegetable Bread is the perfect recipe for sandwiches, thick toast, or to eat fresh by the slice while still warm out of the oven. This yeasted bread is packed with carrots, zucchini, olives, smoky paprika, and oregano to create a loaded savory homemade bread.

3 cups grated zucchini ((about 2 medium zucchini))
1 1/2 Tbsp salt (, divided)
2 1/2 tsps active dry yeast
1 Tbsp granulated sugar
1 cup warm water ((110 degrees F))
2 Tbsp melted butter
2 cups grated carrot ((about 3 large carrots))
1/4 cup chopped olives ((plus more for serving, if you'd like))
3 1/2 - 4 1/2 cups bread flour (*)
1 Tbsp dried oregano
1 tsp smoked paprika
Olive oil (, for greasing the bowl)

Steps:

  • Place the zucchini in a colander and toss with 1 Tbsp of salt. Set aside for 5 to 10 minutes to let the salt draw out the moisture. Once it has sat, squeeze the zucchini to drain out as much excess liquid as possible. Set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment, add the yeast, sugar, and warm water and let set for 10 minutes or until the yeast foamed up around all of the surface area of the water.
  • Turn mixer onto medium-low and add in melted butter, zucchini, carrots, olives, bread flour, oregano, 1/2 Tbsp salt, and paprika. If the dough is too sticky to form a ball, add more flour, 1 Tbsp at a time.
  • Switch to the dough attachment and knead on medium speed for 5 minutes.
  • Grease a bowl with olive oil and transfer dough to the bowl. Cover with a clean kitchen towel and let rise in a warm place until doubled in size, about 1 hour.
  • Line a large baking sheet with parchment paper. Divide the dough into equal halves and shape two round loaves onto the baking sheet, making sure to leave enough room for the bread to at least double in size (you may have to use two baking sheets depending on the size of your sheets).
  • Cover with a clean kitchen towel and let rise for another 30 minutes or until doubled again.
  • Preheat oven to 375 degrees F and bake for 30-35 minutes or until the tops have browned, rotating the baking sheet halfway through.
  • Transfer to a cooling rack and let cool.
  • Slice and serve with butter or plain yogurt and olives.

MULTIGRAIN HARVEST BREAD RECIPE

2 tbsp millet
2 tbsp flax seed
2 tbsp chia seeds
2 tbsp sunflower seeds
2 tbsp pumpkin seeds
2 tbsp sesame seeds
2 cups water
2 tsp yeast
3 tbsp molasses
2 tsp salt
1/2 cup rye flour
1/2 cup whole wheat flour
1 cup bread flour
3 1/2 cups all-purpose unbleached flour

Steps:

  • Place the millet, flax seed, chia seeds, sunflower seeds, pumpkin seeds, and sesame seeds in a pan. Heat the seeds over medium-high heat for about 3-5 minutes or until you can hear the seeds crackling. Make sure to mix occasionally to prevent the seeds from burning on one side.
  • Remove the seeds from the hot pan and place them into a small bowl. Pour 3/4 cup boiling water over the seeds or just enough to cover them. Then cover with plastic wrap and let the seeds cool.
  • In a large mixing bowl, combine 2 cups warm water (110 degrees Fahrenheit) with 3 tbsp molasses.
  • Then evenly sprinkle 2 tsp yeast on top of the water and molasses. Wait until the yeast becomes slightly frothy.
  • Sift 2 tsp salt, 1/2 cup rye flour, 1/2 whole wheat flour, 1 cup bread flour, and 3 1/2 cups all-purpose unbleached flour into a bowl. Then stir the dry ingredients so that all the different flours are well combined.
  • Add the dry ingredients to the wet and combine it with a wooden spoon until well incorporated.
  • . Place the soaked seeds into the dough. If the seeds have any extra water on top, strain before you add it to the dough.
  • Begin working the seeds into the dough with your hands. I found that stretching the dough helps incorporate the seeds best. Once you don't see any more patches of flour, stop kneading the dough.
  • Place the dough into a large bowl (no grease necessary). Sprinkle a small amount of flour on top and cover the dough with a kitchen towel. Then let it sit at room temperature for 1 hour and 30 minutes. (Keep between 68-70 degrees Fahrenheit).
  • 10. After 1 hour and 30 minutes go by, deflate the dough and shape is back into a ball with your hands. Cover with a kitchen towel again and let is sit at room temperature overnight or 8 hours.
  • 11. . After 8 hours have passed, deflate the dough once more and reshape it into a ball and place it back into the bowl. Cover with a kitchen towel and let it sit in a warm place for 2 hours or until it doubles in size. To speed up this step, turn your oven onto the proof cycle and place it in your oven. If you don't have a proof setting on your oven, turn your oven on to 300 degrees Fahrenheit for 2 minutes and turn it off. This should be just enough warmth to let the dough proof.
  • 12. Remove the proofed dough onto a floured surface and divide it into halves.
  • 13. Shape each piece of dough into squares, then fold in each corner of the square towards the center.
  • 14. Shape the dough into a smooth ball and place it into lightly floured 9-inch proofing baskets. Dust the dough with flour and cover with a kitchen towel. Let it proof in a warm place for 1 hour and 30 minutes or until it doubles in size.
  • 15. Place a cast iron or Dutch oven pot (with lid) into the oven and let it heat up to 500 degrees Fahrenheit.
  • 16. Once the oven reaches 500 degrees Fahrenheit remove the pot from the oven. Open the lid and dust the bottom of the pot with flour. Gently flip the proofed dough into the cast iron or Dutch oven pot.
  • 17. (optional) Using a sharp blade make a few decorative slits into the top of the dough.
  • 18. Using a spray bottle, lightly spray the bread dough with 3-4 sprays of warm water. Then place the hot lid on top and bake at 430 degrees Fahrenheit for 20 minutes.
  • Note: Most people place an oven safe bowl filled with water in the oven to achieve that nice bread crust; I find that lightly spraying the bread with warm water is an easier way to achieve the same results.
  • 19. Then remove the lid from the pot and bake for an additional 15-20 minutes at the same temperature.
  • 20. The moment the bread is baked, CAREFULLY remove the bread with a spatula and place it onto the cooling rack. Be very cautious as the cast iron will be extremely hot.

2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
2 cups sugar
3/4 cup vegetable oil
3/4 cup buttermilk
3 large eggs
2 teaspoons vanilla
2 cups grated carrots
7 ounces sweetened flaked coconut
1 cup chopped walnuts
8 1/4 ounces crushed pineapple in syrup, drained

Steps:

  • Preheat oven to 300. Spray a 9x5 loaf pan with non-stick spray. Cut a 15x4 inch strip of parchment paper. Line bottom and narrow sides of pan with the paper, leaving overhang on both sides. Spray paper with non-stick spray.
  • Whisk flour, baking soda, cinnamon, and salt in large bowl. Whisk sugar, oil, buttermilk, eggs, and vanilla in medium bowl to blend.
  • Add sugar mixture to flour mixture. Stir just to blend. Add grated carrots, coconut, chopped walnuts, and crushed pineapple. Stir to distribute evenly.
  • Transfer batter to prepared loaf pan. Bake until tester inserted into center comes out clean, about 90 minutes.
  • Cool 10 minutes. Run a sharp knife around edes of pan. Invert onto rack and remove parchment paper. Turn bread over and cool completely. Store in airtight container at room temperature.
