Number Of Ingredients 4

3 cups (600g) sugar
3/4 cup (180mL) water
1 tbs (15mL) flavored extract
1 cup (240mL) corn syrup

Steps:

  • In a 3 quart pan, stir together the sugar, corn syrup and water.
  • Line and grease a 9x13 (23x33cm) heat proof baking sheet with sides. I don't recommend using glass as it can crack with thermal shock.
  • In a medium saucepan, stir sugar mixture over medium heat until sugar dissolves. If any sugar crystals form on the sides of the pan, brush them down with a pastry brush dipped in water.
  • Turn up heat to medium high and bring to a boil. Stop stirring.
  • Without further stirring, heat until a small amount of syrup dropped into cold water forms hard, brittle threads. This takes about 20-30 minutes. The sugar will boil vigorously and then slow down and take on a pale amber color at the upper temperature. This is between 300-310F (149-154C) for those using a thermometer.
  • Remove from heat. Add in flavoring and food coloring if desired and stir gently with a heat proof spoon (such as a wooden spoon or silicone rated above 300F.) Steam will rise up, so stand to the side when adding flavoring or colors.
  • Carefully pour candy out on baking sheet. Allow to cool 5-10 minutes and score the candy with a knife for more uniform pieces.
  • Let cool completely before breaking apart at score lines or cover and smack candy with the back of a spoon until you get the desired sized pieces.
  • Store in an airtight container. If desired, dust with powdered sugar before storing.

  • Butter two 15x10x1-in. pans; set aside. In a large heavy saucepan, combine the sugar, corn syrup, water and food coloring. Cook and stir over medium heat until sugar is dissolved. Bring to a boil. Cook, without stirring, until a candy thermometer reads 300° (hard-crack stage). , Remove from the heat; stir in flavoring. Immediately pour into prepared pans; cool. Dust with confectioners' sugar; break into pieces. Store in airtight containers.

Cover and cook for 3 minutes to dissolve sugar crystals. , Uncover; cook on medium-high heat, without stirring, until a candy thermometer reads 300° (hard-crack stage), about 25 minutes. Remove from the heat; stir in cinnamon oil (keep face away from mixture as oil is very strong). Immediately pour onto prepared pan. 2 cups sugar
2/3 cup light corn syrup
1/2 cup water
Food coloring, optional

Steps:

  • Brush candy molds with oil or coat lightly with cooking spray. If using two-piece molds, close and secure with rubber bands or clamps. If using molds with stick holders, insert sticks. Place molds on a greased baking sheet. , In a large heavy saucepan, combine sugar, corn syrup and water. Bring to a boil, stirring constantly to dissolve sugar. ½ cup confectioners' sugar for dusting
2 cups white sugar
1 cup water
⅔ cup light corn syrup
1 teaspoon peppermint oil, or other flavored oil
1 teaspoon any color food coloring

Steps:

  • Generously coat a cookie sheet with confectioners' sugar, and set aside.
  • In a heavy bottomed saucepan, stir together the white sugar, water and corn syrup until sugar has dissolved. Bring to a boil over medium-high and cook to a temperature of 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. Remove from heat, and stir in the flavored oil and food coloring.
  • Immediately pour the sugar mixture onto the prepared cookie sheet in a thin stream (this helps it cool). When the candy is cool enough for the outer edge to hold its shape, cut into bite size pieces with scissors. Let cool completely, then store in an airtight container.

1 1/2 cups sugar (use nothing less than this amount)
2/3 cup evaporated milk
2 tablespoons butter or 2 tablespoons margarine
1/8 teaspoon salt
2 cups mini marshmallows
1 1/2 cups semi-sweet chocolate chips (9 oz)
3/4 cup chopped walnuts (or use pecans or macadamia nuts)
1 1/2 teaspoons vanilla

Steps:

  • Line a 8-inch square pan with foil.
  • In a heavy-duty sauce pan, combine sugar, evaporated milk, butter and salt; bring to a full rolling boil over medium heat, stirring constantly.
  • Boil stirring constantly for 4-5 minutes (this must be timed nothing less than 4 minutes!).
  • Remove from heat; stir in the marshmallows, chocolate chips and vanilla, stirring vigorously until marshmallows are completely dissolves.
  • Stir in nuts.
  • Pour mixture into prepared foil-lined pan.
  • Refrigerate for 2 hours or until firm.
  • Lift from pan (with foil) remove foil; cut in squares.
