Pigeonholed into a can-molded, jellied sidekick to turkey, the true breadth of the cranberry's abilities are far reaching and delicious. Take a hanger steak for instance. It's rich, meaty, and sings in perfect harmony with the tart, acidic flavor of cranberries.

1 tablespoon olive or canola oil
2 (8-ounce) hanger steaks, at room temperature
Salt and ground black pepper
1 1/2 cups fresh cranberries
1 tablespoon honey
Zest and juice of 1 small orange
1 spring rosemary, leaves removed and roughly chopped
1 (1-inch) knob ginger, peeled and roughly chopped

Steps:

  • Place a large cast-iron skillet over medium-high heat with the oil. Season the steaks liberally with salt and pepper and sear in the skillet, turning once, until cooked to your desired doneness (about 6 minutes per side for medium). Let the cooked steaks rest on a plate for about 10 minutes before slicing.
  • While the steaks are cooking, in the bowl of a food processor combine the cranberries, honey, orange zest and juice, rosemary and ginger. Pulse the machine 15 to 20 times to coarsely chop and combine all of the ingredients. Season with salt and pepper. Reserve the cranberry sauce.
  • Serve the steaks by thinly slicing them against the grain and garnishing with the reserved cranberry sauce.

TEA BRAISED HANGER STEAK WITH ROOT VEGETABLES



Tea Braised Hanger Steak with Root Vegetables image

2 pounds hanger steak, cleaned and cut 1-inch dice
Salt and freshly ground black pepper
Canola oil, to cook
2 large onions, 1-inch dice
1/4 cup minced garlic
1/4 cup minced ginger
1 large carrot, peeled and 1-inch roll cut
2 ribs celery, 1-inch pieces
1 celeriac, peeled, 1-inch dice
1 large sweet potato, peeled, 1-inch dice
2 parsnips, peeled and 1-inch
2 cups cabernet sauvignon
1/2 cup naturally brewed soy sauce
4 ounces palm sugar (may substitute brown sugar)
2 Lapsang Souchang teabags (Recommended: Honest Tea Co.)
1 to 2 quarts water, to cover

Steps:

  • Season the meat lightly with salt and pepper. In a hot, medium size stock pot coated lightly with oil, brown the meat on all sides then set aside.
  • In the same pot, add a little bit more oil and caramelize the onions, garlic and ginger, about 3 to 4 minutes. Add the carrots, celery, celeriac, potatoes and parsnips. Saute for 4 to 5 minutes. Deglaze with wine and reduce by 50 percent. Add the soy, sugar, seared meat teabags and water to cover. Check for seasoning. (The flavor of the braising liquid will be the flavor of the final product. Make sure it is right on!)
  • Bring pot to a boil and lower heat to a simmer. Simmer for about 2 to 2 1/2 hours or until is extremely tender but not falling apart.
  • In a large pasta bowl, ladle in stew, and enjoy.
  • Wine Suggestion: Honig Cabernet Sauvignon 1997

ROAST HANGER STEAK, PORT WINE AND SHIITAKE MUSHROOM WITH ROAST SHALLOTS



Roast Hanger Steak, Port Wine and Shiitake Mushroom with Roast Shallots image

4 pounds untrimmed hanger steak
1 tablespoon whole black peppercorns
2 crushed bay leaves
1/2 teaspoon dry thyme
1 large onion, peeled and sliced
1 medium carrot, peeled and sliced
3 cloves garlic, smashed
1 cup full bodied red wine
1/2 cup port wine
1-ounce olive oil
1 tablespoon olive oil
12 medium shallots, peeled and trimmed
8 ounces shiitake mushrooms, stems off, washed and split, (stems added to stock)
2 ounces port wine
1/2 teaspoon butter
1/4 teaspoon chopped rosemary
Salt and pepper to taste

Steps:

  • For the steak: Trim fat and silver skin from steak.
  • For the marinade: Mix all ingredients together. Marinate steak and scraps for 24 hours refrigerated.
  • Remove steaks from marinade. Strain and reserve juices. Skim off oil and discard. Saute scraps, vegetables and spices to brown. Drain fat. Add marinade and reduce to half. Add 2 cups cold water and bring to boil. Simmer minimum 30 minutes, skimming impurities from top.
  • For the finished dish: In the olive oil, saute seasoned hanger steaks over high heat. Brown steaks and turn over. Add shallots and cook steaks to desired temperature (rare to medium rare) and remove. Add shiitakes, season and saute with shallots for 2 minutes. Deglaze pan with port wine and reduce to half. Add strained stock. Simmer and reduce to desired consistency. Finish with butter, rosemary and season. Slice steak 1/4-inch thick, against the grain, and on the bias. Top with sauce and serve.

1/4 cup grapeseed oil
1/4 cup dark balsamic vinegar
1 teaspoon garlic puree
1 teaspoon minced rosemary
1 teaspoon salt and pepper blend (60 percent to 40 percent mixture)
Juice of 1 lemon
1, 2 or 3 pounds hanger steak
Potatoes, for serving

Steps:

  • In a bowl, start the marinade for the hangar steak by blending the oil, vinegar, garlic, rosemary, salt and pepper blend and lemon juice and whisk together well. Place the steak in an 8 by 12-inch casserole pan and generously coat with the marinade. Allow to marinate for 30 minutes to 1 hour under refrigeration.
  • For cooking, preheat a grill or chargrill over high heat. Remove the steak from the marinade, straining any excess marinade. Removal of the excess marinade will prevent flaming or charring of the steak during cooking. Place the steak on the grill and cook over high heat, 8 to 9 minutes per side, or to desired doneness.
  • Remove from the grill and allow the steak to rest before slicing. Slice the steak on the bias, top to bottom, against the grain, 1/4 inches thick. Place the sliced steak over potatoes and serve.

MARINATED GRILLED HANGER STEAK

4 tablespoons Dijon mustard
3 cloves garlic, smashed and finely chopped
Pinch crushed red pepper
2 sprigs rosemary, picked and finely chopped
Juice and zest of 1 lemon
2 (1 1/2-pound each) hanger steaks, trimmed, membrane removed and cut in half lengthwise
Kosher salt
Extra-virgin olive oil

Steps:

  • In a small bowl, combine the Dijon, garlic, rosemary, lemon juice and zest, and crushed red pepper. Schmear the steaks with this deliciousness and let them hang out in the fridge overnight or up to 2 hours in the fridge.
  • Preheat the grill. Season the steaks with salt.
  • When the grill is hot, brush and oil the grill. When the flames have dissipated place the steaks on a hot spot on the grill. Brush with the excess marinade and move the steaks out of the flame if there is a flare up. Grill the steak for 4 to 5 minutes on each side for medium rare. Remove the steaks from the grill and let them rest for 5 to 10 minutes before slicing. Serve immediately after slicing.

Four 4- to 6-ounce hanger steaks, trimmed of fat and silver skin
2 1/2 teaspoons ground mustard powder
2 1/2 teaspoons smoked or sweet paprika
2 teaspoons kosher salt
1 1/2 teaspoons chili powder
1/2 teaspoon freshly ground black pepper
1 pound baby bell sweet peppers
4 ounces shishito peppers
2 tablespoons olive oil
2 teaspoons diced habanero chiles, seeds removed
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
1/4 cup olive oil
2 tablespoons honey
1 tablespoon minced pickled cherry peppers plus 4 pickled cherry peppers, drained and quartered
1 tablespoon chardonnay vinegar
Pinch crushed red pepper flakes
2 cloves garlic, grated
1 lemon, juiced

1/4 cup mayonnaise

Steps:

  • For the steak: Place the steaks on a parchment-lined sheet pan. In a small bowl, mix the mustard powder, paprika, salt, chili powder and pepper. Sprinkle the mixture all over the steaks. Let sit at room temperature for 2 hours.
  • Make the charred peppers: Heat a large braiser or cast-iron skillet over medium-high heat until searing hot. Meanwhile, in a large bowl, toss the baby bell sweet and shishito peppers with the olive oil, habaneros, chili powder, paprika, salt and pepper. Add the pepper mixture to the braiser and lower the heat to medium. Cook, stirring occasionally, until charred in spots and tender but still with some bite, 10 to 12 minutes.
  • Make the vinaigrette: While the peppers are cooking, in a large bowl, whisk together the olive oil, honey, pickled peppers, vinegar, red pepper flakes, garlic, lemon juice, salt and pepper to taste. Once the charred pepper mixture is cooked, add them to the vinaigrette along with the quartered pickled peppers. Toss to coat well and set aside.
  • Make the aioli: In a small bowl, mix the mayonnaise, pepper brine, cherry peppers, paprika, garlic and salt to taste. Place in the refrigerator until ready to serve.
  • Cook the steaks: Preheat a grill pan or grill over medium-high heat. Cook the steaks on the grill pan or grill, flipping only once, for 4 to 5 minutes per side for medium-rare or until an instant-read thermometer registers between 120 to 125 degrees F. Allow the meat to rest for 5 to 10 minutes.
  • Slice the meat against the grain to ensure tenderness. Sprinkle with the basil, chives and thyme. Serve with the charred peppers and smoky oli.
