BURGER WITH FRIED EGGS AND GRITS

Steps:
- Combine the avocado and salsa in a small bowl; set aside. Whisk 2 3/4 cups water, the grits, 1 teaspoon salt and a few grinds of pepper in a microwave-safe bowl. Cover with plastic wrap and pierce a few times with a knife; microwave until thickened, 8 minutes. Uncover and microwave until creamy, 4 to 5 more minutes. Whisk in the cheese. Cover and set aside.
- Meanwhile, form the beef into four 3/4-inch-thick patties. Heat a large cast-iron skillet over medium-high heat; sprinkle the skillet with1 teaspoon salt. Add the patties and cook 4 to 5 minutes per side for medium doneness. Transfer to a plate and tent with foil.
- Add the scallions and jalapenos to the skillet. Cook, stirring, until tender, 2 minutes. Add the kale; stir until wilted. Transfer to a bowl.
- Wipe out the skillet. Add the butter and swirl to melt. Add the eggs and fry as desired; set on top of the burgers. Whisk the grits, adding hot water to loosen, if necessary. Divide among plates and top with the kale mixture and avocado salsa. Serve with the burgers.

- Heat grill to medium heat.
- Shape meat into 4 (1/2-inch-thick) patties; sprinkle with dry rub.
- Grill 5 to 6 min. on each side or until done (160ºF).
- Meanwhile, heat skillet sprayed with cooking spray on medium heat. Slip cracked eggs, 1 at a time, into skillet, leaving spaces between eggs; cook 4 min. or until whites are firm and yolks are cooked to desired doneness.
- Top burgers with Singles. Add rolls, cut sides down, to grill. Cook 1 min. or until Singles are melted and buns are lightly toasted.
- Spread dressing onto cut sides of rolls. Fill with lettuce, onions, cheeseburgers and eggs.

This is my version of a favorite childhood recipe that my friend's mother used to make for us. I had to try to recreate from memory over the years and this version is the best. If you like fried rice, I don't think you will be disappointed.

Steps:
- Heat butter in small skillet, add eggs and soft scramble. Remove from heat. Set aside.
- Heat oil in wok or large skillet. Add hamburger and cook very well.
- Add garlic, ginger, soy sauce and pepper flakes to cooked hamburger. Stir-fry for 1 minute longer.
- Add rice. Stir-fry for 3 to 4 minutes longer.
- Stir in scrambed eggs and thinly sliced green onions. Serve at once.

MEXICAN BURGERS WITH AVOCADO & FRIED EGGS
These are savory, spicy burgers that are made even tastier with spicy mayo, avocado slices, a fried egg and pico de gallo. Add cheese if you like, or maybe even bacon. I'm sure these would taste great if cooked on a grill, but I pan-fry them.

Steps:
- Put the first 10 ingredients (cumin through onion) in a food processor and puree. Add half of the ground beef, and pulse to combine everything well.
- Put the rest of the ground beef and one tablespoon of cilantro in a large bowl. Add the beef-spice mixture and stir to combine well. Form this mixture into four burger patties.
- Mix the remaining cilantro with mayo, hot sauce, and lime juice. Add salt & pepper if desired- I usually don't. Set aside.
- Heat oil in a skillet over medium-high heat. Cook patties, flipping once, for about 12-15 minutes, or until desired doneness.
- Just before the meat is done, melt butter in a separate pan, then crack the eggs into it and cook until whites are firm and yolks are runny, about 3-5 minutes.
- Spread the mayo on both inner sides of the buns, then place down avocado slices, meat, fried egg, and pico de gallo. Serve!
