1 tbsp coconut oil
2 cloves garlic (minced)
1 inch fresh ginger root (peeled and grated)
1 pound green cabbage (or coleslaw mix)
½ tsp salt
1 pound ground beef
2 tbsps Keto Soy Sauce (see notes)
1 tbsp sesame oil
1 tsp raw apple cider vinegar
2 tbsps green onion (minced for garnish)

Steps:

  • Warm oil in a skillet over medium-low heat. Sauté garlic and ginger for 1 minute.
  • Add cabbage and salt; stir fry until soft for about 5-8 minutes.
  • Push cabbage to one side of the skillet. Increase the heat to medium-high and lightly brown the meat for 2 minutes. Mix all together and continue cooking until meat is done to your liking.
  • Reduce heat back to medium. Whisk soy sauce, sesame oil, and apple cider vinegar in a bowl. Pour over meat and stir to combine.
  • Garnish with green onion. Serve warm.

1 pound lean ground beef (90 percent lean or higher)
2 teaspoons olive oil
2 medium onions, chopped (about 3 cups)
3 medium carrots, diced (about 1 1/2 cups)
1/2 pound white mushrooms, sliced
2 teaspoons chopped fresh thyme leaves or 1 teaspoon dried
2 tablespoons all-purpose flour
1 cup low-sodium beef broth
1 teaspoon salt
Freshly ground black pepper
1 cup frozen peas
1 1/2 pounds Yukon gold or creamery potatoes
1 small head cauliflower (about 2 pounds), cut into florets
2/3 cup 1 percent lowfat milk
2 tablespoons butter

Steps:

  • In a large nonstick skillet cook the meat over medium heat, stirring occasionally, until brown, about 5 minutes. Transfer the meat to a plate. Drain any fat remaining in the skillet.
  • Heat the oil in the skillet over a medium heat. Add the onions and carrots and cook, covered, until the vegetables begin to soften, about 8 minutes. Raise the heat to moderately-high. Add the mushrooms and thyme and cook, uncovered and stirring occasionally, until the mushrooms are soft and their liquid has evaporated, about 8 minutes longer. Return the meat to the pan. Add the flour and cook, stirring, for 2 minutes. Stir in the broth, 1/2 teaspoon of the salt and 1/8 teaspoon of pepper and bring to a simmer being sure to scrape up any brown bits from the bottom of the pan. Stir in the peas. Pour the mixture into a 12-cup shallow baking dish (about 11 by 9 inches).
  • Preheat the oven to 350 degrees F. Scrub the potatoes and cut into 2-inch pieces. Arrange the potatoes in a steamer basket, and steam for 10 minutes. Add the cauliflower to the basket and cook until the potatoes and cauliflower are tender when pierced with the tip of a knife, about 15 minutes longer. Mash the vegetables with a potato masher until smooth. Heat the milk, butter, the remaining 1/2 teaspoon of salt and a pinch of pepper and stir into the potato mixture.
  • Spread the potato mixture on top of the meat and bake until heated through, about 25 minutes.

3 cups shredded cabbage
2 tablespoons canola oil
1 lb beef sirloin steak, cut into 1/4 inch strips
2 large onions, thinly sliced and separated into rings
3 stalks celery, sliced
1 (14 ounce) can bean sprouts, drained
1 (8 ounce) can bamboo shoots, drained
1 (8 ounce) can sliced water chestnuts, drained
2 tablespoons sugar
1 tablespoon cornstarch
1/2 cup beef broth
1/2 cup soy sauce
hot cooked rice

Steps:

  • In a large skillet or wok, stir-fry cabbage in oil until cabbage begins to soften.
  • Add beef; cook and stir for 3 minutes.
  • Add the onions and celery; stir-fry for 2 to 3 minutes or until vegetables are crisp-tender.
  • Add the bean sprouts, bamboo shoots and water chestnuts.

1/3 cup cold water
1/3 cup reduced-sodium teriyaki sauce

1 package (16 ounces) frozen asparagus stir-fry vegetable blend
1 medium onion, halved and thinly sliced
2 teaspoons canola oil
2 cups hot cooked rice
2 teaspoons sesame seeds

Steps:

  • In a small bowl, combine the sugar, cornstarch and mustard. Stir in water and teriyaki sauce until smooth; set aside., In a large nonstick skillet or wok, cook beef until no longer pink; drain and set aside. 1 tablespoon canola oil
1 lb beef, cut bite-size
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground coriander
1/2 head cabbage, cored and cut into thin strips
1 cup carrot, shredded
1 teaspoon sesame oil
1/2 cup reduced sodium soy sauce
1 tablespoon cornstarch

Steps:

  • Heat canola oil in large frying pan or wok over medium heat.
  • Add beef, salt, pepper, and coriander; cook until beef is no longer pink. Remove from pan and allow fat and oil to drain retaining some fat and oil in the pan.
  • Add cabbage, carrots, and sesame oil to same pan. Stir-fry for approximately 2 minutes, when cabbage begins to soften.

2 loaves frozen white bread dough, thawed (1 lb. each)
1 lb ground turkey (or beef if you prefer)
2 cups cabbage, shredded
2 medium onions, chopped
1/4 cup fresh parsley, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic, minced
6 ounces shredded cheddar cheese
1/4 cup ketchup
1 egg, slightly beaten
1 tablespoon milk
coarse salt (optional)
cracked pepper (optional)
sesame seeds (optional) or poppy seed (optional)
ketchup, as desired
mustard, as desired
barbecue sauce, as desired
relish, as desired

Steps:

  • Have thawed bread dough ready.
  • Preheat oven to 350 degrees Fahrenheit.
  • In a skillet, cook ground turkey or beef over medium heat, stirring occasionally, until browned (8 to 10 minutes). Drain fat if using beef.

1/2 lb top sirloin steak
1 small head napa cabbage
2 garlic cloves, crushed
2 green onions, cleaned and thinly sliced
1 teaspoon grated gingerroot (you can use jarred ginger paste)
2 tablespoons soy sauce
1 teaspoon dark sesame oil
1 tablespoon rice wine (I use mirin) or 1 tablespoon dry sherry (I use mirin)
2 tablespoons oyster sauce
1 teaspoon cornstarch
2 teaspoons peanut oil

Steps:

  • Remove and discard the fat from the sirloin and slice into thin 1-2" strips against the grain. Put the meat in a bowl with the corn starch. Stir until the meat is coated, then fold in the soy sauce, sesame oil and the rice wine. Put in the fridge to marinade for 15 minutes at least.
  • Remove the outer leaves from the head of cabbage, and wash the cabbage. Shake off the rest of the water and break off the leaves. Cut out the thick white heart of each leaf and cut the remaining frill into inch-square pieces.
  • Heat a pan over medium high to high heat and add half the peanut oil. Take the strips of meat out of the marinade, shake off the moisture as well as possible and fry them in the pan on both sides, in small batches, about 1 minute per side. Put the meat aside in a bowl and cover.
  • Add the rest of the peanut oil to the pan and when it's hot, put in the garlic, ginger and green onions. Stir-fry quickly until the onions begin to brown, then add the meat back in, together with the meat juices from the bowl. Quickly add the cabbage and stir-fry for 30 seconds. Then add the oyster sauce and stir in quickly. Serve immediately.
