All-Cheddar Baked Mac and Cheese image

We came up with an easy, stir-together sauce of cream, evaporated milk and eggs, then loaded it up with sharp Cheddar. Topped with buttery breadcrumbs, the entire dish gets rich, bubbly and brown in the oven.

Kosher salt and freshly ground black pepper
1 1/2 cups panko
4 tablespoons unsalted butter, melted
1 pound elbow macaroni
1 cup heavy cream
1 teaspoon ground mustard
1/2 teaspoon cayenne
5 large eggs
Two 12-ounce cans evaporated milk
24 ounces sharp Cheddar, grated, such as Cabot Extra Sharp Cheddar

Steps:

  • Preheat the oven to 350 degrees F. Bring a large pot of salted water to a boil. Combine the panko, melted butter and 1 teaspoon salt in a small bowl; set aside.
  • Cook the pasta according to the package directions for al dente. Drain well and return to the pot.
  • Whisk together the cream, mustard, cayenne, eggs, evaporated milk, 1 tablespoon salt and 1 teaspoon black pepper in a large bowl. Reserve 2 cups of the grated Cheddar for topping. Stir the remaining Cheddar into the sauce.
  • Pour the cheese mixture into the pot with the macaroni and place over medium heat. Cook, stirring constantly, until the mixture is warm but not hot, about 3 minutes.
  • Transfer to a 9-by-13-inch baking dish and sprinkle evenly with the reserved Cheddar. Top with the breadcrumb mixture.
  • Bake until the center of the casserole is set and the top is golden brown, 45 to 50 minutes.

1 tablespoon flour
2 1/2 cups milk
4 cups grated sharp cheddar cheese

Steps:

  • Preheat oven to 350ºF.
  • Melt the margarine in a saucepan.
  • Stir in the flour until well mixed.
  • Pour in the milk, stirring until thickened. Stir in 1-1/2 cups of the cheese and mix well.
  • Stir ham into the cheese sauce; then stir the cheese sauce into the macaroni in a casserole dish.
  • Top with the remaining cheese. Bake for 30 minutes.

1 pound cavatappi (hollow corkscrew shaped pasta) or other short cut pasta
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup chicken stock
1 1/2 cups whole milk
Freshly ground black pepper
A few grates nutmeg
1 cup shredded Gruyere
1 cup shredded white sharp Cheddar
2 tablespoons Dijon mustard
1/4 pound French ham, deli sliced, finely chopped

Steps:

  • Heat a large pot of salted water to a boil, drop in pasta. Cook pasta to just shy of al dente.
  • Heat sauce pot with butter over medium heat, whisk in flour and cook for 1 minute, whisk in stock then milk, allow the sauce to thicken, and season with salt, pepper and nutmeg. Stir in cheeses in a figure eight motion. Stir in Dijon and ham and remove the sauce from heat. Drain pasta and combine with sauce.

1/2 cup all-purpose flour
5 cups milk
1 1/2 cups finely diced yellow onions
1 teaspoon paprika
1/2 teaspoon Creole mustard
2 bay leaves
12 ounces medium Cheddar, shredded, plus 1 large pinch for topping
8 ounces stinky, cow's milk cheese, such as Meadow Creek Grayson
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Pinch fine dried herbs
2 cups leftover breadcrumbs

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring 2 gallons of water with 1/4 cup salt to a boil in a large pot. Cook the pasta to al dente, about 8 minutes. Drain and cool immediately in the refrigerator or on a flat cold baking sheet.
  • Melt 4 ounces of the butter in a separate pot. Whisk in the flour, stirring constantly for about 5 minutes, making sure there are no lumps. Stir in the milk, onions, paprika, mustard and bay leaves and simmer for 10 minutes. Remove the bay leaves and stir in the cheeses in batches, being careful not to break the sauce. Season with the salt and pepper.
  • Fold the macaroni into the hot cheese and pour into a 9-inch cast-iron casserole dish. Top with a big pinch of Cheddar. Melt the remaining butter in a pan and stir in the breadcrumbs, herbs and some salt and pepper. Scatter the topping over the cheesy mac and bake until lightly brown on top, 12 to 15 minutes. Serve.

One 1-pound loaf frozen bread dough
Nonstick cooking spray
All-purpose flour, for dusting
1/2 pound shaved Virginia ham
1/2 pound Irish Cheddar or other white Cheddar, grated

Steps:

  • Thaw the bread dough overnight, then bring to room temperature before rolling (but don't let it rise).
  • Preheat the oven to 325 degrees F. Spray a loaf pan with nonstick cooking spray.
  • On a lightly floured work surface, roll the bread dough into a 9-by-12-inch rectangle. When rolling, if the dough springs back, cover with a dry towel and let it rest for 5 minutes.
  • Shingle the ham slices onto the dough, leaving a 1/4 inch of exposed dough on all sides. Sprinkle with the cheese and roll the dough into a large log, pinching together the seam and tucking the ends under to seal completely.
  • Place the log, seam-side down, in the prepared loaf pan and bake until golden brown and cooked through and the internal temperature is 200 degrees, for 50 minutes to 1 hour.
  • Let it sit for at least 10 minutes. Remove from the pan. Slice and serve.

When chef Michael Solomonov and his business partner Steve Cook develop recipes for their Philadelphia restaurants (including Zahav, Abe Fisher and K'Far), they often start by talking about their mothers. "Someone will say, 'Oh wait, my mom makes it like this. Let me get her recipe,' " Michael says. Steve's mom, Susan, provided the dough recipe for these hamantaschen - traditional triangular jam-filled cookies that show up on their menus for the Jewish holiday of Purim. It's a pretty classic recipe, with a few exceptions: Susan adds brown sugar and maple extract to her version. 2 sticks unsalted butter, at room temperature
1 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
3 tablespoons whole milk
1 teaspoon pure vanilla extract

1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1 12-ounce jar apricot preserves

Steps:

  • Make the dough: Beat the butter, both sugars, the egg, milk, vanilla and maple extract (if using) with a mixer on medium-high speed. Add the flour, baking powder and salt and beat until fully incorporated.
  • Divide the dough into thirds and wrap each portion tightly in plastic wrap. Refrigerate at least 4 hours or overnight.
  • Form the hamantaschen: Position racks in the upper and lower thirds of the oven and preheat to 375˚ F. Roll out one piece of dough on a floured surface until 1/8 inch thick. Use the rim of a juice glass to cut out 3-inch circles. Repeat with the remaining dough.
  • Spoon a teaspoon of the apricot preserves into the center of each circle of dough.
  • Fold in the edges of the dough to form a triangle, pinching at the corners to keep the filling in but leaving the center filling slightly exposed.
  • Bake the hamantaschen: Arrange the hamantaschen on 2 baking sheets (use nonstick pans or line the pans with parchment paper).
  • Bake, rotating and switching the pans halfway through, until the hamantaschen are lightly browned, 8 to 10 minutes.
  • Let cool a few minutes on the baking sheets, then remove to a wire rack and let cool completely.

  • Whisk together the eggs and sour cream in a small bowl and then fold into the mac and cheese. Spread in the baking dish, then fold in the cubed cheddar and top with the remaining 1/2 cup shredded cheddar. Bake until the mac and cheese just begins to brown on top, 20 to 30 minutes. Loosely cover with foil and bake 10 to 15 more minutes.

These are the easiest hamantashen I've ever made! They are a bit sweet, roll out easily and are consumed quickly! My kids don't want to give them to their friends! Traditional fillings are prune and poppy seed. You can use any canned pie filling, whole fruit jelly, chocolate chips, or any type filling your family likes! Be creative with these- we put mini chocolate chips in the dough!

1 ½ cups butter or margarine, softened
1 cup white sugar
2 eggs
6 tablespoons orange juice
1 tablespoon vanilla extract
2 teaspoons baking powder
4 ½ cups all-purpose flour
1 (12 ounce) can poppyseed filling

Steps:

  • In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the orange juice and vanilla. Mix in the baking powder, then gradually stir in the flour until the dough forms a ball. Cover and refrigerate at least 2 hours. I like to do mine overnight.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut into 3 inch circles using a cookie cutter or drinking glass. Place circles on the prepared cookie sheets. Spoon 1 teaspoon of filling onto the center of each circle. (Any more and it will ooze out) Pinch the sides of each circle to form a triangle, covering as much of the filling as possible. The cookies may be frozen on the cookie sheets if desired to help retain their shape while cooking.
  • Bake for 8 to 10 minutes in the preheated oven, until light golden brown. These are best undercooked slightly. Cool on the baking sheet for a few minutes before removing to wire racks to cool completely.

Iron Mike's White Sharp Cheddar N' Ham Macaroni and Cheese image

I ate the most incredible macaroni and cheese with ham that my wife brought home from some fancy restaurant in town known for their Mac n Cheese. (It was packaged in aluminum foil which was formed to look like a swan - I don't even WANT to know how much she paid for this dish!) ANYway - Since Kraft doesn't make this in a box, I thought I'd try out my hand (and whisk) at making it from scratch. Below is the result of many trials (and a few errors...) on my journey to Mac 'n Cheese perfection. I hope you enjoy this as much as my family. There are some recommendations at the bottom regarding different substitutions... I'd appreciate any feedback!

2 cups elbow macaroni
1 cup cooked cubed ham
1 1/2 tablespoons butter or 1 1/2 tablespoons margarine
1 1/2 tablespoons flour
1 cup milk
1/8 teaspoon salt
8 ounces sharp white cheddar cheese (grated)
pepper, to taste

Steps:

  • Begin the cooking process of the macaroni- according to package directions; Add cubed ham (to warm) during the final minute or so of cooking the macaroni; Drain and set aside.
  • While water is heating and macaroni is cooking, make your White Sauce: Melt butter in a saucepan over medium-low heat; add Flour and Salt, and cook about 1 minute, stirring constantly with a wire whisk until mixture is smooth and bubbly.
  • Stir the Milk into the mixture and bring to a boil.
  • Stirring constantly, boil mixture for 1 minute.
  • Lower heat and cook until thickened, stirring regularly about 4-6 minutes.
  • (Don't forget to add the ham to the macaroni as it is cooking!).
  • Remove White Sauce from heat; Add cheese; stir until melted; Pepper to taste.
  • Combine cheese sauce with the macaroni and ham in a bowl (or the macaroni pot); stir well.
  • Serve with a yummy green vegetable on the side like green beans or asparagus.
  • Enjoy!
  • CHEF'S NOTES: You may use Medium/Mild Cheddar or maybe even PepperJack with this recipe as well; I would add a little"kick" with the milder cheeses by adding a clove of minced garlic, or by using salami pieces instead of ham- Yum!

Steps:

  • Using a layered effect, place onion, noodles, ham and cheese in a large 9 x 13 baking dish.
  • Repeat for second layer using onion, noodles, ham and cheese.
  • In a small bowl mix milk, sour cream and cream of mushroom soup. Pour over top of ham mixture.
  • Sprinkle top with parsley.
  • Bake in a 360 degree oven for 45 minutes.

1/2 teaspoon garlic powder
1/2 teaspoon salt, more to taste
1/4 teaspoon pepper
1 lb diced cooked ham
1 1/2 cups frozen baby peas, thawed

Steps:

  • Cook macaroni according to package directions; drain.
  • In a large pot, melt the butter and saute the onions for about 5 minutes.
  • Stir in the flour until well blended. Cook and stir for 2 minutes.
  • Add the milk; stir well.
  • Add in the cheeses, mustard, paprika, garlic powder, salt and pepper.
  • Continue to cook and stir until smooth, hot and thickened.
  • Stir in the ham, peas and cooked/drained macaroni.
  • Stir well until heated through.

2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups 1% low-fat milk
2 cups sharp cheddar cheese, shredded
4 cups cooked elbow macaroni
1/4 cup Italian seasoned breadcrumbs
1/2 teaspoon paprika

Steps:

  • Melt butter in 1 quart glass measure on full power for 45 seconds.
  • Stir in flour, salt, and pepper to make a paste.
  • Slowly whisk milk into measure and cook on power level 8 for 6 to 8 minutes or until thickened. Stir several times as it thickens.
  • Mix in cheese and stir until melted.
  • Mix the cheese sauce and macaroni together in a greased 1 1/2 quart casserole.
  • Top with bread crumbs and paprika.
  • Cook on full power for 3 minutes or until bubbling.
  • If you would like you could bake in the oven on 350°F for 20-25 minutes or until bubbling and golden brown.
