1 can (16 oz) jellied cranberry sauce
1/3 cup apple juice
1/4 cup port wine or apple juice
2 tablespoons lemon juice
1 tablespoon Dijon mustard
2 teaspoons sugar
2 teaspoons grated lemon peel
2 teaspoons grated orange peel
1/4 teaspoon white pepper
1/4 teaspoon ground ginger

Steps:

  • Heat oven to 325°F. Place ham on rack in shallow roasting pan. Add 1/4 to 1/2 inch water to pan. Cover pan.
  • Bake 45 minutes. Uncover pan; bake 45 minutes to 1 hour 15 minutes longer or until meat thermometer inserted in center, but not touching bone, registers 140°F.
  • To make sauce, in small saucepan, mix all remaining ingredients with wire whisk until well blended. Cook over medium heat 10 minutes or until cranberry sauce is melted and mixture is thoroughly heated, stirring frequently. Cut ham into slices. Serve with sauce.

1/2 cup maple syrup
1/4 cup cider vinegar
1 to 1-1/2 teaspoons ground mustard

Steps:

  • Preheat oven to 325°. Line a roasting pan with foil. Place ham on a rack in prepared pan. Bake, covered, 1 hour., Meanwhile, in a small saucepan, whisk remaining ingredients until blended. Remove 1 cup mixture for glaze; reserve remaining mixture for sauce. Brush ham with some of the glaze mixture. 1/4 cup pineapple-orange juice
1 (1 lb) can jellied cranberry sauce
1/3 cup steak sauce
1 tablespoon salad oil
3 tablespoons brown sugar

Steps:

  • Put ham in baking dish and score the top of the ham.
  • Mix 1 cup brown sugar and juice, and brush some of this glaze on top of the ham.
  • Cover with foil and bake at 325 degrees for about 3 hours.
  • Glaze the ham several times during baking.
  • With an electric mixer, combine the jellied cranberry sauce, steak sauce, salad oil, 3 tablespoons brown sugar and mustard.

5 to 6-pound fresh ham
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
6 apples, split in 1/2
2 cups cranberries, (if not fresh, frozen is fine)
1 cinnamon stick
1 bay leaf
1 tablespoon pickling spice
1 tablespoon black mustard seeds
2 tablespoons sugar
1 (1-inch) piece ginger
1 1/2 cups apple juice
1/2 cup apple cider vinegar

Steps:

  • Preheat oven to 300 degrees F.
  • Score fat and put ham, fat side up, in a roasting pan. Rub with extra-virgin olive oil and season with plenty of salt and pepper all over. Cover loosely with foil and roast for 2 hours. Remove foil and roast for final hour uncovered.
  • In a large saucepan add all the sauce ingredients and simmer for 25 minutes until apples are almost falling apart and the sauce is fragrant. Remove cinnamon stick, bay leaf, and ginger then puree in a blender until completely smooth. Serve with baked fresh ham.

1 tbsp olive oil
a large knob of butter
250g chestnut mushroom , halved
4 tbsp port or red wine
2 rounded tbsp cranberry sauce
150ml hot water
2 clementines , satsumas or mandarins , juice only
1 tsp bouillon powder or ½ chicken stock cube, crumbled
a splash of soy sauce
about leftover cooked ham , cut into chunky slices

Steps:

  • To fry the mushrooms, heat the oil and butter in a frying pan over a high heat until the butter is foaming. Add the mushrooms and fry for 4-5 minutes until they're golden.
  • To make the sauce, pour in the port or wine to deglaze the pan, then lower the heat and stir in the cranberry sauce until dissolved. Pour in the hot water and fruit juice and sprinkle in the bouillon powder or stock cube. Splash in a spoonful or so of soy sauce and stir well. Turn up the heat and boil the sauce rapidly for a few minutes until it reduces slightly.
  • Slide in the ham and heat through for a minute or two. Taste for seasoning and serve.

Steps:

  • For cranberry relish, in a large skillet heat oil; cook cranberries and onion in the hot oil over medium heat for 5 minutes or until just softened, stirring often. Stir in vinegar; cook and stir about 1 minutes more or until most of the liquid is absorbed; let cool.

One 8-ounce tube refrigerated crescent-roll dough
2 tablespoons plus 2 teaspoons cranberry sauce
8 slices Black Forest ham
8 slices Swiss cheese, cut from the short side of a rectangular block, each about 1/4 inch thick
Dijon mustard, for serving

Steps:

  • Preheat the oven to 375 degrees F. Line a rimmed baking sheet with parchment paper.
  • Unroll the crescent roll dough and cut along the perforated lines to separate it into individual triangles. Arrange each triangle on a work surface with the short side closest to you.
  • Place about 1 teaspoon cranberry sauce on each triangle and use the back of a spoon to spread it evenly over the dough, leaving 1 inch of the tip bare. Place a piece of ham on the short side of the dough on top of the cranberry sauce and top with a slice of cheese. Wrap the sides of the ham over the short ends of the cheese to keep it intact.
