- Preheat oven to 375°. Combine the first six ingredients. Divide crescent dough into 24 portions. Press into greased mini muffin cups., Spoon 1 tablespoon ham mixture into each cup. Bake until golden brown, 13-15 minutes.

Steps:
- In a saucepan over medium heat, bring water and butter to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. , Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Drop by teaspoonfuls 2 in. apart onto greased baking sheets., Bake at 400° for 20-25 minutes or until lightly browned. Remove to wire racks. Immediately cut a slit in each puff to allow steam to escape; cool completely., In separate bowls, combine the ingredients for egg salad filling and ham salad filling. Split puffs and remove soft dough from inside. Just before serving, spoon fillings into cream puffs; replace tops. Refrigerate leftovers.

HAM AND CHEESE IN PUFF PASTRY
Steps:
- Preheat the oven to 450 degrees F. Place a piece of parchment paper on a sheet pan.
- Lay 1 sheet of puff pastry on a floured board and carefully roll it out to 10 by 12 inches. Place it on a sheet pan and brush the center with the mustard, leaving a 1-inch border around the edge. Place a layer first of ham and then cheese, also leaving a 1-inch border. Brush the border with the egg wash.
- Place the second sheet of puff pastry on the floured board and roll it out to 10 by 12inches. Place the second sheet on top of the filled pastry, lining up the edges. Cut the edges straight with a small, sharp knife and press together lightly. Brush the top with egg wash and cut a few slits in the top to allow steam to escape.
- Bake for 20 to 25 minutes, until puffed and golden brown. Allow to cool for a few minutes and serve hot or warm.

- Whisk the mayonnaise and mustard together in a large bowl. Pulse the ham and pickles in a food processor until finely chopped but not pureed. Add the ham mixture, pickle juice, celery, onions and celery leaves to the mayonnaise mixture, and stir. Taste; if the salad seems dry (it should be spreadable), add more mayonnaise and/or pickling liquid. Serve as is or on sandwiches.
DEVILED HAM PUFFS

- Blend together the cheese, onion juice, baking powder, egg yolk, and salt.
- Toast the bread round on one side.
- Spread the untoasted side with deviled ham and cover each with a mound of the cheese mixture.
- Place on ungreased cookie sheet and bake at 350 degrees for 10 to 12 minutes or until puffed and brown.
- Serve hot.

Cream puffs are a family favorite, but I prefer them savory and not sweet, so this is my take on a unique appetizer that disappears quickly! Crab, chicken or other cooked meat could be used to replace ham.

- In a small bowl, beat the cream cheese, mayonnaise and milk until blended. Stir in the ham, cheese, pepper, chives, parsley and garlic. Cover and refrigerate until ready to use., In a large saucepan, bring the water, butter, seasoned salt, garlic powder and onion powder to a boil. Add flour all at once and stir until a smooth ball forms., Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Stir in the cheese, parsley and chives., Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 400° for 20-25 minutes or until golden brown. Remove to wire racks. Immediately split puffs open; remove tops and set aside. Discard soft dough from inside. Cool puffs. , Just before serving, fill cream puffs with ham mixture. Sprinkle with additional parsley and chives.

- In large bowl, mix peas, ham, cheese, onion, mayonnaise and mustard until well blended. Cover and refrigerate at least 2 hours.
- Heat oven to 400°F. Grease bottom and side of 9-inch glass pie plate. In 2-quart saucepan, heat water and butter to boiling. Add Bisquick mix all at once. Stir vigorously over low heat about 1 1/2 minutes or until mixture forms a ball; remove from heat.
- Beat in eggs, 1 at a time, with spoon; continue beating until smooth. Spread over bottom of pie plate (do not spread up side).
- Bake 35 to 40 minutes or until puffed and dry in center; cool. Just before serving, spoon filling into puff. Cut into wedges.

- Preheat oven to 450°F. Whisk together flour, salt, dry mustard, and cayenne in a small bowl. Bring water and butter to a boil in a medium saucepan over medium-high, stirring to melt butter. Remove from heat; add flour mixture all at once, and stir vigorously until mixture is smooth and thick, like mashed potatoes. Transfer to large bowl, and let stand 3 minutes. Beat dough with an electric mixer on low speed until dough no longer steams and is just warm to the touch, about 1 minute. Add eggs, 1 at a time, beating on medium-high speed until dough is smooth and creamy after each addition. Add cheese, and beat until combined.
- Line a baking sheet with parchment paper or a silicone baking mat. Use a 1/2-ounce ice-cream scoop or 2 spoons to portion dough into walnut-size mounds (about 1 tablespoon) 1 inch apart onto prepared baking sheet.
- Bake at 450°F for 10 minutes. Reduce heat to 350°F, and continue baking until Cheese Puffs are puffed, deep golden brown, and dry to the touch, 15 to 20 more minutes. (They should sound hollow when tapped on the bottom.)
- Cool on baking sheet 3 minutes; split with a serrated knife. Spoon about 1 tablespoon Ham Salad into each, and replace the tops. Serve warm or at room temperature.
