This rich and hearty brunch dish is loaded with ham, mushrooms and cheese, plus layers of sliced French bread. It's a terrific choice when you have overnight guests.

1/4 cup plus 3 tablespoons butter, melted, divided
18 slices day-old French bread (3/4 inch thick), divided
1/2 cup stone-ground mustard
1-1/2 cups cubed fully cooked ham
1 cup sliced fresh mushrooms
2 garlic cloves, minced
1/4 cup chopped green onions
2 cups shredded Swiss cheese
8 large eggs
4 cups heavy whipping cream
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons minced fresh parsley
Warm maple syrup, optional

Steps:

  • Pour 1/4 cup butter into a 13x9-in. baking dish; set aside. Spread both sides of bread with mustard. Arrange 9 slices in baking dish. , In a large skillet, saute the ham, mushrooms and garlic in remaining butter until mushrooms are tender. Add the onions; cook until crisp-tender, about 1 minute longer. Spoon over bread; sprinkle with cheese. Arrange remaining bread on top. In a large bowl, beat the eggs, cream, salt and pepper. Stir in parsley; pour over bread., Place dish in a larger roasting pan; add 1 in. of hot water to larger pan. Bake at 325° until a knife inserted in the center comes out clean, 50-60 minutes. Let stand for 5 minutes before serving. Drizzle with maple syrup if desired.

4 cups all-purpose flour
2 tablespoons sugar
2 packages (1/4 ounce each) quick-rise yeast
1/2 teaspoon salt
1 cup water
1/4 cup Dijon mustard
2 tablespoons butter
1 pound thinly sliced deli ham
1 cup shredded Swiss cheese
1/2 cup chopped dill pickles
1 large egg, lightly beaten

Steps:

  • In a bowl, combine 3 cups flour, sugar, yeast and salt. In a small saucepan, heat water, mustard and butter to 120°-130°. Add to flour mixture. Stir in enough remaining flour to form a soft dough (dough will be stiff). Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes., Roll dough into a 14x12-in. rectangle on a greased baking sheet. Arrange half of the ham over dough. Top with cheese, pickles and remaining ham. , On each long side, cut 3/4-in.-wide strips about 2-1/2 in. into center. starting at one end, fold alternating strips at an angle across filling. Pinch ends to seal. Cover and let rise for 15 minutes., Brush with egg. Bake at 375° for 30-35 minutes or until golden brown. Serve warm.

One 1-pound loaf frozen bread dough
Nonstick cooking spray
All-purpose flour, for dusting
1/2 pound shaved Virginia ham
1/2 pound Irish Cheddar or other white Cheddar, grated

Steps:

  • Thaw the bread dough overnight, then bring to room temperature before rolling (but don't let it rise).
  • Preheat the oven to 325 degrees F. Spray a loaf pan with nonstick cooking spray.
  • On a lightly floured work surface, roll the bread dough into a 9-by-12-inch rectangle. When rolling, if the dough springs back, cover with a dry towel and let it rest for 5 minutes.
  • Shingle the ham slices onto the dough, leaving a 1/4 inch of exposed dough on all sides. Sprinkle with the cheese and roll the dough into a large log, pinching together the seam and tucking the ends under to seal completely.
  • Place the log, seam-side down, in the prepared loaf pan and bake until golden brown and cooked through and the internal temperature is 200 degrees, for 50 minutes to 1 hour.
  • Let it sit for at least 10 minutes. Remove from the pan. Slice and serve.

4 tablespoons unsalted butter
2 cloves garlic, 1 minced or grated, 1 cut in half for rubbing bread, optional
Eight 1/3- to 1/2-inch-thick slices Pullman or white sandwich bread
8 slices emmentaler or Swiss cheese (about 4 ounces)
4 ounces thinly sliced leftover or deli ham
1/2 cup cornichons, sliced lengthwise

Steps:

  • Melt the butter in a medium saucepan over medium-low heat and add the minced garlic. Cook to infuse the garlic flavor into the butter and until the butter turns brown, about 15 minutes. Remove from the heat and strain.
  • Lay out 4 slices of the bread on a work surface. Layer each with 1 slice of the cheese, some ham and then some of the cornichons. Top with 1 more slice of cheese. Close the sandwiches with the remaining bread and brush with butter until fully coated on both sides.
  • Place 2 sandwiches into a medium skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown, about 2 minutes. Flip, cover again and cook until the bread is golden brown and the cheese is visibly melted, about 2 minutes more. Repeat with the remaining sandwiches. If desired, rub the outside of the toasted bread with the garlic halves to add a little more garlic flavor.

3/4 cup milk
3 tablespoons sugar
2 teaspoons salt
1/3 cup margarine
1/3 cup molasses
1 1/2 cups warm water
2 (1/4 ounce) packages yeast
4 cups whole wheat flour
3 1/4 cups white flour
1 lb black forest ham or 1 lb honey-roasted ham, thinly sliced
1 lb sliced swiss cheese
coarse grain mustard

Steps:

  • For bread dough:.
  • Scald milk; stir in sugar, salt margarine, and molasses. Cool till lukewarm.
  • Dissolve yeast in water, stir into lukewarm mixture, 2 c wheat flour, and 2 c white flour. Beat until smooth. Add enough of the remaining flour to make a soft dough. Turn onto lightly floured board and knead until smooth and elastic. Place in greased bowl and turn over to grease top. Cover and let rise in a warm place for one hour. Punch down and knead for 2 minutes.
  • Divide dough into 2 equal parts.
  • Roll each piece out into a large rectangle and place each on separate cookie sheets.
  • Place 1/2 of ham and cheese down the center of each rectangle, leaving a one inch space on each side. Spread mustard on top of cheese.
  • Make two inch long cuts - 1 inch apart all the way down both sides of rectangle.
  • Start at one end of rectangle fold dough flaps alternating from side to side over top of filling, make sure to tuck in ends under folded dough.
  • Bake at 375° for 25 minutes or until top of bread is brown.
  • Brush with margarine and serve hot or cold with extra mustard.
