Time 1h45m

Yield 9 servings

Number Of Ingredients 17

1 1/2 cups (210 grams) all-purpose flour, plus more for dusting
1 tablespoon granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
Roasted Garlic, recipe follows
1/2 cup sour cream
1 large egg, beaten
2 tablespoons unsalted butter, cold and cubed
3 tablespoons chopped fresh chives
1 tablespoon heavy cream
1 teaspoon flaky salt
3 tablespoons apricot jam
1/2 pound sliced deli honey ham
1/4 pound sliced sharp white cheddar
1 head of garlic
Olive oil

Steps:

  • For the scones: Preheat the oven to 375 degrees F.

Turn the dough out onto a liberally floured counter and press together to form a 6-by-6-inch square. Trim each side (keep the trimmings and bake off for a little snack) and cut into 9 squares. Place on a parchment-lined baking sheet. Brush the tops with heavy cream, sprinkle with flaky salt and bake until lightly browned and crackly on top, 15 to 20 minutes.
  • For the sandwiches: Split open the scones and toast the insides on a griddle or pan. Spread about 1/2 teaspoon of the apricot jam on each of the toasted sides. On the bottom halves, layer on the ham, cheese and then the tops of the scones and eat right away.
  • The scones will keep for a couple days in a plastic bag or airtight container at room temperature. Toast and spread with butter or jam.
  • Preheat the oven to 325 degrees F.
  • Slice off the top of the head of garlic, drizzle with olive oil and wrap in foil. Roast for about an hour. Remove from the oven and allow the garlic to cool inside the foil. When cool, open the foil and squeeze the roasted garlic from each clove into a small bowl.

2 ounces cold unsalted butter (4 tablespoons; 55g), cut into 1/2-inch cubes
7 ounces diced, fully cooked ham (about 1 heaping cup; 200g)
1 ounce chopped scallion (shy 1/4 cup; 30g)

  • Make sure the butter is chilled before using in the recipe. Dice the butter into smaller pieces, then place into the freezer while measuring the dry ingredients. In a large mixing bowl, combine all the dry ingredients: flour, sugar, salt, baking powder and soda, and seasonings. Add the butter next and using a pastry butter or two large forks, cut the butter into the flour until the mixture resembles fine crumbs. You can also use a food processor for this step but be careful not to over-heat the butter; pulse slowly.
  • Next, prepare the wet ingredients. Combine the sour cream, milk and eggs in a large measuring cup and whisk together until the eggs are well beaten. Make a well in the center of the butter and flour mixture and add the liquids. Use a spatula to fold all the ingredients together until a sticky dough forms (dough needs to be sticky, don't add more flour!). Add the cheddar cheese ham and chives, then mix again until the ingredients are uniform throughout.
  • Line the work surface with a sheet of plastic wrap and transfer the dough onto the plastic and wrap tightly. Shape the dough into a flat disk, about 1 inch tall. Place the dough into the refrigerator to chill for at least 15 to 20 minutes, or leave until ready to bake.
  • Preheat oven to 350F. Line a large baking sheet with a silicone mat or parchment paper. Remove the plastic wrap from the scone dough and using a sharp knife, section the disk into 8 equal pieces. Carefully transfer the scones onto the prepared baking pan, spacing the scones about 1 1/2 to 2 inches apart. Top each scone off with more cheddar cheese and chives.

  • To make these Ham and Cheese Savory Scones, start by adding the flour, sugar, baking powder, baking soda, salt, garlic and onion powder to a large mixing bowl and whisking to combine.
  • Grab your cold stick of frozen butter and grate your butter on a cheese grater or cut into small pieces and them move your butter back to the freezer. While your butter is chilling, chop your ham into bite sized pieces and dice your chives. Remove the butter from the freezer and add to the dry ingredients in the mixing bowl. Using a pastry cutter or a kitchen fork, work the butter into the flour mixture until you have no more large lumps of butter present.
  • Add in the buttermilk and sour cream and still to combine. Next add in the cheese, ham, bacon pieces and chives (save some of those yummy ingredients aside for topping!) and using a large spoon or spatula, stir to combine. Once mixed, transfer your scone dough to the refrigerator for 15 minutes. Once chilled, move your dough to a large floured work space or a large glass cutting board (my favorite!) Your dough should be a bit wet and sticky so flour your hands. Shape your dough into a large circle about 10-12 inches wide and about 1 inch thick.
  • Using a sharp knife, cut into 8-10 wedges and then using a spatcula or pie server, scoop up the scone wedges and transfer to a parchment lined baking pan and sprinkle with your reserved toppings. Bake for 20 minutes in a preheated 425 degree oven. When done, remove from oven and serve immediately.
