HAM AND NOODLE CASSEROLE
This comforting, quick-to-prepare casserole is just the thing to throw together when you have a full house of company or need something hearty and crowd-pleasing for a potluck or large gathering. The recipe, which was published in our March 2001 issue, comes from the kitchen of Laurabell J. Long of Peru, Indiana. Made with egg noodles, chopped ham, a tasty mix of vegetables (carrots, broccoli, asparagus), and a rich and creamy sauce, the casserole is made two at a time in two 8-inch square baking dishes to serve eight people (or more, if you are serving it with other dishes as part of a buffet). While the recipe includes an additional recipe for Glazed Baked Ham, you can also substitute any leftover chopped cooked ham, or buy a ham steak and chop it up. The secret ingredient in the sauce is the chive-and-onion flavored cream cheese, which adds a ton of flavor with little effort. Best of all, you can prepare this Ham and Noodle Casserole as directed or you can make one, and freeze one to eat later. (Thaw the frozen casserole in the refrigerator overnight, then bake at 400° for 35 to 40 minutes.)

Steps:
- Note: This recipe is designed to allow you to prepare all of the casserole ingredients in one pot before transferring to a casserole dish for baking. Before you begin, refer to your rice package for the amount of liquid (we'll use chicken broth) and cooking time. If preferred, cook the rice separately and skip the broth ingredient. You'll need 3 + 3/4 cups of cooked rice to combine with the other casserole ingredients. I use white long grain rice and the cooking times below work perfectly.
- Preheat the oven to 350 degrees.
- Melt the 2 Tablespoons butter in a large saucepan over medium heat.
- Add the diced onions and cook for 5 minutes, until softened.
- Add the chicken broth, olive oil, and rice to the pot and bring to a boil, then reduce heat to a simmer.
- Cover tightly and cook for 7 minutes.
- Add the broccoli, replace the cover, cook for 8 more minutes. Refrain from stirring.
- Turn off heat, leave the cover on. Let the rice stand for 10 minutes. Any rice on the bottom of the pot will release during this time.
- Add the diced ham, condensed soup, sour cream, milk, and ONE cup of the cheddar cheese. Stir until well-combined.
- Spread into a lightly greased 9 x 13 casserole dish.
- Top with remaining cup of cheddar cheese.
- Cover and bake for 15 minutes.
- Combine the Ritz cracker crumbs and butter. Spread over the top of the casserole and bake, uncovered, for 10 additional minutes.
- Let the casserole sit for 5 minutes prior to serving.

- In a large pot over medium heat, heat the butter until melted. Add the onion and cook until softened, stirring frequently. Sprinkle in the flour and whisk until there are no clumps. Add the garlic, salt, pepper, cayenne, and mustard powder. Whisk to combine and continue cooking until fragrant. Whisk in the milk. Bring to a boil and reduce the heat to simmer. Simmer until thickened.
- To the prepared dish, place a layer of cubed ham. Top the ham with a layer of the sliced potatoes, overlapping the edges. Spoon on the sauce. Repeat two more times for a total of three layers. Evenly top with the cheese.
- Cover with aluminum foil and bake for 1 hour, until the potatoes are tender. Remove the foil and place under the broiler for a few seconds to brown the cheese slightly. Watch closely as it browns quickly!
