BAKED HAM, EGG AND CHEESE BREAKFAST SANDWICHES FOR A CROWD
The genius move behind these easy sandwiches is cooking enough scrambled eggs for twelve on a baking sheet; no stovetop required. Top with sliced cheese and sandwich between pillowy pull-apart rolls, then let the oven do the rest of the work for you!

Steps:
- Position a rack in the lower third of the oven. Preheat the oven to 350 degrees.
- Place two 2-foot-long pieces of nonstick aluminum foil next to each other so the long sides are just touching. Pinch the edges together and then fold them over several times to seal and form one large piece of foil. Line a rimmed baking sheet with the foil and set aside.
- Crack the eggs into a large bowl and whisk well. Add the scallions, 1 teaspoon salt and 2 tablespoons water and whisk to combine.
- Split the whole pack of attached dinner rolls in half horizontally using a serrated knife. Set aside.
- Add 1 tablespoon of butter to the prepared baking sheet and place in the oven to melt, about 3 minutes. Spread the butter all over the foil with a pastry brush and then pour in the egg mixture. Place the attached roll halves cut-side down and side by side on top of the eggs and return to the oven. Bake until the eggs are completely set, about 10 minutes.
- Meanwhile, butter another baking sheet with the remaining 1 tablespoon butter. Using heatproof mitts, top the rolls with this baking sheet and invert the whole thing. Remove the top baking sheet and peel back the foil. Top half the eggs with the cheese and the other half with the ham. Bake until the cheese is melted, about 5 minutes.
- Using a large metal hamburger spatula, flip the bottom half of the rolls onto the other half, so the rolls are top-side up. Cut or pull the rolls apart. Serve with hot sauce.

- When eggs are done, carefully transfer them to a bowl of ice water.
- Meanwhile, use an egg carton to cut out egg holders for each egg.
- Take eggs out of ice water. Serve with the ham and cheese dunkers.
- Enjoy!

HAM'N'CHEESE EGG LOAF
An all-in-one brunch bread; perfect for a summer brunch with a light fruit salad. The original recipe calls for 1/4 tsp. salt, but I omit it because often the bacon or ham add enough. We serve these with Cheez Whiz.

PERFECT HAM AND CHEESE SCRAMBLED EGGS
I hate scrambled eggs. Except, that is, when I make them. These, I like. If you're looking for firm eggs, go somewhere else; these are both moist and gooey, while not undercooked (I have a horror of salmonella). Simply double to serve 3 to 4 (or two people with bigger appetites).

Steps:
- Spray non-stick frying pan with cooking spray.
- Heat up over medium to medium-high heat.

- Pour into pan and stir continually for about 2 to 3 minutes, until eggs are cooked.
- Because of the milk, they will remain moist, but they should not be runny or sticky.
- Turn off heat, but leave pan on burner.
- Add ham and cheese.
- Stir until everything is mixed, ham is heated, and cheese is melted.
- Yum!

Steps:
- Preheat the oven broiler to high. Line a baking sheet with parchment paper.
- On a cutting board, butter all the sandwich bread and transfer to the prepared baking sheet.
- Using a glass, cut out the centers of 6 slices of bread.
- Toast the bread under the broiler for 5 minutes, or until toasted. Keep a close eye on it so it doesn't burn.
- Reduce the oven temperature to 350˚F (180˚C).
- Make the Béchamel sauce: Melt the butter in a small saucepan over medium heat. Add the flour and whisk until it darkens slightly.
- Add the milk and whisk to combine. Reduce the heat to low and simmer until reduced by half.
- Remove the pot from the heat and add the salt, pepper, nutmeg, Gruyère, and Parmesan and stir until fully incorporated.
- Line a 9 x 13-inch baking dish with parchment paper.
- Lay 6 pieces of toast in the bottom of the dish. Top with 9 slices of Swiss cheese, 6 slices of ham, and 2 cups of spinach. Repeat to make another layer and top with the hollow-centered toast.
- Crack an egg into each hole. Carefully ladle the Béchamel sauce over the bake, leaving the yolks exposed.
- Cover and bake for 35 minutes, then uncover and bake for 10 minutes more, until the eggs are cooked to your liking and the Béchamel is starting to brown in spots.
- Slice and serve garnished with chives, if desired.
- Enjoy!

- Scoop out the centre and reserve (see notes for ideas to use). To be neat, use a small knife to cut a round outline before scooping out the centre.
- Line the bread bowl with a layer of ham. Try to use one whole piece if you can because then there is less chance of egg seeping through and being soaked up by the bread.
