This is what we call quick and easy comfort. This deliciously creamy ham and scalloped potato casserole recipe goes with almost every dinner and only requires 20 minutes of prep, followed by a slow bake in the oven-making this hearty side dish your perfect go-to recipe for potatoes.

4 tablespoons butter
1 small onion, finely chopped (1/4 cup)
3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups milk
6 medium peeled or unpeeled potatoes, thinly sliced (6 cups)
1 1/2 cups cubed fully cooked ham

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray.
  • In 2-quart saucepan, melt 3 tablespoons of the butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
  • Mix potatoes and ham in casserole; gently press down so surface is even. Pour sauce over potato mixture. Cut remaining 1 tablespoon butter into small pieces; sprinkle over potatoes.
  • Cover and bake 30 minutes. Uncover and bake 1 hour to 1 hour 10 minutes longer or until potatoes are tender. Let stand 5 to 10 minutes before serving (sauce thickens as it stands).

2 tablespoons chopped onion
4 garlic cloves, minced
5 tablespoons all-purpose flour

2 cups shredded Swiss cheese, divided
2 pounds potatoes, peeled and thinly sliced (about 4 cups)
2 cups julienned fully cooked ham
2 cups frozen broccoli florets, thawed and patted dry

Steps:

  • Preheat oven to 350°. In a Dutch oven, heat butter over medium-high heat. Add onion and garlic; cook and stir until tender, 2-3 minutes. Stir in flour, white pepper and salt until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2 minutes., Stir in 1 cup cheese. Reduce heat; cook until cheese is melted (sauce will be thick), 1-2 minutes. Remove from heat., Add potatoes, ham and broccoli to sauce; stir gently to coat. Transfer to 8 greased 8-oz. ramekins., Bake, covered, 40 minutes. Sprinkle with remaining cheese. Bake, uncovered, until potatoes are tender and cheese is melted, 20-25 minutes longer.

2 medium onions, thinly sliced
4 large russet potatoes, peeled and thinly sliced
12 ounces 1/4-inch sliced baked ham
2 cups grated Cheddar cheese

Steps:

  • Preheat oven to 350 degrees. Butter a baking dish.
  • In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside.
  • In a skillet, cook onions in melted butter until golden brown. Season with salt and pepper.
  • Spread 1/3 of the white sauce in bottom of baking dish and top with half of the potatoes. Spread out half of the onions, ham, cheese and another third of the sauce. Season with salt and pepper. Continue layering ingredients, ending with the remaining cheese on top. Bake for 45 minutes or until golden and bubbly.

4 large baking potatoes
1 cup frozen chopped broccoli
1 can (10-1/2 ounces) condensed cream of mushroom soup, undiluted
1/4 cup 2% milk
1/4 teaspoon pepper
2 cups chopped fully cooked ham
2 cups shredded cheddar cheese, divided
1/2 cup sour cream
1 cup soft bread crumbs
2 tablespoons butter, melted
2 tablespoons minced fresh chives or chopped green onion

Steps:

  • Preheat oven to 400°. Scrub potatoes; pierce several times with a fork. Bake until tender, 50-75 minutes. Meanwhile, cook broccoli according to package directions; drain., In a small saucepan, combine soup, milk and pepper. Cook and stir over medium-low heat until smooth, about 3 minutes. Add ham, 1-1/2 cups cheese and broccoli; cook and stir until cheese is melted, 3-5 minutes. Remove from heat; stir in sour cream., With a sharp knife, cut an X in each potato. Fluff pulp with a fork. If desired, season with salt and additional pepper. Place potatoes on a baking sheet. Spoon ham mixture over top; sprinkle with remaining 1/2 cup cheese. A simple and fast method to make a delicious main-dish casserole or loaded cheesy scalloped potatoes side dish. No need to peel, slice, and layer potatoes when you use frozen shredded hash browns. Includes modifications to make gluten free, dairy free, or even more veggie loaded, if desired.

¼ cup unsalted butter or coconut oil
1 yellow onion, diced
2 cups frozen broccoli florets (cut into small pieces, if the florets are large)
⅓ cup gluten-free flour blend or all-purpose flour*
3 cups dairy or unsweetened non-dairy milk
1 teaspoon fine salt
½ teaspoon dried thyme
½ teaspoon garlic powder
¼ teaspoon black pepper
6 cups (1 lb) frozen shredded potatoes (frozen hash browns)
2 cups cooked, diced ham
1½ cups shredded sharp cheddar cheese, divided
Sliced green onions, chives, or fresh parsley (for garnish)

Steps:

  • Preheat the oven to 400 degrees. Mist a 9×13-inch (or other 3-quart) baking dish with nonstick cooking spray.
  • In a Dutch oven, large pot, or extra-large skillet over medium-high heat, heat the coconut oil or butter until melted.
  • Add the onion and frozen broccoli florets and cook until the vegetables are softened and tender, 4-5 minutes.
  • Add the flour, tossing to coat the ingredients, and cook 1 minute more.
  • Reduce the heat to low and add the milk, ½ to 1 cup at a time, whisking after each addition. Be patient and whisk slowly as you continue adding the milk until all is added. Stir in the salt, thyme, garlic powder, and pepper. Increase the heat to medium-high and allow the mixture to come to a boil for 1 minute. Remove from the heat.
  • Add the frozen shredded potatoes, diced ham, and 1 cup of the cheese into the mixture, stirring until well incorporated.
  • Transfer the mixture to the prepared baking dish and spread into an even layer. Top with the remaining ½ cup cheese.
  • Bake for 30 minutes.
  • After 30 minutes, turn the oven broiler to High and broil the casserole for 3-5 minutes, until the topping is browned, watching carefully so it doesn't burn.
  • Garnish with sliced green onions, chives, or parsley.

4 tablespoons (1/2 stick) butter, plus extra for greasing dish
1/2 yellow onion, diced
1/3 cup all-purpose flour
1 1/2 cups half-and-half
1 1/2 cups milk
Freshly ground black pepper
2 pounds russet potatoes, washed thoroughly
3 cups diced cooked ham
2 cups grated Monterey Jack cheese
Chopped fresh parsley, for sprinkling, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the butter and onions to a large skillet over medium heat and saute until starting to soften, 3 to 4 minutes. Sprinkle the flour over the onions and whisk them together. Continue cooking the onion/flour mixture until golden brown, about 2 minutes. Stir in the half-and-half and milk and whisk around, allowing the mixture to thicken; this will take 3 to 4 minutes. Add some pepper, stir the sauce, reduce the heat and keep warm.
  • Slice the potatoes really thin using a mandolin or a really sharp knife, the thinner the better. Generously butter a 2-quart baking dish, then add half the sliced potatoes and half the diced ham. Sprinkle on half the cheese then pour on half the sauce from the skillet. Repeat with the rest of the ingredients, ending with a layer of cheese and sauce. Sprinkle extra pepper on top.
  • Cover the dish with foil and bake it for 40 minutes, then remove the foil and bake until the cheese is golden brown and the sauce is bubbling, an additional 20 to 30 minutes. Sprinkle with chopped parsley if desired and serve it up.
