You need only one skillet to put together this quick supper with Monterey Jack and leftover spiral-sliced ham. If you wish, add a squeeze of lemon before serving.

1 tablespoon extra-virgin olive oil
12 baby red potatoes, cut into small wedges
1 yellow onion, cut into small wedges
1 pound asparagus, trimmed and cut into 2-inch pieces
1/2 pound spiral sliced ham, cut into bite-size pieces
1 1/2 teaspoon 365 Everyday Value® Herbes de Provence
1/2 teaspoon fine sea salt
1 cup shredded Monterey Jack cheese
1 cup 365 Everyday Value® Organic Seasoned Croutons, lightly crushed

Steps:

  • Heat oil in a large ovenproof skillet over medium-high heat.
  • Add potatoes and onion; cook, tossing occasionally, until golden brown, about 10 minutes.
  • Stir in asparagus, ham, herbes de Provence and salt.
  • Add 2 tablespoons water, immediately cover, reduce heat to medium-low and cook until asparagus and potatoes are tender, 8 to 10 minutes more.
  • Preheat broiler.
  • Scatter cheese and croutons over hash and broil until bubbly and toasted, 2 to 3 minutes.

6 medium tomatoes, diced
6 ounces boneless fully cooked ham, cubed
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/8 to 1/4 teaspoon cayenne pepper
1/4 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large cast-iron or other heavy skillet, saute asparagus and yellow pepper in oil until crisp-tender. Add tomatoes and ham; heat through. Drain pasta; add to mixture. Stir in parsley and seasonings. Sprinkle with cheese.

1 pound fresh asparagus, trimmed, cut into 1-inch pieces
2 cups cubed fully cooked ham
3 cups cooked rice
1 cup finely chopped celery
1-1/2 teaspoons lemon-pepper seasoning
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup chicken broth
1 cup shredded cheddar cheese
1/2 cup dry bread crumbs
1 tablespoon butter, melted

Steps:

  • In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender; drain well. , In a greased 2-1/2-qt. baking dish, combine the asparagus, ham, rice, celery and lemon-pepper; set aside. In a large saucepan, combine soup and broth; add cheese. Cook and stir over medium heat until cheese is melted. Pour over ham mixture. , Combine crumbs and butter; sprinkle over top. Bake, uncovered, at 350° for 35 minutes or until heated through.

2 tablespoons sesame oil
1 teaspoon minced fresh ginger root
1 bunch asparagus stalks, ends cut
1 tablespoon soy sauce
½ cup chopped cashews

Steps:

  • Heat olive oil and sesame oil in a wok over low to medium heat. Add ginger, and stir-fry until slightly brown. Add asparagus, and stir-fry for a few minutes before adding soy sauce and cashews. Cook until asparagus is tender but still crisp and bright green, stirring frequently.

24 asparagus tips (about 150g)
4 large slices good ham , cut into thirds, or 6 smaller slices, halved
50g soft salted butter
good squeeze lemon juice
12 mini sub rolls
little salad cream

Steps:

  • Cook asparagus for 1-2 mins in boiling salted water. Drain well and dry on kitchen paper. Group in twos, then roll up in a slice of ham. Mash the butter with some black pepper and the lemon juice. Split rolls down the middle, but don't cut completely in half. Spread with a little butter, then add an asparagus wrap to each like you would a hotdog. Add a squirt of salad cream, if you like.

1 tbsp lemon juice
2 tbsp Dijon mustard
1 tsp clear honey
3 tbsp walnut or hazelnut oil
1 tbsp snipped chives

Steps:

  • Trim the asparagus, then peel the stems with a potato peeler. Boil in salted water for 12-15 mins until the spears are tender. Drain well.
  • Whisk together the lemon juice, mustard and honey with some salt and pepper. Whisk in the oil, then stir in the chives just before serving.
  • Divide the warm or cold asparagus between 4 plates. Lay the ham on top and drizzle over the dressing.

200ml light mayonnaise
zest 1 lemon, juice ½ lemon

  • Bring a pan of salted water to the boil, tip in the asparagus and cook for 2 mins until just tender. Drain well. Quarter each slice of ham, into 4 shorter strips, then wrap one around the middle of each asparagus spear. Mix the mayo with the lemon zest and juice and a little pepper and put in a small bowl. 1 lb asparagus, tough ends trimmed
2 cups cooked rice
8 ounces ham (deli or packaged lunch meat works well)
1 cup chicken stock
1 (10 ounce) can cream of celery soup
1 cup cheddar cheese, grated

Steps:

  • Preheat oven to 400 and grease a rectangular casserole dish.
  • Chop asparagus and ham into bite-size pieces.
  • Combine rice, asparagus and ham in casserole dish.
  • Combine soup and stock and pour over casserole.
  • Bake uncovered for 15-20 minutes (test asparagus for preferred texture--I like mine a little crisp).

  • Preheat the oven to 200 C / Gas 6. Wash and trim the bottom ends from the asparagus. Boil the Asparagus for 3-4 minutes then drain them and let them cool down.
  • Cut each slice of Parma ham in half.
