- Cook pasta according to package directions. Meanwhile, in a large cast-iron or other heavy skillet, saute asparagus and yellow pepper in oil until crisp-tender. Add tomatoes and ham; heat through. Drain pasta; add to mixture. Stir in parsley and seasonings. Sprinkle with cheese.

- Cook noodles according to package directions. Meanwhile, in a large saucepan, bring 2 cups of water to a boil. Add asparagus. Cover and cook for 3-5 minutes or until crisp-tender; drain and set aside., In a large skillet, saute the chopped onion in butter until tender. Combine the flour, thyme and pepper; gradually whisk in milk and broth until smooth. Add milk mixture to the skillet. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in lemon juice., Drain noodles; add the ham, parsley, sauce and asparagus. Transfer to a 13-in. x 9-in. baking dish coated with cooking spray. Top with fried onions and cheese., Cover and bake at 350° for 20 minutes or until bubbly. Uncover and bake 5-10 minutes longer or until golden brown.

- In a large skillet, cook asparagus in a small amount of water until crisp-tender, about 6-8 minutes; drain well. Spread about 1 teaspoon of mustard on each ham slice. Top with one slice of cheese. , Place an asparagus spear at one end (trim to fit if needed). Roll up each ham slice tightly; secure with three toothpicks. Dip ham rolls in egg, then roll in bread crumbs. , In an electric skillet, heat 1 in. of oil to 350°. Fry rolls, a few at a time, until golden brown, about 3-4 minutes. Drain on paper towels; keep warm. , Cut each roll between the toothpicks into three pieces.

- Place asparagus in a skillet; add 1/2 inch of water. Bring to a boil. Reduce heat; cover and simmer for 3-5 minutes or until crisp-tender. Drain and set aside.
- Separate crescent dough into four rectangles; seal perforations. Spread cream cheese over each rectangle to within 1/4 inch of edges. Top each with ham, leaving 1/4 inch uncovered on one long side. Place two asparagus spears along the long side with the ham; roll up and press seam to seal.
- Cut each roll into sever pieces. Place cut side down 1 inch apart on greased baking sheets. Combine butter and garlic powder; brush over spirals. Bake at 375'F for 10-12 minutes or until golden brown.

HAM, ASPARAGUS, AND PASTA CASSEROLE
I have no idea where this came from, but I'm pretty sure I tweaked it from some cookbook or another. This is not only easy, it's incredibly tasty. Not too heavy, and doesn't take long in the oven so it's not bad for a summertime casserole.

Steps:
- Cook pasta in boiling water seven minutes.
- Add asparagus; cook an additional 2-3 minutes; drain.
- Meanwhile, melt butter in large frying pan and preheat oven to 450°F.
- Add onion to butter and saute 4-5 minutes, just until softened.
- Combine flour, thyme, salt, and pepper in a bowl.
- Add milk and chicken broth; combine well with a whisk.
- Add milk mixture to frying pan.
- Cook over medium heat, stirring frequently, until thickened (about 5 minutes).
- Remove sauce from heat; stir in lemon juice.
- Combine all ingredients except parmesan and bread crumbs in a large casserole dish.
- Combine parmesan and bread crumbs, and sprinkle over top of casserole.
- Bake at 450F for approximately 10 minutes, until casserole is bubbly and the bread crumbs are golden brown.
HAM AND ASPARAGUS SPIRALS

- 1. Pre-heat oven 375 degrees. Unroll dough and seperate into 4 retangular shapes. Spread onion and chive cream cheese evenly on dough. Top cream cheese with 2 slices of ham so that they cover the rectangle without overhanging.
- 2. Steam 8 pieces of Asparagus 3-5 min. Place 2 pieces on each rectangle long way. Start at asparagus roll and seal.
- 3. Cut each log into 7 pieces. Mix 2 tablespoons mealted butter with garlic powder and baste top of each spiral.
- 4. Cook 10-12 min. at 375 degrees. Cool for 10 min. before eating.
HAM AND ASPARAGUS CASSEROLE
Great way to use up leftover rice--I modified a recipe I found on the web and ended up with a real winner. Also great the next morning with scrambled eggs. I have a feeling that the right combination of seasonings could replace the cream of celery soup--let me know if you figure it out!

- Preheat oven to 400 and grease a rectangular casserole dish.
- Chop asparagus and ham into bite-size pieces.
- Combine rice, asparagus and ham in casserole dish.
- Combine soup and stock and pour over casserole.
- Bake uncovered for 15-20 minutes (test asparagus for preferred texture--I like mine a little crisp).
- Sprinkle cheese on top and bake until melted.
AUNTIE NAN'S HAM & ASPARAGUS SPIRALS
My sister introduced me to these. They are always a big hit at buffets. Costco is a good place to get the supplies for these, as they sell almost all the ingredients (except maybe the squeeze cheese) in large quantities and at a decent price. These are also good just as a sandwich wrap. ;) Ingredient amounts are approximate, varying according to taste and quantities desired.

- Lay a tortilla on a flat work surface, then spread with cream cheese, covering to the edge.
- Spread a single layer of spinach on top of the cream cheese, then a layer of ham.
- On the side closest to you, place an asparagus spear and a single line of squeeze cheese; roll it up and place seam side down.
- If desired, these can be carefully rolled up and sealed in plastic wrap at this point, and refrigerated for a few hours or up to overnight.
- When ready to serve, cut into 3/4"-1" slices.
- Lay flat on a serving tray and serve immediately.
- Refrigerate leftovers.
