Time 32m

Number Of Ingredients 14

1 cup butter; softened and at room temperature
1 cup brown sugar
1 cup white sugar
1 tsp. vanilla extract
2 whole large eggs
1 tsp. baking soda
1/2 tsp. baking powder
2 cups all-purpose flour
1/2 tsp. salt
2 cups old-fashioned rolled oats
1 cup chocolate chips
Halloween sprinkles
1 pkg. Halloween M&M's (Ghoul's Mix)
1 pkg. Wilton's Candy Eyeballs

Steps:

  • Preheat oven to 325 degrees F. Line baking sheets with parchment paper or nonstick baking spray.
  • In a large bowl with an electric mixer, cream together the butter and sugars until light and fluffy for a few minutes. Add vanilla extract and eggs and mix again. Be sure to scrape down the sides of the bowl with a spatula.
  • Add the baking soda, baking powder, salt and oats. Mix again until combined.
  • Add flour, chocolate chips and mix again until all of the ingredients are combined and a dough has formed. You can add 1/2 cup of M&Ms if you want to add more chocolate in these cookies. This is optional.
  • Scoop cookie dough with a mini ice cream scoop (about 2 tablespoons of dough) and roll into sprinkles. Place on prepared cookie sheets and bake for 10-13 minutes or until golden brown.
  • As soon as your cookies come out of the oven, press the eyeballs and M&M's into the hot cookies. Let the cookies cool for a few minutes and then transfer to a cooling rack.

Don't be surprised if all the monsters come out of hiding when you assemble these fun and easy treats. My kids and I made them for their classroom Halloween party one year. Their classmates loved them, and it's now a tradition to make them every year. -Dina Crowell, Fredericksburg, Virginia
