- Preheat oven to 425 degrees F (220 degrees C). Lightly grease a medium baking dish.
- In a bowl, mix the Cheddar cheese, mayonnaise, sour cream, flour, lemon juice, onion, and cayenne pepper.
- Arrange the halibut steaks in the prepared baking dish, and cover with the Cheddar cheese mixture.
- Bake 10 minutes in the preheated oven. Reduce heat to 350 degrees F (175 degrees C), and continue baking 15 minutes, or until fish is easily flaked with a fork.

HALIBUT PARMESAN
Steps:
- Put an oven rack in the center of the oven and preheat the oven to 450 degrees F.
- Pat the halibut dry with a paper towel. Spread the flour in 1 shallow dish, beat the egg with 2 tablespoons water in another, and put the Parmesan cheese in a third.
- Heat a medium oven-proof skillet over medium-high heat. Add the butter or oil and heat until hot but not smoking. Meanwhile, coat the halibut with flour, shaking off the excess; repeat with the egg mixture and Parmesan. Add the fish to the pan and cook until golden on both sides, 1 to 2 minutes per side. Transfer the skillet to the oven and cook until slightly crispy, 4 to 5 minutes. Serve hot.

- Melt butter and blend in the lemon juice and sour cream.
- Salt and pepper the fish to taste and place in a casserole dish.
- Spread the onion rings evenly on top.
- Pour the sour cream mixture over fish, spread evenly and top with the cheese.
- Bake for 35 minutes or until fish flakes with a fork.

- 1. Preheat oven at 325° F.
- 2. Peel and slice potatoes and carrots, boil until done.
- 3. Place halibut in a greased glass baking dish. Season the halibut with salt and pepper.
- 4. Put 1/2 cup grated cheese over fish.
- 5. Place potatoes and carrots evenly over fish.
- 6. Make the cream sauce using the butter, flour and milk. Melt butter in sauce pan, add flour to make rue. Add milk slowly to rue, stir until it comes to a boil and thickens.
- 7. Add onions to the sauce and pour over the fish and vegetables.
- 8. Sprinkle remaining cheese and bread crumbs over top.
- 9. Bake for 45 minutes at 325° F. Enjoy! Serves 8. You can add shrimp or scallops to the fish for a richer dish, and serve on shell.

- In a large saucepan, melt 4 tablespoons butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. HALIBUT ENCHILADAS WITH SALSA VERDE
Steps:
- Preheat the oven to 350°F.
- Lightly coat the halibut with 2 tablespoons of the vegetable oil and season it with salt and pepper. Put the halibut in a 9 x 13-inch casserole dish and bake for 25 minutes. Allow the halibut to cool, then flake it into a bowl. Keep the oven at 350°F.
- Melt the butter in a sauté pan set over medium heat. Add the onion and cook until translucent, about 8 minutes. Transfer the onion to a medium bowl and add the mayonnaise, sour cream, chiles, and 1 cup of the cheese mix. Mix thoroughly.
- Pour 2 cups of the verde sauce into the bottom of a 9 x 13-inch casserole dish. Set aside.
- Heat the remaining 1 cup of vegetable oil in a sauté pan set over medium heat until just warm, then turn off the heat. Put one tortilla in the oil at a time and leave it in the oil for 5 seconds (you are looking to just make the tortilla pliable, not brown or crunchy). Transfer the tortilla to a cutting board. Put 1/4 cup of the fish mixture on one end of the tortilla. Roll up the tortilla and put it on top of the sauce in the casserole dish, seam side down. Repeat until all ten tortillas are filled, then pour the remaining 2 cups verde sauce over the top to coat the enchiladas entirely. Sprinkle the remaining 1 cup cheese mix over the top.
- Bake for 25 minutes or until the sauce is bubbling slightly and the enchiladas are heated through.

- Salsa verde is a versatile sauce that Sandy has in her refrigerator all the time. She likes to warm 1 cup of the sauce in the morning and pour it over eggs and toast for breakfast. It's a spicy way to start the day!

- Preheat oven to 350 degrees F (175 degrees C).
- Layer half the halibut slices in a 9x13-inch baking dish. Mix sour cream and mayonnaise in a small bowl until smooth; spread half the sour cream mixture over halibut. Spread mushroom slices on top, followed by a layer of half the onion slices and half the Cheddar cheese. Repeat layers of halibut, sour cream mixture, onion, and Cheddar cheese. Sprinkle with saltine crackers.

- Whisk together the first eight ingredients in a 9x13 inch casserole dish.
- In the casserole dish, place the halibut fillet, then flip it over so both sides get marinade. If preferred, cut the halibut into smaller pieces and marinate for about 30 minutes to 2 hours in the refrigerator.
- Go ahead and preheat your oven to 350 degrees F.
- Remove the plastic wrap from the casserole dish and place it in the oven. Bake for 20 minutes or until it is fully cooked.

- Remove bones from fish and cut into 1-inch cubes. Cook lasagna noodles according to package directions, drain and set aside. In a large skillet over medium heat, melt 2 tablespoons butter. Add halibut and thyme. Cook until fish flakes easily with a fork, about 10 minutes. Add garlic; cook 1 minute longer. Remove and set aside. Add the remaining butter to the skillet. Stir in flour and salt until smooth; cook and stir until golden brown. Gradually add broth and cream. Bring to a boil; cook and stir for 2 minutes or until thickened.
