Creamy Macaroni and Cheese image

This is my absolute very favorite macaroni and cheese recipe and I have a large collection of m/c recipes. Adapted from Southern Living. I don't make this very often because I could literally eat the whole thing and lick the dish clean.

1/2 cup butter or 1/2 cup margarine
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper, to taste
1/4 teaspoon cayenne pepper, to taste
1/4 teaspoon garlic granules
2 cups half-and-half
2 cups milk
2 (10 ounce) packages sharp cheddar cheese, shredded and divided (I use Cracker Barrel)
1 (10 ounce) package extra-sharp cheddar cheese, shredded (I use Cracker Barrel)
1 (16 ounce) package elbow macaroni, cooked

Steps:

  • In a big skillet, melt the butter over medium-high heat.
  • Whisk the flour in gradually until the mixture is smooth.
  • Cook and whisk continually for 2 minutes.
  • Add in salt, pepper, cayenne, and garlic; stir to combine.
  • Gradually whisk in half-and-half and milk.
  • Cook and whisk continually for 8-10 minutes or until mixture is thickened.
  • Add in half of the sharp cheddar cheese; stir.
  • Add in all of the extra-sharp cheddar cheese; stir until smooth.
  • Take skillet off stove burner.
  • Mix together the cooked macaroni and cheese mixture; transfer to a greased 13x9 inch casserole dish.
  • Sprinkle with the remaining sharp cheddar cheese.
  • Bake in a 350° oven for 20 minutes (may need to bake longer for a crispy top).

This easy cheese sauce is prepared with a simple white sauce base and shredded cheese. Serve it with vegetables, pasta, rice, or even on sandwich melts.

3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/8 teaspoon ground black pepper (or white pepper)
1 1/2 cups milk (or light cream)
1 cup grated cheddar cheese (mild or sharp)

Steps:

  • Gather ingredients.
  • Melt the butter in a saucepan over medium-low heat; remove from heat. Stir in the flour, salt, dry mustard, and pepper.
  • Put the saucepan back on the heat and cook, stirring, for 1 minute.
  • Gradually add milk or light cream, stirring until well mixed.
  • Continue cooking, stirring constantly, until thickened and smooth. Reduce the heat to low and simmer, stirring, for 5 minutes.
  • Add the cheese and cook, stirring, until the cheese has melted and the sauce is smooth and well blended.
  • Serve with pasta or vegetables and enjoy.

2 pounds haddock fillets
1 teaspoon salt
⅛ teaspoon ground black pepper
3 tablespoons butter
¼ cup minced onion
3 tablespoons all-purpose flour
1 teaspoon ground dry mustard
½ teaspoon salt
⅔ cup heavy cream
⅔ cup half-and-half cream
½ cup shredded sharp Cheddar cheese
½ cup shredded Monterey Jack cheese
¼ teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly butter a medium or large baking dish.
  • Rinse and dry fillets. Season with 1 teaspoon salt and 1/8 teaspoon pepper.
  • In a skillet or frying pan, melt butter over medium heat. Saute onion in butter until golden. Stir in flour until completely incorporated. Stir in mustard, 1/2 teaspoon salt, light and heavy creams. Cook until thickened, stirring constantly. Remove from heat and stir in cheeses. Pour sauce over fish and sprinkle with paprika.
  • Bake in preheated oven for 30 minutes, until brown and bubbly.

1 lb shell pasta
½ cup butter
6 Tablespoons flour
4½ cups milk
2½ cups white cheddar cheese ((shredded))
1½ cups parmesan cheese ((shredded))
1 teaspoon ground mustard
1 teaspoon salt
1 pinch pepper

Steps:

  • Cook pasta according to package instructions. Drain and set aside.
  • In a saucepan, heat 1/2 cup butter until melted.
  • Slowly whisk in flour until blended, and then slowly add in the milk. Bring mixture to a boil and continue stirring until it starts to thicken. Add in cheese, mustard, salt, and pepper until smooth.
  • Add macaroni to the sauce and stir until completely combined.
  • Serve topped with extra parmesan cheese and a sprinkle of pepper.

It's nice to have an easy recipe for cheese sauce on hand. You can drizzle this over broccoli, cauliflower or pretty much any other favourite veggie. It is also nice tossed with pasta but you may need to increase the amount of sauce. Enjoy!
