Delicious hake chunks in a red wine Neapolitan sauce served on a bed of gluten-free pasta. Garnish with Parmesan cheese and chopped parsley.

4 (5 ounce) fillets hake
1 (12 ounce) package gluten-free pasta
1 teaspoon olive oil
1 small red onion, chopped
2 teaspoons tomato paste
1 teaspoon minced garlic
½ cup red wine
1 (14.5 ounce) can whole peeled tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried dill weed
1 tablespoon lemon juice, or to taste
salt and ground black pepper to taste

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Add hake, cover, and steam until easily flaked with a fork, about 25 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook pasta in the boiling water, stirring occasionally until tender yet firm to the bite, about 10 minutes. Drain.
  • Heat olive oil in a large skillet over medium heat. Add red onion, tomato paste, and garlic; cook and stir until dark and thick, 2 to 3 minutes. Pour in red wine; cook for 1 minute. Stir in canned tomatoes, oregano, basil, and dill weed. Simmer sauce until thickened, about 5 minutes.
  • Cut hake into 1-inch chunks and stir into the sauce. Season sauce with lemon juice, salt, and pepper. Serve over pasta.

1/3 cup fresh celery juice (from about 2 stalks)
1/3 cup fresh sorrel or cilantro juice (from about 2 cups, lightly packed)
2 teaspoons fresh leek juice (from about 1 dark-green leek top)
1 tablespoon white wine vinegar or lemon juice
Kosher salt
1 pound peanut potatoes or baby potatoes (as small as possible)
Kosher salt
3 tablespoons olive oil, divided, plus more for drizzling
4 4-ounce pieces skin-on hake or cod fillet
4 scallions, trimmed
1/2 cup plain Greek yogurt
Chervil or other tender herb sprigs (for serving)

Steps:

  • Juice each ingredient separately. Combine celery juice, sorrel juice, leek juice, and vinegar in a small bowl; season with salt and more vinegar, if desired.
  • Place potatoes in a medium saucepan and add water to cover; season with salt. Bring to a boil, reduce heat, and simmer until tender, 10-15 minutes; drain and return to saucepan. Toss potatoes with 1 tablespoon oil, then season with salt.
  • Meanwhile, heat 1 tablespoon oil in a large skillet over medium-high heat. Season fish with salt and cook, skin side down, until very crisp, about 4 minutes. Turn fish and cook until just cooked through, about 2 minutes longer. Transfer to a plate.
  • Heat remaining 1 tablespoon oil in same skillet and add scallions. Cook, turning occasionally, until scallions are charred in spots and are slightly softened, about 1 minute. Transfer to plate with fish.
  • Divide fish, yogurt, and potatoes among shallow bowls. Spoon green sauce around and drizzle with oil. Top with scallions and chervil.

3 (10- to 12-oz) hake steaks (1 inch thick) or 6 (5- to 6-oz) fillets with skin, plus about 5 oz bones or thin belly flap and tail
1 cup water
1 small onion, chopped
1/4 cup minced fresh flat-leaf parsley plus 2 sprigs
3 large garlic cloves, thinly sliced
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 cup extra-virgin olive oil
3/4 cup cooked fresh peas or frozen peas, thawed
Special Equipment
a 12-inch-wide earthenware cazuela* or heavy metal pot (about 3 inches deep) with 2 handles

Steps:

  • Make fish stock:
  • Put fish bones or flap and tail in a 2-quart saucepan (set aside steaks or fillets) and add water, onion, parsley sprigs, and one third of garlic, then gently simmer, covered, 20 minutes. Pour through a fine-mesh or cheesecloth-lined sieve into a small bowl, pressing hard on solids and then discarding them (you will have about 1 cup stock).
  • Cook fish:
  • Pat fish dry and sprinkle with salt and pepper. Heat oil and remaining garlic in cazuela over low heat until garlic begins to sizzle. Add half of minced parsley and all of fish, skin sides up if fillets, then start gently swirling pot, holding onto both handles (it helps to plant your feet apart from each other) so fish moves slowly around edge of bottom of pot and oil laps over it. Cook fish, swirling pot, until bottom 1/2 inch of fish turns white, about 5 minutes. Carefully turn fish over and continue cooking, swirling pot and adding 1 or 2 tablespoons of stock every minute or two, until sauce is emulsified and fish is almost cooked through, about 10 minutes. (You will use about 1/2 cup stock.) Add peas and remaining minced parsley and cook, swirling pot, until peas are warm and fish is just cooked through, 3 to 5 minutes.

This has always been a hit with my guests and is one of my favourite pasta dishes. Although its advisable to make the chicken sauce at the last minute, you can make the tomato sauce in advance, refrigerate & reheat. The chicken sauce tastes as good made with half & half but it takes longer to thicken. The dish can be made with any pasta - it doesn't have to be green - only if you want the tri-colour (neapolitan) presentation.

2 tablespoons olive oil
1 small onion, chopped
1 clove garlic, minced
1 (14 ounce) can chopped tomatoes
2 tablespoons parsley, chopped
1 teaspoon dried oregano
2 bay leaves
2 tablespoons tomato paste
1 teaspoon sugar
salt and pepper (to taste)
1/4 cup unsalted butter
14 ounces boneless skinless chicken breasts
3/4 cup blanched almond
1 1/4 cups heavy cream
salt and pepper (to taste)
250 g spinach linguine
1 tablespoon olive oil
1 teaspoon salt
basil leaves (for garnish)

Steps:

  • PREPARE RED SAUCE: Heat oil in pan over medium heat& saute onion until translucent.
  • Add garlic& saute for another minute.
  • Stir in the rest of the ingredients; bring to a boil, then reduce heat& simmer uncovered for 15- 20 minutes.
  • Adjust seasoning, if necessary and remove the bay leaf.
  • PREPARE CHICKEN SAUCE: Melt butter in a heavy fry pan over medium heat.
  • Very thinly slice the chicken into strips; saute along with the almonds, stirring frequently, until the chicken is cooked (about 5 or 6 minutes).
  • Meanwhile, pour the cream into a small, heavy pan over a low heat.
  • Bring to a boil& boil for about 10 minutes, stirring constantly, until reduced by almost half.
  • Combine the cream with the chicken mixture and season.
  • Set aside& keep warm.
  • PASTA: Add oil, then noodles to a large pot of salted, boiling water& cook until tender.
  • Drain well.
  • ASSEMBLY: Turn noodles onto individual plates.
  • Spoon tomato sauce over them, leaving the outer edge of the noodles visible.
  • Spoon chicken sauce onto the center of tomato sauce, leaving the outer edge of the tomato sauce visible.
  • Sprinkle with basil leaves.
