The linzertorte is said to be the oldest cake in the world and dates back to at least 1653, but no one knows who invented it. There are lots of variations and the oldest known recipe is in a cookbook that was written 350 years ago. Named after the Austrian city of Linz, which is justly proud of this delicious creation, the Linzertorte has a crumbly pastry base, a jam filling and a lattice top. This is our version with mincemeat. Equipment: you'll need a 25cm/10in flan tin.

500g/1lb 2oz homemade mincemeat (or use shop-bought if you are short of time)
115g/4oz icing sugar, plus extra for rolling
175g/6oz ground almonds
85g/3oz caster sugar
1 large free-range egg
½ tsp almond extract
1 tsp freshly squeezed lemon juice
150g/5½oz plain flour
150g/5½oz ground almonds
150g/5½oz caster sugar
150g/5½oz chilled butter
1 free-range egg
pinch salt
milk, for brushing
icing sugar, for dusting

Steps:

  • To make the marzipan, sift the icing sugar into a large bowl and stir in the almonds and caster sugar. Beat the eggs with the almond extract and lemon juice. Using a large spoon, stir the eggs into the almonds and sugar until the mixture begins to come together. Use your hands to combine the mixture into a stiff but pliable paste.
  • Dust a work surface with sifted icing sugar and knead the marzipan for 1-2 minutes or until smooth. Return to the bowl, cover with cling film and leave to stand for 1-2 hours before using. This allows the almonds to swell and absorb some of the moisture from the egg mixture.
  • To make the pastry, put the flour, almonds, caster sugar and butter into a food processor and blend until it resembles fine breadcrumbs. Add the egg and a pinch of salt and pulse until it forms a ball of dough. Wrap in cling film and refrigerate.
  • Preheat the oven to 200C/180C Fan/Gas 6. Place a baking tray in the oven to heat up.
  • Remove the pastry from the fridge and slice off one third. Dust a work surface with flour and roll out the larger piece to line a 25cm/10in flan tin. Place and press into the tin. Dust the surface with more flour and roll out the marzipan so that it will cover the base of the tin. Place ontop of the pastry. Spread the mincemeat evenly over the marzipan.
  • Dust the surface with flour, roll out the remaining pastry and cut into equal strips. Make a lattice design on top of the mincemeat or alternatively cut out shapes to cover most of the mincemeat.
  • Brush the pastry with milk, place on the preheated baking tray and bake for 30 minutes or until the pastry is crisp and golden-brown. Dust with icing sugar. Serve hot or cold, with cream.

EASY VANILLA MARZIPAN

175g golden caster sugar
280g icing sugar, sifted, plus extra for kneading and rolling out
450g ground almond
seeds scraped from 1 vanilla pod
2 eggs, beaten
½ tsp orange or lemon juice
3 tbsp apricot jam, warmed then sieved

Steps:

  • Mix the sugars and almonds in a large bowl, then rub in the vanilla seeds until even. Make a well in the middle, then tip in the eggs and citrus juice. Cut the wet ingredients into the dry with a cutlery knife. Dust the surface with icing sugar, then knead the marzipan briefly with your hands to a smooth dough. Don't overdo it as the paste can get greasy. Add a bit more icing sugar if it seems too wet. Shape into a ball, then wrap and keep in a cool place until ready to cover the cake. Can be made up to 2 days in advance.
  • Lift the cake onto a cake board or plate, then use a pastry brush to cover evenly with a thin layer of jam. Dust the work surface with more icing sugar, then roll the marzipan into a circle about 40cm across, dusting underneath the marzipan with more icing sugar and turning it a quarter turn after every few pushes of the rolling pin.
  • Flip the top of the circle back over your rolling pin so you can see the underside of the marzipan, then lift the pin up and lift the marzipan over the cake. Stop once you can see that the edge of the marzipan nearest you is about level with the bottom of the cake. Flop the front of the marzipan down. Smooth the paste over the cake using the palms of your hands, then trim with a sharp knife. If any cracks appear, simply pinch the paste back together and smooth. Leave to dry for at least 24 hrs, or up to 3 days, before covering with icing.
  • How long does homemade marzipan keep? Although homemade marzipan contains raw eggs, the amount of sugar, and lack of moisture, prevents bacteria growing when left at room temperature, so your cake should last for 1-2 months iced. The most important thing is that you don't scrimp on drying time - once you've covered your cake in marzipan it should be left to completely dry out, before you then cover it with icing. If you want to make marzipan before you are ready to cover your cake, then wrap it well in cling film and keep in a fridge for up to a week - as wrapped in a ball it will still contain a little moisture. As it contains raw eggs it shouldn't be given to anyone in an at-risk group, including pregnant women, the elderly, the unwell and the very young. You can make a cooked marzipan, which carries no risks. It is a little softer, and harder to work with, but a good substitute if you are at all worried.

175g really soft butter
175g golden caster sugar
3 medium eggs
50g ground almond
140g self-raising flour
½ tsp baking powder
½ tsp almond extract
pink food colouring (we used 1 tube Dr Oetker gel food colouring in Hot pink)
100g apricot jam
icing sugar , for dusting
500g pack white marzipan

Steps:

  • Heat oven to 180C/160C fan/gas 4. Using a double layer of foil, make a barrier down the center of a 20cm square tin (or use a battenberg tin), then line each compartment with 2 pieces of baking parchment. Put all the cake ingredients except the food colouring in a large mixing bowl and blend with an electric hand whisk until smooth. Tip half the cake mixture into one side of the tin. Quickly mix the food colouring into the remaining cake mixture. When you have a smooth and vivid pink colour, scrape this mixture into the other side of the tin, then spread both mixtures to the edges of their sections. Bake for 25-30 mins until a skewer comes out clean. Cool in the tin for 15 mins, then transfer to a wire rack to cool completely.
  • Place the cakes on a chopping board and trim the sides of each one to give you a straight edge. Cut each one in half lengthways to give you 2 pink and 2 plain rectangular sponges, using a ruler if you want to be really exact. If the sponges are a little taller than they are wide, trim some sponge from the tops as well - this will ensure you have a perfect square when you come to assemble the cake.
  • Heat the apricot jam in a small pan or the microwave, then sieve it. Lightly dust a work surface with a little icing sugar, then roll out a quarter of the marzipan to a rectangle roughly 20 x 10cm. Brush the surface with the warm apricot jam, then place 1 plain sponge and 1 pink sponge side by side on top, brushing the middle of the cakes with a little jam to stick them together. Brush the top of the cakes with more jam, then place the remaining sponges on top, with more jam in between, in a chequerboard pattern.
  • Roll out the remaining marzipan to a rectangle roughly 20 x 25cm. Brush any remaining jam over the outside of the assembled cake. Using a rolling pin to help, lift the marzipan over the cake. Smooth it over the top and sides, and press gently into the corners so it wraps the cake tightly. Trim any excess marzipan about 1cm from the sides of the cake, and trim a thin slice off either end to neaten. To finish, crimp the marzipan around the base by pinching with your finger and thumb.
