Guinness Reduction Sauce Recipe 45 Food
HP GUINNESS SAUCE
A lost classic... From 2011 to 2013 I fell in love with HP Guinness Sauce only to discover it's no longer made. As my reserve is almost gone, I set out to reverse engineer it and this is the result. It's very close to the original by my palette, is excellent on nearly all meats and as a dipping sauce for anything fried!

Steps:
- Dissolve the cornstarch in the cold water.
- Add all ingredients to a large pot.
- Bring to boil.
- Simmer, stirring often for 2-1/2 hours on medium heat.
- Bottle in sterilized glass bottles or jars while still very hot.
- Refrigerate after opening.

Steps:
- Combine Guinness and Sugar and simmer on low heat for about an hour. Keep stirring until reduced to about half. To serve, drizzle equal amounts of reduction and olive oil and serve with Irish soda bread.

- In a medium saucepan, whisk together Guinness and brown sugar over medium heat. Once it begins to bubble, reduce heat to low and simmer, stirring occasionally, until reduced by half. It will take about 60 minutes. Remove from heat and allow to cool to room temperature. It will thicken further as it cools.
- Serve with equal parts olive oil. Place remaining in an airtight container (minus the olive oil) and store in refrigerator.
