GUILT FREE OATMEAL COOKIES
Came up with this recipe as I am trying to lose weight and make lifestyle changes, but needed something to have around the house that wouldn't tempt me to cheat!

Steps:
- preheat oven to 375.
- mix applesauce and add sugar gradually.
- add eggs, milk and vanilla. beat well.
- add flour, salt and soda.
- stir in remaining ingredients.
- Drop by rounded tablespoons onto a greased cookie sheet (i prefer parchment paper).
- bake for 13 minutes.
- cool on pan then transfer to rack.

- Preheat oven to 350 degrees.
- In a large mixing bowl, mash bananas with a fork until no longer lumpy. If bananas aren't very ripe, a hand mixer may be used. Stir in oil, oats, chocolate chips, and vanilla.
- Lightly grease a cookie sheet.
- For each cookie, spoon about 2 tablespoons of cookie mixture (or more depending on how big you want the cookie) onto the cookie sheet. Bake for 15-20 minutes.
- **IF batter seems a little dry, add a little milk to moisten.
- Variations: Instead of chocolate chips add raisins or craisins. Chopped walnuts are great in these cookies. Or, try coconut oil instead of canola oil.

- Cover baking sheets (may need 2) with aluminum foil.
- Peel and mash bananas in a large bowl.
- Stir in all other ingredients except oats.

- Preheat oven to 350.
- In a large bowl, combine the oats, cranberries, and walnuts.
- In a medium bowl, combine the banana, oil, vanilla, cinnamon, salt, and baking soda until well blended.
- Add banana mixture to oat mixture, stirring to combine. Let stand 15 minutes.
- Lightly spray cookie sheets with cooking spray or line with parchment paper.
- Drop dough by rounded tablespoonfuls onto prepared sheets.
- Bake 14 to 15 minutes or until lightly golden brown. Let cool on sheets 1 minute.
- Transfer cookies to wire racks; cool completely.

I took the basic oatmeal cookie recipe (right off the Quaker box) and added everything I could find in the pantry: chocolate chips, raisins, even some peanut butter. Was out of vanilla, so added almond extract. Wonderful chewy crunch!

A high protein snack any time of the day. Without a lot of sugar, that lets you down an hour later. That is what the working men in the family wanted. So this is what I made, and they liked it. I pack 3 to each lunch box, along with the sand'wich and fruit. They all said it was just the right amount to get them through the work day. High protein, a low carbohydrate snack with high firber.

- Bring to a boil 1 cup Dried Apricots, 1 cup water, and simer 5 minutes in small pan.Cover and let set till cool
- Bring to a boil 1 cup Raisins, 1 cut water, and simer 5 minutes in small pan, Covered, turn off and let set till cool.
- I do this the day before. If the Dates are hard you can do the same with them. You want the fruit to be soft so that it will mix into the other ingredients.
- For the topping I use a food procser and grind the Walnuts, Sugar, and Flour till I have a fine meal. and set aside.
- Now Drain the Raisins, Apricots and save the water from the Apricots. Now put the ingredients for the cookie in the mixing bowl and mix together for 4 minutes on low speed, Now add the water from the apricots (Apricots Juice ) and mix for 3 mintues, and then let set for 30 minutes so the dry can absorbe the wet,.
- Now start droping the cookies with a #40 ice cream server into the topping mix and roll them once, then place them on a cookie sheet.
- I use a 12 X 18 cookies sheets and place then 3 x 5.
- Bake at 350deg for 14 to 15 minutes . let cool 10 minutes befour removing from cookie sheet.

- Preheat oven to 375.
- These can be made with just a bowl and a spoon--overmixing will make them spongy, so start by mixing the dry ingredients together and then add syrups, oil, vanilla and cranberries.
- Spoon onto lightly greased, parchment or silpat surface. Bake for 10 or less minutes, until just turning slightly brown on edges--cookies may seem a bit too soft, but they will firm up a bit while still maintaining a good soft moist texture.
- Be careful not to overcook (or yes, they will be dry and hard)!

VEGAN OATMEAL COOKIES
In The Complete Guide and Cookbook for Raising Your Child as a Vegetarian by Michael & Nina Shandler, these are called "Eggless Oatmeal Cookies." I thought "vegan" would sound more appetizing as well as be about what they are rather than what they aren't. ;) I made these today and used apple-raspberry juice and King Arthur's White Whole Wheat Flour for all the flours, because that's what I had on hand. They remain fairly soft and I think it's best to store them in the refrigerator if you're not going to gobble them up immediately.
