SWEET ICED PEACH TEA
This is a refreshing fruit tea. I brew the tea in in my 3 quart Mr Coffee Iced Tea Pot. Other fruits or juices can be used too. It will probably be good as a hot tea as well.

Steps:
- Make the tea in a 3 or 4 quart pitcher (or iced tea pot). Set aside.
- Pour peaches and water into a blender.
- Blend on high speed until well blended.
- Add sugar and blend for a few more seconds.
- Add more water until there is 1 quart.
- Blend for a few seconds-- pulse.
- Pour this mixture into the pitcher of tea and stir until well mixed.
- Chill before serving.
- Serve over ice or warm up for a hot drink.

Steps:
- Steep tea bags in boiling water for 5 minutes; set aside to chill. Meanwhile puree the peaches and push pulp through a strainer.
- Add the strained puree to a 1/2 gallon pitcher, stir in the simple syrup and lemon juice, top with ice and pour tea over the top; stir.
- Cover and chill in refrigerator until needed, stirring in fruit just before serving.

JAMAICAN HIBISCUS ICED TEA
Jamaicans make this with fresh hibiscus, so common in the islands, but you can find it dried at your health food store, some supermarkets, or Whole Foods store. This is Jamaicas answer to iced tea and better for you too! Sometimes allspice berries are added, I have left them out here.

Steps:
- Peel the orange and slice or grate (recommended) the ginger.
- Add all ingredients to a pot, cover and bring to a gentle simmer. This takes about 10 minutes.
- Then simmer for another 30 minutes to extract all the spiced goodness.
- Cool and refrigerate overnight for strongest flavor.
- Strain and mix with ice and water.

PEACH ICED TEA
Beat the heat on summer days with a refreshing glass of peach iced tea. Sure to be a hit with the whole family, you could also make it with raspberries

Steps:
- Tip the sugar into a pan with 250ml water. Bring to the boil slowly, ensuring the sugar is fully dissolved. Add the chopped peaches and cook until very soft. Remove from the heat, mash the peaches with a fork, and leave to infuse for 1 hr.
- Sieve the syrup through a fine sieve into a jug, mashing the fruit to release all the liquid. The syrup will keep in the fridge for one week.
- Put the teabags in a large heatproof jug and pour over 2 litres boiling water. Leave to steep for 4 mins, then carefully remove the teabags. Leave to cool, then transfer to the fridge until chilled.
- Stir the peach syrup into the iced tea with some ice, or pour a little of the syrup into tall glasses and add the tea. Top up with more water, sparkling water or ice. Add peach slices to serve.

- Remove from heat and cover. Let steep for 10 minutes.
- Strain or carefully press water from tea bags.
- Put hot tea solution into a gallon pitcher and add sweetener, stirring to dissolve.
- Add water to pitcher to fill.
- Cool in refrigerator and serve with ice.
