BASIL INFUSED FETTUCCINE WITH BOK CHOY AND CRAB MEAT SAUCE



Basil Infused Fettuccine with Bok Choy and Crab Meat Sauce image

Number Of Ingredients 14

1 1/2 cups all-purpose flour
4 eggs
3 tablespoons water
1 teaspoon salt, plus extra for bok choy
1/4 cup chopped basil leaves
1 teaspoon olive oil, plus 2 tablespoons, plus 3 tablespoons
2 cups roughly chopped bok choy
2 green tomatoes, roughly chopped
1/3 cup chopped bacon
1 clove garlic, minced
Freshly ground black pepper
1 cup white wine
6 ounces crab meat
1 bunch fresh arugula, roughly chopped

Steps:

  • Preheat oven to 400 degrees F.
  • To make the fettuccine, put flour on a cutting board, making a well in the center of the flour. Put the eggs, water, salt, basil, and 1 teaspoon oil in the well. Slowly incorporate flour to well until you have a sticky ball of dough. Add more flour, if necessary. Start the kneading process by using the balls of your hands-working the dough until all ingredients are mixed well and dough is dry to the touch.
  • Divide the pasta in 4 pieces, flatten each piece about 3 by 2 inches, or a thumb nail thickness. Set the pasta machine on the highest setting and put the dough through the machine 3 times a setting until you get to the second to lowest setting at which time you will put the fettuccine cutter on the pasta machine. Run your sheets through the cutter, making fettuccine. Place the cut fettuccine on a well-floured sheet and let it chill in the refrigerator.
  • To make the braised bok choy, in a heat resistant pan, put the bok choy, 2 tablespoons of olive oil, salt and freshly ground black pepper, to taste. Cover with tin foil and put in the oven for 30 minutes.
  • To make the sauce, start with a deep saute pan on mid-high heat. Add 3 tablespoons of olive oil, green tomatoes, and bacon ¿ saute until bacon is brown along with the garlic. Add the white wine and stir. Meanwhile, have a large pot of well-salted water on the boil, and cook the pasta for 2 minutes. Next add the braised bok choy, crabmeat, and pasta to the bacon and tomato mixture. Stir in fresh arugala and plate. If pasta seems dry, add a drizzle of olive oil.

Mahi-Mahi with Pineapple Glaze, Peppers and Coconut Rice image

Vegetable oil, for the pan
1 shallot, finely diced
1 teaspoon kosher salt
2 cups coconut milk
1 cup short-grain rice
Neutral oil, for the pan
3 cloves garlic, minced
1-inch piece ginger, grated
1 teaspoon sambal
Kosher salt
3 scallion ends, finely chopped
1 cup pineapple juice
1/2 cup soy sauce
1/4 cup brown sugar
2 tablespoons Dijon mustard
1 lime, zest and juice
Olive oil, for the pan
1/2 red bell pepper, thinly sliced
1/2 yellow bell pepper, thinly sliced
1/2 red onion, thinly sliced
1 teaspoon kosher salt
2 fillets mahi-mahi

Steps:

  • For the coconut rice: Heat the oil in a medium saucepot over medium heat. Add the shallots and salt and cook until translucent, about 2 minutes. Add the coconut milk and rice and bring to a boil. Reduce the heat to medium low and cover with a lid. Cook for about 15 minutes. Remove lid and fluff the rice.
  • For the pineapple glaze: Heat a medium saucepan over medium heat and add oil to coat. Add the garlic and ginger and cook until soft and fragrant, about 2 minutes. Be sure to stir often because the sugars will burn quickly! Then add the sambal and salt. Add the scallions and cook until soft, about 2 more minutes. Then, add the pineapple juice, soy sauce, brown sugar, Dijon mustard and lime juice and zest. Bring to a boil then reduce to a simmer. Cook until reduced by one-quarter and thick and glossy, about 10 minutes.
  • For the mahi-mahi and peppers: Heat a grill pan to medium high. Coat the grill pan in olive oil. Add the peppers and onions and cook until browned, slightly charred and beginning to soften. Move the peppers to the side of the grill pan. Add a bit more olive oil. Salt the mahi-mahi on both sides. Sear the fish on each side until golden brown, about 3 minutes per side.
  • Coat the mahi-mahi with the pineapple glaze using a pastry brush. Flip the fish and coat generously on the reverse side. Cook for an additional 2 minutes. Remove from the pan and serve with the coconut rice and grilled peppers. Aloha!

6 scallions
3 tablespoons packed brown sugar
2 1/2 tablespoons soy sauce
3 tablespoons fresh lemon juice
4 (6 ounce) skinless mahi mahi fillets
1/2 teaspoon salt
1 1/2 tablespoons vegetable oil

Steps:

  • Preheat oven to 200°F.
  • Cut white and pale green parts of scallions crosswise into 2-inch pieces, then thinly slice enough scallion greens to measure 3 tablespoons.
  • Stir together brown sugar, soy sauce, and lemon juice in a small bowl until sugar is dissolved.
  • Pat fish dry and sprinkle with salt. Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then cook fish on 1 side until browned, 3 to 4 minutes. Turn fish over and brown 1 minute. Add soy sauce mixture and simmer, covered, until fish is almost cooked through, about 3 minutes. Transfer fish with a slotted spatula to a heatproof platter and keep warm in oven. (Fish will cook through from residual heat.).
  • Add 2-inch scallion pieces and juices from fish platter to sauce and boil, stirring occasionally, until glaze is very thick and reduced to less than 1/4 cup, about 5 minutes. Spoon glaze over fish and sprinkle with scallion greens.

3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 teaspoon grated fresh ginger root
1 clove garlic, crushed or to taste
2 teaspoons olive oil
4 (6 ounce) mahi mahi fillets
salt and pepper to taste
1 tablespoon vegetable oil

Steps:

  • In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.
  • Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm.
  • Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish, and serve immediately.
