GREEN CHILE GUACAMOLE

Number Of Ingredients 9

3 ripe avocados, pit and skin removed
4 ounces diced green chiles
1 teaspoon ground cumin
1/4 teaspoon garlic powder
Kosher salt and fresh ground black pepper to taste
1/4 cup finely chopped red onion
1/2 of a jalapeño, deseeded and finely chopped
1/4 cup cilantro leaves, chopped
3 tablespoons fresh lime juice

Steps:

  • In a medium sized bowl mash the avocados until your desired consistency is reached.
  • Stir in the cumin, garlic powder, salt and pepper.
  • Add in the green chiles, red onion, jalapeño, cilantro and lime juice. Stir everything together until combined and taste for seasoning. Serve immediately or cover and refrigerate until ready to serve.

Green Chile Guacamole is spicy with green chile, tangy with lime, and kept fresh with cilantro and spices. This guacamole is a favorite snack on game day or any day of the week.

Number Of Ingredients 10

1 13-ounce bag Mission® Strips Tortilla Chips
4 medium-size ripe avocados
1/2 small red onion diced small, about 1/3 cup worth, plus more for topping
1/4 cup fresh cilantro leaves, chopped small, plus more for topping
1/2 cup roasted green chile, chopped small *
2 garlic cloves, finely minced
1 tablespoon fresh lime juice, about 1/2 large lime
1/2 teaspoon kosher salt, adjust to taste
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper, adjust to taste

Steps:

  • Peel and chop the avocados into 1/2" pieces. Lightly mash with a fork, leaving plenty of chunks. Add the onion, green chile, cilantro, lime juice, salt, and pepper. Stir to combine and taste.
  • Adjust the lime, salt, and pepper as needed. Sprinkle with additional onion and cilantro, if desired. Serve immediately with tortilla strips or cover tightly and refrigerate until ready to serve. Enjoy!

Number Of Ingredients 8

2 ripe CA avocados
1/2 cup chopped, roasted Hatch Green Chiles
1/4 small red onion, finely diced
2 large cloves garlic, finely minced
1 1/2 tsps chopped fresh cilantro
1/2 medium roma tomato, seeded and diced
1/2 tsp coarse sea salt
fresh lime juice (~2tbls or 1/2 a lime)

Steps:

  • Cut avocados in half, remove pit, and spoon avocado into a mixing bowl. Smash avocado until it reaches your desired consistency, a little chunky is best. Add in remaining ingredients and gently stir to combine.
  • Taste and adjust salt as needed.
  • Note: To store left over guacamole place the pit in the guacamole to help it stay fresher longer.

1/3 cup finely chopped tomatoes

Steps:

  • In a large bowl, combine 3 tablespoons cilantro, 2 tablespoons onion, peppers, garlic and salt; mash together with a fork. Stir in avocados; fold in tomatoes and remaining cilantro and onion. Serve immediately with chips.

1 (8 ounce) package cream cheese (such as Philadelphia®), softened
2 Roma tomatoes, diced
4 serrano peppers, finely chopped
3 jalapeno peppers, finely chopped
2 tablespoons finely chopped Hatch green chile peppers
3 hot yellow chile peppers, finely chopped
1 lime, juiced
1 teaspoon garlic powder, or more to taste
5 drops hot pepper sauce (such as Tabasco®)
salt to taste

Steps:

  • Pit and spoon avocados into a small bowl and add cream cheese. Mash together until well blended.
  • Add tomatoes and peppers to the mixture and mix well. Mix in lime juice, garlic powder, hot sauce, and salt. Chill for at least 20 minutes before serving.
