1 lb. package of ground turkey (Don't buy the extra lean)
1 small onion (diced fine)
1 package of taco seasoning.
1 can kidney beans (We love Bush's Beans)
rice

Steps:

  • Using a medium skillet, cook turkey and onion in olive oil for about 6-7 minutes or until turkey is cook through.
  • Lightly salt & pepper turkey as you cook.
  • Sprinkle turkey with taco seasoning and add water as per the instructions.
  • Stir in the beans.
  • Let simmer for a few minutes and serve over your favorite rice.

2 cups cooked rice (to yield this amount, you'll need approximately 2/3 cup of uncooked rice depending on the variety)
1 tablespoon olive oil
1/2 pound ground turkey
3 cloves garlic (minced)
1.5 tablespoons low sodium soy sauce
1 tablespoon ginger paste (or minced fresh ginger)
1 tablespoon chili paste
1 teaspoon sesame oil
1 teaspoon fish sauce
Sesame seeds
Chopped peanuts
Chili oil
Hot sauce
Sliced green onion
Sliced chili pepper

Steps:

  • Cook rice according to package instructions.
  • Meanwhile, to cook turkey, heat olive oil in a 10-inch or 12-inch cast-iron skillet over medium heat. Add the ground turkey and cook, breaking it into small pieces and stirring occasionally, until it's fully cooked through, about 8 to 10 minutes.
  • To cooked turkey, stir in garlic, soy sauce, ginger, chili paste, sesame oil and fish sauce. Cook for 1 to 2 minutes.
  • Divide the rice between two bowls, then top with the turkey mixture and garnish (if desired) to taste. Serve and enjoy!Note: To make things even more substantial, top with a fried egg and/or your favourite veggies.

My family was tired of the usual Chicken & Rice dish that I make so I came up with this one dish meal that's easy to throw together. They like this more than the Chicken & Rice. If you like more rice you can increase it by another 1/2 cup. You could even experiment using other vegetables i.e., frozen corn niblets, peas, green beans, etc.

1 lb ground turkey
1 teaspoon fennel seed (optional)
1/8-1/4 teaspoon Lawry's Seasoned Salt
1 cup regular long grain rice
1 stalk celery, diced
1 green pepper, diced
2 small carrots, diced
1 small onion, diced
1 (13 3/4 ounce) can chicken broth
vegetable oil cooking spray

Steps:

  • Sprinkle the seasoned salt and (if using) fennel seed over the ground turkey. Mix well.
  • Spray large skillet with vegetable spray and place turkey mixture in pan. Over medium-high heat cook and stir Turkey until browned; drain well. While the Turkey is draining add the vegetables to the hot pan and saute for about 5 minutes. Add the Turkey back into the pan and mix. Sprinkle rice over mixture and pour in Chicken broth. When broth comes to a boil reduce heat, cover and simmer for approx 20-30 minutes, stirring occasionally until liquid is absorbed. When the rice is cooked if there is still too much liquid in the pan remove cover, increase the heat and continue cooking until all liquid is absorbed.

1 cup basmati rice
Kosher salt
2 bell peppers (1 red, 1 yellow), cut into thick strips
1 large white onion, sliced into thick rings
3 tablespoons extra-virgin olive oil
Freshly ground pepper
1 1/2 pounds turkey cutlets (about 6)
1 tablespoon fajita seasoning
Juice of 1/2 lime
1 cup fresh cilantro
1 avocado, sliced
1/2 cup sour cream
1/2 cup pico de gallo or salsa

Steps:

  • Preheat a grill to high. Combine the rice, 12/3 cups water and a pinch of salt in a medium saucepan. Bring to a boil, then reduce the heat to low and stir. Cover and cook until the liquid is absorbed and the rice is tender, about 18 minutes. Let stand, covered, 5 minutes.
  • Meanwhile, put 1 bell pepper strip and 2 outer rings from 1 onion slice in a blender; set aside. Brush the remaining bell peppers and onion with 2 tablespoons olive oil; season with salt and pepper. Toss the turkey with the remaining 1 tablespoon olive oil and the fajita seasoning; season with salt and pepper.
  • Grill the peppers and onion, turning halfway through, until tender and charred in spots, about 10 minutes. Remove the vegetables to a large bowl; add the lime juice. Season with salt and pepper and toss. Grill the turkey until marked and cooked through, 2 to 3 minutes per side. Remove to a cutting board; slice into strips.
  • Puree the reserved bell pepper and onion with 1/4 cup water, the cilantro and 1/4 teaspoon salt. Fluff the rice with a fork and stir in the cilantro puree. Divide the rice among bowls; top with the turkey, vegetables, avocado, sour cream and pico de gallo.

1 teaspoon ground cumin
1/2 pound red-skinned potatoes, cut into 1/2-inch pieces

2 1/2 cups cooked white or brown rice

Steps:

  • Puree all but 3 tablespoons cilantro with 1/2 cup water, the jalapeno, almonds and 1/4 teaspoon salt in a blender until smooth.
  • Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the turkey and 1/2 teaspoon salt; cook, stirring and breaking up the meat with a wooden spoon, until browned, about 4 minutes.
  • Add the onion, garlic and cumin and cook, stirring occasionally, until softened, about 6 minutes. Stir in 1 1/2 cups water, the pureed cilantro mixture, the potatoes and kale. Cover and bring to a boil, then uncover and reduce the heat to medium. Simmer, stirring occasionally, until the potatoes are tender, about 15 minutes. Season with salt and serve over the rice. Top with the reserved cilantro.

3 Tablespoons olive oil (divided)
1 pound lean ground turkey
1 onion (diced)
2 cups long grain white rice (uncooked)
16 ounces salsa
15 ounces canned corn (undrained)
4 ounces canned green chilies (undrained)
15 ounces canned black beans (drained and rinsed)
1 ounce taco seasoning mix (1 packet)
2 cups chicken broth
1 cup shredded Mexican blend cheese
shredded lettuce
diced tomatoes
sour cream
diced avocado or guacamole
Fresh chopped cilantro
shredded cheese
tortilla strips

Steps:

  • Press the SAUTE button.
  • Once hot, pour in 2 Tablespoons of olive oil and add the ground turkey and onion. Cook for 5 minutes until onion starts to soften.
  • Add the rice and the remaining Tablespoon of oil and toast uncooked rice for 1 minute.
  • Dump in the salsa, canned corn, canned green chilies, black beans, and taco seasoning mix.
  • Pour the chicken broth on top and make sure all the rice is covered by liquid.
  • Lock the lid into place and turn the knob to sealing, not venting.
  • Press the MANUAL (or PRESSURE COOK) button and set timer for 8 minutes.
  • When done, do a quick release of the pressure by turning the knob to venting.
  • When pressure has been released completely, open the lid and fluff the rice and mix everything together.
  • Sprinkle the cheese on top of the ground turkey and rice mixture and let sit for a few minutes until it melts.
  • Serve in bowls and top with your taco favorite toppings.
