CHICKEN TACO CASSEROLE

1 tablespoon canola oil
2 pounds ground chicken
1/4 cup TAK's Tex-Mex Seasoning (or 2 tablespoons store-bought taco seasoning)
3 cups cooked brown rice
1 (26 ounce) can of black beans, rinsed and drained
1/3 cup store-bought Taco Sauce (such as Ortega Taco Sauce)
4 green onions (chopped, separated)
1 1/4 cup freshly grated Cheddar cheese (separated)
1 1/4 cup freshly grated Monterey Jack cheese (separated)
4 Roma tomatoes (seeded and diced)
1 tablespoon minced cilantro
2 tablespoons Mexican crema or sour cream (optional)

Steps:

  • Preheat the oven to 350° and have ready a greased, 9x13" casserole dish.
  • Add the Canola oil to a large sauté pan over medium-high heat, and allow it to come to temperature. Add the ground chicken, breaking it apart with a wooden spoon or spatula. Sprinkle TAK's Tex-Mex Spice Blend over the chicken, and sauté about 7 minutes, or until cooked through.
  • Transfer the cooked chicken to the casserole dish, and add in the rice, black beans, taco sauce, half of the chopped green onions, 1 cup of Cheddar and 1 cup of Monterey Jack. Mix to combine.
  • Top with the remaining Cheddar and Monterey Jack cheese, and cover with aluminum foil. Bake for 25 minutes covered. Remove the foil, and bake for 5 minutes more.
  • Scatter diced tomatoes, cilantro and remaining green onions across the top of the casserole. Drizzle with Mexican crema (or sour cream), if desired. Serve and enjoy.

1 Red Onion (diced)
32 Ounces Cauliflower Rice
1 Teaspoon Kosher Salt
1.2 Teaspoon Pepper
2 Lbs Ground Chicken
1/4 Cup Keto Taco Seasoning
1 14.5 ounce can diced tomatoes with green chile peppers, drained
1/2 Cup Water
8 Ounces Cream Cheese (cubed)
3 Cups Sharp Cheddar Cheese (shredded)

Steps:

  • Preheat oven to 400 F and prepare an 8x8 casserole dish with cooking spray.
  • Heat vegetable oil (1 tablespoon) in a large pan over medium heat.
  • Add diced red onions (1). Cook for 6 minutes, or until soft.
  • Add riced cauliflower (32 Ounces), salt (1 teaspoon) and pepper (1/2 teaspoon) and cook for about 5 minutes, just until it begins to soften.
  • Add veggies to prepare casserole dish in an even layer.
  • Cover with shredded cheddar cheese (1 cup).
  • Heat remaining tablespoon of vegetable oil in the same pan over medium heat.
  • Add ground chicken (2 Lbs) and break up using the back of a spoon. Cook until no longer pink.
  • Add diced tomatoes with green chile peppers (14.5 Ounces), water (1/2 cup) and taco seasoning (1/4 cup). Stir to combine and bring combo to a boil.
  • Reduce to a simmer and cook for 5-7 minutes, or until hardly any liquid is left.
  • Turn off heat and add cubed cream cheese (8 Ounces) - Stir until melted and fully combined.
  • Add chicken and veggie combo in an even layer to the casserole dish.
  • Cover with shredded cheddar (2 Cups ).
  • Bake in the oven for 20 minutes, or until the cheese has melted.
  • Allow to cool, serve with avocado, cilantro and enjoy!

2 cups low-sodium chicken broth
1/4 cup sour cream
1 cup diced dill havarti cheese (about 4 ounces)
1/4 cup grated parmesan cheese (about 1 ounce)

Steps:

  • Preheat the oven to 425 degrees F. Melt the butter in a large ovenproof skillet over medium heat. Add the garlic and about three-quarters of the scallions and cook, stirring occasionally, until soft, about 2 minutes. Add the broccoli, chicken, rice, tomato, 1 teaspoon salt, and pepper to taste; stir to combine.
  • Whisk the chicken broth and sour cream in a bowl, pour into the skillet and bring to a simmer. Stir in half each of the havarti and parmesan. Cover tightly with a lid or aluminum foil, transfer to the oven and bake until the rice is tender and most of the liquid is absorbed, about 20 minutes.

Steps:

  • Preheat the oven to 450 degrees F.

1 tbsp Extra Virgin Olive Oil
15 oz Black Beans
15 oz Canned Diced Tomatoes
4 oz Canned Green Chilis
1 tbsp Chili Powder
1 tbsp Cumin
2 tsp Oregano
1 tsp Salt
8 oz tomato sauce
1 tsp Chili Powder
1 tsp Cumin
1/2 tsp Salt
12 Corn Tortillas, 6"
3 Scallions (green onions)
12 oz Shredded Cheese (Cheddar or Taco Blend)
1/2 cup Sour Cream
1 Tomato, large
1/2 cup Fresh Cilantro, chopped (Optional)

Steps:

  • This entire casserole can be made on Sunday and then cooked in the oven for 30 minutes on Monday or Tuesday. Then reheat again on Wednesday or Thursday.
  • Thin Slice the scallions. Most will be used in the casserole, but save some of the greens for garnish.
  • Preheat a large skillet on high. Add the olive oil to coat bottom and then add the ground chicken. Break it up, but let it sit to sear and cook for about 5 minutes. Then mix so that all sides of the chicken cook for another 5 minutes.
  • Add diced tomatoes, green chilis, chili powder, cumin, and oregano.
  • Open the can of black beans and before adding them, smash them a bit in the can using a fork. Then add them to the chicken. Stir to combine and let simmer for 10 minutes to cook down.
  • Mix the tomato sauce with the Chili Powder, Cumin, and Salt.
  • There will be 3 layers of tortillas, so make sure that you have about 4 tortillas per layer. To start the first layer, cover the bottom of the casserole dish with 4 tortillas.
  • Next add 1/2 of the meat mixture on top of the tortillas. Sprinkle with 1/4 of the Scallions.
  • Then top with 1/3 of the shredded cheese. Repeat! Cover with tortillas, then meat mixture, scallions, and cheese.
  • Then the final layer of tortillas and then cover with tomato sauce and the remaining cheese and 1/4 of the scallions. The remaining scallions are for garnish.
  • Preheat the oven to 350 F degrees.
  • Bake the casserole covered for 30 minutes until hot all the way through. While the casserole is cooking, dice the tomato.
  • Plate, drizzle with sour cream, sprinkle with diced tomatoes, and garnish with scallions.

Steps:

  • Preheat oven to 400°F.
  • Prepare pasta dinner as directed on package, with butter or margarine and milk.
  • Place in a 2 quart casserole.
  • Heat olive oil in large frypan, add chopped onion and sliced mushrooms, sauté till onions are just turning brown, 5 minutes.
  • Add ground chicken, pepper and scramble fry with onions and mushrooms turning often until no longer pink, 5 to 8 minutes.
  • Add stewed tomatoes, simmer for 3 or 4 minutes.

  • Add chopped basil, turn several times to distribute through casserole.

1 (16 ounce) package rotini pasta, uncooked
2 tablespoons butter
3 tablespoons extra-virgin olive oil
2 cups broccoli florets, finely chopped

⅛ teaspoon chipotle chile powder
2 cups Cheddar cheese, shredded
¼ cup onion, finely diced

  • Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook until al dente, 7 to 10 minutes. Drain, cover, and set aside until needed.

  • Preheat the oven to 375 degrees F. Butter a 3-quart casserole dish.
  • Bring a large pot of generously salted water to a boil. Add the egg noodles and cook until al dente, about 4 minutes. Strain.

2 slice d med. onions
1 can (10 1/2 oz.) cream of chicken soup
1 can (10 1/2 oz.) cream of celery soup
2 cups water

Steps:

  • Cook ground chicken in large skillet until well browned and no trace of pink remains.
  • Layer potatoes and onions in a baking dish. Layer cooked ground chicken on top of onions. Mix together remaining ingredients. Spoon over casserole.
  • Bake, covered, in 300 degrees F oven for 1 hour (or until potatoes are tender).
