GRILLED TRIPLE-DECKER HOT DOG SANDWICH

Steps:
- Heat grill to 450 degrees F.
- Grill the hot dogs until nice and charred on both sides, 3 to 4 minutes per side. Butter the cut sides of the hoagie roll halves and grill, cut side-down, until charred, 1 to 2 minutes.
- Using a skewer or the tip of a small paring knife, poke about 10 holes in the bottom of a TK pan. Spray the entire pan with nonstick cooking spray (this is an important step). Now, layer in this order: one-third each of the charred hot dogs, Cheddar, provolone and salami. Repeat the layers 2 more times, making sure to finish with a layer of salami. Make sure that every layer is a snug fit, like you would a lasagna.
- Put the pan on the grill and close the lid. Grill until the cheese has melted, 8 to 10 minutes. Remove from the grill and let rest for about 5 minutes. Run a paring knife around the edge of the pan to loosen the loaf. Turn the pan out onto a cutting board, unveiling the hot dog loaf. Slice the loaf crosswise into 6 pieces, just as you would a meatloaf. To build your sandwich: start with your hot dog loaf on the bottom bun, then top with mustard, lettuce, tomato and a sprinkling of celery salt. Finish with the top bun.

- Spread both sides of each bread slice with 4 tablespoons mayonnaise. Toast bread in 2 batches over medium heat, about 5 minutes, turning once halfway through cooking. Transfer to cooling rack.
- Spread 4 slices of bread with remaining mayonnaise and mustard. To build sandwiches, arrange 1 lettuce leaf on 1 piece of mayo-mustard-spread toast. Top with turkey, then toast, then lettuce, bacon, and tomatoes. Season tomatoes with salt and pepper. Top with remaining slices of bread and secure each with 4 toothpicks. Cut each sandwich in quarters. Serve.

CLASSIC CLUB SANDWICH

- Toast the bread in a toaster, or under a broiler on both sides. Cut the lettuce leaves in half crosswise and form into 8 neat stacks.
- To make a double-decker club: On a clean work surface, arrange 3 bread slices in a row. Spread 1 tablespoon mayonnaise over 1 side of each bread slice. Place a lettuce stack on top of the first bread slice, top with 2 tomato slices, and season with salt and pepper, to taste. Place 2 slices bacon over the tomatoes (broken to fit neatly if necessary) and top with 1/8 of the turkey (without letting any hang over the sides). Season the turkey with salt and pepper, to taste. Repeat with the second bread slice. Carefully place the second layered bread slice on top of the first layered bread, turkey side-up. Cover with the third bread slice, mayonnaise side-down.
- Pin the sandwich's layers together by piercing them with 4 frill picks or cocktail swords through the top bread slice, in 4 places in a diamond-like pattern, all the way to the bottom bread slice. Repeat entire process with the remaining ingredients to form 3 more sandwiches.
- Using a serrated knife cut each sandwich, diagonally, into 4 triangular pieces (each piece should be secured in the center with a pick or sword). Serve with potato chips and pickles.

- 1. Buy or make home made flour tortillas.
- 2. You need 3 flour tortillas.
- 3. Spread one side of the first tortilla with butter (or margarine).
- 4. Spread the other side with mayonnaise. Put butter side down on the griddle.
- 5. Sprinkle with cheese.
- 6. Put on shaved turkey.
- 7. Add shaved ham.
- 8. Add shredded cheese.
- 9. Add shaved salami (or corned beef or pepperoni).
- 10. Put on another flour tortilla.
- 11. Add shredded cheese.
- 12. Add shaved turkey, ham and salami.
- 13. Add cheese, celery leaves, tomato, minced onion.
- 14. When it is all ready, add some cheese.
- 15. Put another flour tortilla (the 3rd one) with mayonnaise on one side and butter on the other... place butter side up. Grill until heated and browned.
- 16. Flip over carefully to grill the second side.
- 17. Peek at the inside and decide if you want to heat it longer or not.
- 18. Continue grilling until desired results are reached.
- 19. Cut with a pizza cutter into desired size triangles like you would do for a pizza.
- 20. Put your sandwiches onto a platter and serve! Yum!

- In a large skillet, cook the bacon over med heat until crisp; drain on paper towels.
- Pour off the fat from the skillet and heat the pan over med heat.
- Season the chicken with salt, pepper and cayenne, add to pan, partially cover and cook, turning once, until golden on both sides and jus cooked through about 10 minutes, let rest for 5 minutes, then thinly slice.
- Meanwhile using a food processor, puree the avocado with lemon juice.
- Transfer to a bowl, stir in the mayo, then season with salt and pepper.
- Spread 1 tbls avocado mixture on each slice of toast.
- Divide the chicken among 4 toast slices and top each with 1/4 of the bacon.
- Cover each stack with a toast slice, avocado side down.
- Spread more avocado on top, then layer each stack with some spinach, strawberries, red onion and one of the remaining toast slices.
- Cut each sandwich into quarters.

- Spread 8 slices of bread with Dijon mustard.
- Sprinkle with cilantro.
- Layer pickle slices and shredded pork on four of the slices.
- Top each sandwich with a plain slice of bread.

- Butter 1 side of 1 slice bread. Place the buttered side down on waxed paper.
- Spread 1 T. of the thousand island dressing on the bread.
- Place 1/2 of the swiss cheese on the dressing.
- Top with sauerkraut and 1/2 of the corned beef.
- Spread 1 T. thousand island dressing on both sides of the toast.
- Place on top of the corned beef.
