8 ounces extra-firm tofu
2 (8-ounce) boneless, skinless, chicken breasts
2 tablespoons peanut oil, plus more for brushing
Salt and freshly ground pepper
2 shallots, finely chopped
2 cloves garlic, finely chopped
1 tablespoon ancho chili powder
1/4 cup tamarind paste, reconstituted in 1/4 cup water
1/4 cup rice vinegar
2 tablespoons fish sauce
2 tablespoons brown sugar
1/4 cup creamy peanut butter
1 pound Thai rice noodles, soaked in hot water for 15 minutes and drained
1/4 cup thinly sliced green onion
1/4 cup chopped cilantro leaves
4 ounces bean sprouts
1/4 cup cashews, toasted and coarsely chopped
2 limes, halved and grilled

Steps:

  • Heat grill to high. Brush both sides of tofu and chicken with oil and season with salt and pepper. Grill the tofu on each side for 2 to 3 minutes or until slightly charred, remove, and cut into thin slices. Grill the chicken for 4 minutes per side or until slightly charred and just cooked through, remove, and cut into thin slices.
  • Meanwhile, heat 2 tablespoons of oil in a medium saucepan on the grates of the grill or side burner on the grill. Add the shallots and garlic and cook until soft. Add the ancho powder and cook for 10 seconds. Add the tamarind mixture, vinegar, fish sauce, brown sugar, and peanut butter and bring to a boil. Place the cooked noodles, tofu, and chicken in a large bowl. Pour the boiling sauce over the noodles and toss gently until until combined. Fold in the green onion, cilantro, and bean sprouts and top with the chopped nuts. Serve with grilled limes on the side.

I love Pad Thai but restaurant food is hard to digest. This tasted just as good as Pad Thai that we use to order at a restaurant in the neighborhood except it didn't hurt my stomach to eat it!

8 ounces rice noodles
2 teaspoons peanut oil
7 ounces firm tofu, sliced into thirds
1/4 cup low sodium soy sauce
1 tablespoon peanut butter
2 tablespoons sugar
2 teaspoons ketchup
2 tablespoons rice vinegar
2 carrots, shredded
6 green onions, minced
1 cup bean sprouts, rinsed
1/4 cup peanuts, chopped (optional)

Steps:

  • Preheat oven to 400°F Cut the tofu into thirds & lightly coat with 1 teaspoons peanut oil per tofu slice. Once done put tofu into oven until pieces are golden & sizzling. Once the tofu is done cut into small cubes.
  • Cook rice noodles according to package directions. Once the noodles have cooked cool off with cold water, drain, & set aside.
  • Shred carrots & dice green onions while noodles & tofu are cooking.
  • Mix together soy sauce, rice vinegar, sugar, ketchup & peanut butter. Set aside.
  • Heat 1 teaspoons oil in large wok. Add cooked noodles, green onions, bean sprouts, carrots & sauce mixture. Cook, stirring occasionally, until sauce thickens.
  • Add tofu pieces and heat through. Garnish with peanuts or serve on the side as an option.

2 (14 ounce) packages extra-firm tofu, drained
½ cup sherry vinegar
½ cup low-sodium soy sauce
⅓ cup olive oil
1 teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon cayenne pepper
½ teaspoon dried marjoram or thyme
¼ teaspoon black pepper

Steps:

  • Wrap tofu in a clean dish towel and weight it with something heavy such as a large can; leave it to drain for 30 minutes.
  • Meanwhile, mix together remaining ingredients in a bowl.
  • Cut each piece of tofu crosswise into 6 thick slices and put it all in a baking dish. Pour marinade over tofu, turning to coat, and chill, covered, turning occasionally, at least 30 minutes or up to 48 hours. Longer is better, but shorter is totally fine.
  • Preheat a gas grill on high heat (450 degrees F to 650 degrees F) 10 minutes, then reduce heat to medium (325 degrees F to 375 degrees F)--or do whatever the equivalent is if you're using charcoal. Oil grate.
  • Transfer tofu from marinade (letting excess drip off and reserving marinade) to grill with a spatula. Cover grill and cook tofu, turning once, until well browned but before grill marks get black, 10 to 15 minutes total. Transfer tofu to a platter and cover with foil to keep warm.
  • Bring reserved marinade to a boil in a saucepan and boil until it reduces to about 1 cup, about 2 minutes. Pour over tofu and serve hot, warm, or at room temperature.

150g dried flat rice noodles
4 tbsp sunflower oil
2 garlic cloves , crushed
1 red chilli , finely chopped
2 chicken breasts, sliced finely sliced
½ small pack coriander , leaves picked, and stalks finely chopped
60g spring onions , shredded (reserving some to serve)
2 tbsp chopped pickled turnip (optional)
50ml chicken stock
100g beansprouts
2 eggs
60g roasted unsalted peanuts , chopped
soy sauce , to serve
fresh red chilli , sliced, to serve (optional)
2 tbsp tamarind paste
2 tbsp fish sauce
1 tbsp light brown soft sugar
1 lime , half juiced, half cut into wedges to serve
½ tbsp siracha
pinch chilli powder (optional)

Steps:

  • Soak the noodles in warm water for about 20 mins or until al dente, then drain. Meanwhile, make the sauce by mixing together the tamarind paste, fish sauce, sugar, lime and siracha until smooth.
  • Heat half the oil in a frying pan or a wok over a medium heat. Add the garlic and chilli and fry for 30 seconds until fragrant. Tip in the chicken and cook for 5 mins until golden. Add the coriander stalks, spring onions and turnip (if using), and fry for 1 min. Add in the soaked noodles, 50ml of the chicken stock and the prepared sauce. Keep stir-frying the noodles until they're starting to dry, then add the sauce. Stir everything together and cook over a high heat for 3 mins until the noodles are just cooked. Add a splash more water if needed.
  • When the sauce has reduced, scatter over the beansprouts and fold them into the noodles. Push everything to one side of the pan, then pour in the rest of the oil on the empty side and crack in the eggs. Fry for 2 mins until the white is just set and beginning to crisp around the edges, then roughly scramble the runny yolks in with the whites. When the eggs have just set, combine with the noodles.
  • Scatter over half of the peanuts and quickly toss together. Divide between two plates with the remaining peanuts and spring onion, the lime wedges and soy sauce on the side.

1 cup carrot, shredded
1 garlic clove, peeled and minced
8 ounces extra firm tofu, drained and cut into 1/2-inch cubes
1 cup light coconut milk
2 cups romaine lettuce, shredded
1 cup fresh bean sprout
1 cup green onion, tops, sliced
1 cup fresh cilantro, chopped

Steps:

  • To prepare sauce, in a bowl, combine first 5 ingredients, stirring with a whisk.
  • To prepare noodles, heat oil in a large nonstick skillet over medium-high heat. Add mushrooms, carrot, and garlic; sauté 2 minutes.
  • Add sauce and tofu; cook 1 minute.
  • Stir in coconut milk; cook 2 minutes.
  • Stir in next 6 ingredients (lettuce through noodles); cook 1 minute.
  • Serve with lime wedges.
