GRILLED THREE-ONION SALAD
Three types of onions -- red, yellow, and cipollini -- are grilled, then tossed with honey walnuts and bitter arugula. The onions are allowed to steam after coming off the grill, which softens them to a silky texture.

Steps:
- Rub a baking sheet with butter; set aside. Heat remaining 2 tablespoons butter and honey in large skillet over medium heat. Add walnuts and cook, stirring often, until liquid has thickened and nuts are well coated and have become a dark amber. Pour walnuts onto prepared baking sheet, separate with wooden spoon; let cool.
- Heat grill or grill pan on medium-high heat. Place onions in a medium bowl. Drizzle with olive oil, and season with salt and pepper. Toss to combine. Place on grill, and cook until browned on both sides, turning occasionally. Transfer to bowl, cover with foil to steam until onions are soft, about 10 minutes.
- Arrange greens on a platter, and arrange separated onion rings over. Drizzle with dressing, sprinkle with walnuts, and serve.
GRILLED STEAK AND ONION SALAD
This delicious salad is hearty enough to be a meal.

- Preheat oven to 400 degrees. On a rimmed baking sheet, toss bread with 2 teaspoons oil and Parmesan, then season with salt and pepper. Bake until golden brown, 7 minutes.
- Heat a grill pan or cast-iron skillet over medium-high. Season steak with salt and pepper. Drizzle onions with 1 teaspoon oil and season with salt and pepper. Grill steak and onions until steak is medium-rare and onions are tender, 5 to 7 minutes, flipping once. Let steak rest 5 minutes before thinly slicing against the grain.
- Meanwhile, in a large bowl, whisk together mustard, vinegar, and 2 tablespoons oil. Add arugula and season with salt and pepper. Add onions, steak, and croutons and toss to combine. Serve immediately.

- Meanwhile, in a large bowl, whisk together lemon juice and remaining 3 tablespoons oil; season with salt and pepper. Add greens, and toss to coat. Serve topped with onion and cheese.

- Preheat grill to medium heat.
- Evenly cut the pineapple into 1/2-inch thick slices. Using a small 1-inch biscuit cutter, pierce a hole into middle of pineapple slices. Brush the pineapple and onion slices with glaze, place on the grill and brush again with glaze. Grill for 2 minutes and flip, grilling other side.
- Place a bed of spinach leaves on a serving platter and top with the pineapple and onion slices. Drizzle with Vinaigrette and serve.

GRILLED AVOCADO, TOMATO, RED ONION SALAD

- Preheat a grill over medium heat.
- Cover a large tray with tomato quarters, and set aside.
- Place avocado halves in a bowl and drizzle with olive oil. Place each half on a hot open grill for about 30 to 45 seconds. Remove and place on top of the tomatoes arranged on tray. Drizzle with olive oil again.
- In another bowl, cover the red onion slices with the juice from the lemon half and olive oil. Place onions in the empty avocado pit holes. Cover with the lemon/olive oil mix. Then, top with pesto, distributing generously on all sides. Sprinkle pine nuts and cheese on top, to taste.

- Preheat grill for medium heat.
- Peel outer layer off onions. Slice a small section off of one end of each onion, and make a small hole in the center. Fill the center of each onion with a bouillon cube and 2 tablespoons butter or margarine. Replace the top of the onion, and wrap in aluminum foil.
- Place onions on grill over indirect heat, and close the lid. Cook for 1 hour, or until tender. Remove the tops, and cut into bite size chunks. Place in a serving dish with all the juices from the foil.

- Heat grill.
- Slice onion into slightly larger than 1/4-inch slices and brush both sides of each slice with olive oil.
- Place onion on grill and cook 4-5 minutes per side or until brown and tender.
- Let onion cool and then chop.
- Place potatoes into boiling salted water for about 20-25 minutes or until just tender; drain.
- When cool enough to handle, peeled and cut into 3/4 inch pieces.
- In a large bowl, stir milk and vinegar together and let sit 1-2 minutes to thicken.
- Whisk in mayo, salt and pepper.
- Stir in onions.
- Add potatoes to bowl, stir and then add celery.
- Stir gently.
- Cover and refrigerate for several hours before serving.

Steps:
- peel onions, leaving stem ends intact.
- Cut shallow cross in root ends.
- In large bowl, stir together oil, lemon juice, vinegar and cayenne.
- Add onions, rolling to coat well.
- Let stand for 30 minutes, rolling onions, in mixture occasionally.
- With slotted spoon, remove onions, stir sugar, salt and plack pepper into marinade and set aside.
- Cook onions on greased grill over medium hot coals or on medium setting, turning every 5 minutes, for about 30 minutes or just until lightly charred all over and tender when pierced with knife.
- Let cool slightly, remove stems and charred outer layers.
- In food processor fitted with thin slicing blade or using very sharp knife, cut onions into very thin slices.
- Toss with reserved marinade.
- Cover and refrigerate for at least 4 hours or overnight.
- Just before serving, arrange onions on individual salad plates.
- Garnish with parsley, if using.
