JULIE'S BAKED OR GRILLED BLACK COD TERIYAKI

Julie's Baked or Grilled Black Cod Teriyaki image

Black cod is my favorite fish... a tender, white, non-fishy fish that goes wonderfully well with teriyaki sauce. If you've never had black cod, do yourself a favor and find some! It is also known as "sablefish." I can sometimes find it served in Japanese restaurants, and occasionally served smoked in Scandinavian restaurants. I usually purchase mine in Ballard (a Scandinavian Seattle neighborhood) markets or at Uwajimaya (Seattle Asian grocery) or Ranch 99 Markets (Tukwila Asian grocery).

Time 30m

Yield 2 serving(s)

Number Of Ingredients 5

2 black cod steaks
2 teaspoons melted butter
1/2 cup teriyaki marinade
2 cloves garlic, minced
black pepper

Steps:

  • Preheat oven to 350 degrees (if you're going to bake the steaks).
  • Mix together the melted butter, marinade, garlic, and a few dashes of pepper.
  • Pour the mixture over cod steaks in a shallow glass dish, and let marinate for at least 20 minutes.
  • To bake: bake in a casserole or baking dish in the marinade at 350 for about 20-30 minutes or until fish flakes easily.
  • To grill: cook on a grill pan on your stove, turning carefully once, until fish flakes easily, about 15 to 20 minutes, brushing occasionally with marinade. I've also done it using a Foreman grill, brushing occasionally with marinade, until it flaked easily; it can take anywhere between 10-15 minutes, depending on your Foreman.
  • Serve with steamed white rice, a little of the juices poured over.

GRILLED SALMON TERIYAKI WITH CUCUMBER SALAD

Grilled salmon teriyaki with cucumber salad image

Salmon fillets are cooked straight from frozen for convenience - the sticky glaze helps to keep the fish moist while it cooks

Provided by Barney Desmazery

Categories     Dinner

Time 30m

Number Of Ingredients 12

1 tbsp sunflower oil
5 tbsp soy sauce
5 tbsp mirin or dry sherry
1 tbsp golden caster sugar
1 piece fresh root ginger , peeled and finely grated
2 garlic cloves , crushed to a paste
4 frozen boneless, skinless salmon fillets
1 small cucumber
1 tbsp rice wine vinegar
1 tbsp soy sauce
½ tsp golden caster sugar
1 tbsp toasted sesame seeds

Steps:

  • Heat the grill to high and brush a sturdy baking tray with oil. In a large bowl, mix the soy, mirin, sugar, ginger and garlic together until the sugar has dissolved, then toss the frozen salmon in the soy mix until coated. Tip the remaining marinade into a small saucepan and bring to a simmer.
  • Place the tray about 4in away from the heat, then grill for 20 mins. Brush the fish every few mins with the simmering marinade until cooked through and glazed. If the fillets are thick, you may need to turn them on their sides so they cook evenly. Remove from the grill. Simmer the marinade until sticky, then pour it over the cooked salmon.
  • For the cucumber salad, use a swivel blade peeler to peel the cucumber into slices. Make the dressing by mixing the vinegar with the soy sauce, sugar and sesame seeds. Toss the cucumber with the dressing and serve with the salmon and boiled rice.

  • Mix the sake, mirin, soy sauce, and sugar in a pot. Heat just to the point where the sugar dissolves. Turn off the heat and let cool. Submerge the birds in the marinade -- breast side down -- for up to an hour.
  • Put the marinade in a small pot and boil it down until it gets syrupy. Alternatively, you can mix the corn starch with a little water and add that to the boiling sauce to thicken it. Either way, add lime juice to taste.
  • Get your grill nice and hot. Scrape down the grates and close the lid. Wet a paper towel with the vegetable oil and, using tongs, wipe down the grill grates. Paint the birds with sesame oil and put them breast side up on the grill, close the lid and cook over high heat for 4 minutes. Up this to 5-6 minutes for pigeon or squab.
  • Open the lid and paint the doves with the reduced marinade. Turn them on their sides and paint the exposed side. Grill over high heat (with the cover open) that way for another 1-2 minutes, or until the sides are nicely grilled. Repeat on the other side.

  • Put the cucumber, daikon and garlic in a heatproof bowl. In a small saucepan, combine 1/4 cup plus 2 tablespoons of the rice vinegar with the granulated sugar and 1 teaspoon of salt and heat just until the sugar and salt are dissolved. Pour the brine over the vegetables and gently squeeze the vegetables to soften them. Refrigerate until chilled, about 15 minutes.
  • Meanwhile, preheat the broiler and position a rack 6 inches from the heat. In the same saucepan, combine the brown sugar, soy sauce and the dissolved cornstarch with the remaining 3 tablespoons of rice vinegar and bring to a boil, whisking until the glaze is thickened, about 2 minutes.
  • Dip the cod in the teriyaki glaze and transfer to a foil-lined rimmed baking sheet. Broil the cod for 10 to 11 minutes, without turning, basting once or twice, until the fish is glazed and cooked through.
  • Transfer the cod to plates. Using a slotted spoon, transfer the sweet-and-sour cucumber salad to the plates. Drizzle any remaining teriyaki glaze over the fish and serve with rice.
