JUICY GRILLED CHEESEBURGERS
These quarter-pounders are lightened up with 90-percent lean beef and a mere half-ounce of Cheddar, and they're served on wholesome whole wheat English muffins.

- Heat a grill to medium-high direct heat and lightly oil the grates using a paper towel soaked in canola oil or nonstick grilling cooking spray.
- Spread a 16-inch-long piece of nonstick aluminum foil on a cutting board (or mist a piece of regular aluminum foil with nonstick cooking spray). Top with the onions, 1/4 teaspoon each salt and pepper and 1 tablespoon water. Bring two sides of the foil together, fold over twice to create a seal and then seal the remaining two ends. Put on the grill and cook for 12 minutes, flipping once. The onions should be tender with only a bit of charring. Carefully open the top of the foil to let all the steam out and continue to cook the onions, tossing, until browned and lightly charred, 3 minutes longer. Remove from the heat.
- While the onions cook, mix the ketchup and mustard together in a small bowl. Season with pepper and set aside.
- Lightly toast the English muffins on the grill and place one top and bottom on each of 4 plates. Spread some of the ketchup sauce on the bottom half of each muffin and top with a slice of tomato.
- Divide the beef into 4 patties about 4 inches in diameter and just under 1/2-inch thick. Sprinkle with a total of 1/2 teaspoon salt and 1/4 teaspoon pepper. Place the burgers on the grill. Cook until the edges of the burgers are browning, 3 to 5 minutes, and then flip. Brush the burgers with the remaining ketchup sauce and evenly top with the shredded cheese. Cover the burgers with the grill lid or a large heatproof bowl and continue to cook until the cheese has melted and the burgers are still a bit pink on the inside, about 3 minutes more.
- Put one burger on top of the assembled muffin bottom and top with some of the grilled onions and the top of the muffin. Serve with pickles if desired.

- Mix ground beef and taco seasoning together in a bowl. Set in the refrigerator for 30 minutes to let taco mix infuse into the beef.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Remove meat from the refrigerator and make 6 very thin patties. Place a slice of Cheddar cheese into the center of 3 patties. Place the remaining patties on top of the cheese patties and seal together by pinching the ends.

- Place ground beef in mixing bowl and combine with the breadcrumbs, egg, salt, pepper and red pepper, and chives.
- Divide into 4 sections, add the salsa and cilantro to each and shape making large circular patties. Cut in half. (to fit flour tortilla).

BACON CHEESEBURGER TACOS
Bacon Cheeseburger Tacos are made with cheeseburger wrapped in flour tortillas and topped with tomato, avocado, bacon, lettuce, pickles, grilled red onion, and a sriracha animal sauce. They are just as crazy delicious as you might imagine.

- Start by cooking the bacon. Place it on a parchment lined baking sheet and bake the bacon in the oven at 400 degrees for 10-12 minutes, until it reaches the level of crispness you desire.
- While the bacon is cooking, prepare the sriracha animal sauce. You just need to stir all the ingredients together. Then set aside.
- Next, slice the tomato, onion, and avocado. When slicing the tomatoes, slice them into large half round slices.
- Form 4-5 patties using the ground beef. The patties should be thin and about the size of your palm. Since burgers get fat in the middle as they cook I like to make the center of the burger a little thinner so when it fattens up when it cooks the burger are a consistent thickness. Note: I made 5 patties with 1 pound of ground beef. If you want slightly bigger burgers, make 4 quarter pounders.
- Once the bacon is ready it is go time! Heat a skillet or grill pan over high heat. Add just enough butter to coat the bottom of the pan. Sprinkle the burger patties with salt and pepper, and add them to the pan. Then add the slices of red onion and cook them alongside the burgers.
- Let the burgers cook for 2 minutes and then flip them. Flip the red onion too. Top the burgers with the cheese and cook for another 2 minutes. The burgers should the thin and they will cook very quickly.
- Now you need to assemble the tacos. I like to quickly heat up the tortillas first, I place them over a gas burner and one by one I heat them over a medium flame for 4 seconds a side.
- To assemble the tacos, first slice the burgers in half, and break the slices of bacon in half. Fill each tortilla with the lettuce, then a half round slice of tomato, some avocado, a burger (use both halves of one burger), some grilled onions, some pickles, and about a teaspoon of the animal sauce. Continue until all of the burgers are assembled, and then eat!
GRILLED CHEESE-STUFFED BURGERS
These individually wrapped burgers are great to take along to picnics, cookouts or camping trips. The cheese is already stuffed inside, so all you need are your buns and condiments.

- 1. Preheat a grill over high heat. Divide the meat into four 6-ounce balls. Press 4 small cubes of cheese into the center of each ball and flatten into a 1/2-inch-thick patty about 4 inches in diameter, making sure the cheese stays wrapped in the meat. Sprinkle both sides of the patties evenly with 1 teaspoon salt and 1/2 teaspoon pepper. Wrap each burger in a piece of nonstick aluminum foil, twisting any excess foil at each end so the burger is wrapped in a single layer of foil only. - 2. Grill the burgers for 5 minutes per side. Remove from the grill and carefully open up the foil packets, allowing the steam to escape. Place the opened foil packets back on the grill, add a spoonful of sauce to the top of each patty and continue to cook until the patty is cooked to at least medium to allow the cheese inside to fully melt, another 4 to 6 minutes.
- 3. On the bottom half of each bun, spread a bit of sauce and top with a lettuce leaf, onion slice and tomato slice. Top with a patty, another spoon of the remaining sauce and the top of the bun. Serve with chips or fries.
