VEGETARIAN BIBIMBAP

Vegetarian Bibimbap image

I created this recipe from looking at a few different ones online and choosing my favorite aspects of each. This is vegetarian but there are many bibimbap recipes with beef or chicken marinades, if you want to add beef or chicken to this dish.

Time 50m

Yield 3

Number Of Ingredients 14

2 tablespoons sesame oil
1 cup carrot matchsticks
1 cup zucchini matchsticks
½ (14 ounce) can bean sprouts, drained
6 ounces canned bamboo shoots, drained
1 (4.5 ounce) can sliced mushrooms, drained
⅛ teaspoon salt to taste
2 cups cooked and cooled rice
⅓ cup sliced green onions
2 tablespoons soy sauce
¼ teaspoon ground black pepper
1 tablespoon butter
3 eggs
3 teaspoons sweet red chili sauce, or to taste

Steps:

  • Heat sesame oil in a large skillet over medium heat; cook and stir carrot and zucchini in the hot oil until vegetables begin to soften, about 5 minutes. Stir in bean sprouts, bamboo shoots, and mushrooms. Cook and stir until carrots are tender, about 5 more minutes. Season to taste with salt and set vegetables aside.
  • Stir cooked rice, green onions, soy sauce, and black pepper in the same skillet until the rice is hot. In a separate skillet over medium heat, melt butter and gently fry eggs, turning once, until the yolks are still slightly runny but the egg whites are firm, about 3 minutes per egg.
  • To serve, divide hot cooked rice mixture between 3 serving bowls and top each bowl with 1/3 of the vegetable mixture and a fried egg. Serve sweet red chili sauce on the side for mixing into bibimbap.

Time 30m

Number Of Ingredients 14

1 red pepper (sliced - $0.90)
1 small zucchini (sliced - $0.19)
1 red onion (thickly sliced - $0.36)
1 ear of corn (- $0.99)
2 tablespoons neutral oil (divided - $0.24)
A sprinkling of salt (- $0.01)
A few grinds of pepper (- $0.03 )
1 teaspoon sesame oil (- $0.11)
5 cups (725 grams) cooked white rice (- $0.40)
1/3 cup (60 grams) vegan kimchi (- $0.90)
1 tomato (sliced - $0.37)
1 green onion (thinly sliced (optional) - $0.10)
A sprinkling of sesame seeds (optional - $0.03)
Sriracha (to taste (see note below) - $0.08)

Steps:

  • Heat a grill pan over medium-high heat (if you've got a bbq, use that - you're awesome!). Toss the pepper, zucchini, red onion and corn in 1 tablespoon of the neutral oil and sprinkle with salt and pepper. Grill, flipping from time to time, until soft and with grill marks. You may need to work in batches if your pan is small. Chop the corn into smaller pieces.
  • Crisping the rice is optional. If you would like to do it, day-old rice works best but I have also successfully fried rice with rice I've let cool for just one hour. Heat a medium-large pan over medium heat and add the remaining tablespoon of neutral oil and the sesame oil. Pile in the rice and pack it down into a big rice cake thing. Leave to fry, undisturbed, for 4 - 5 minutes. Lift up a bit with a spoon and check if the bottom is golden-brown and crispy.
  • Divide the rice between 4 bowls and top with the grilled veggies, kimchi, tomato, green onion, sesame seeds. Serve with sriracha.

BIBIMBAP (KOREAN RICE WITH MIXED VEGETABLES)

Bibimbap (Korean Rice With Mixed Vegetables) image

Along with kimchi, bibimbap takes its place among the favored foods in Korean cuisine. Literally meaning 'mixed rice,' it's a popular meal consisting of white rice topped with vegetables, beef, a whole egg, and gochujang (red chili pepper paste). For those who cannot handle the spiciness (like our children), you can substitute with soy sauce or Sriracha (rooster sauce) in place of it.

Time 1h

Yield 4

Number Of Ingredients 15

1 English cucumber, cut into matchsticks
¼ cup gochujang (Korean hot pepper paste)
1 bunch fresh spinach, cut into thin strips
1 tablespoon soy sauce
1 teaspoon olive oil
2 carrots, cut into matchsticks
1 clove garlic, minced
1 pinch red pepper flakes
1 pound thinly-sliced beef top round steak
1 teaspoon olive oil
4 large eggs
4 cups cooked white rice
4 teaspoons toasted sesame oil, divided
1 teaspoon sesame seeds
2 teaspoons gochujang (Korean hot pepper paste), divided

Steps:

  • Stir cucumber pieces with 1/4 cup gochujang paste in a bowl; set aside.
  • Bring about 2 cups of water to a boil in a large nonstick skillet and stir in spinach; cook until spinach is bright green and wilted, 2 to 3 minutes. Drain spinach and squeeze out as much moisture as possible; set spinach aside in a bowl and stir soy sauce into spinach.
  • Heat 1 teaspoon olive oil in large nonstick skillet and cook and stir carrots until softened, about 3 minutes; stir in garlic and cook just until fragrant, about 1 more minute. Stir in cucumber pieces with gochujang paste; sprinkle with red pepper flakes, and set the mixture aside in a bowl.
  • Brown beef in a clean nonstick skillet over medium heat, about 5 minutes per side, and set aside. In a separate nonstick skillet, heat 1 more teaspoon olive oil over medium-low heat and fry the eggs just on one side until yolks are runny but whites are firm, 2 to 4 minutes each.
  • To assemble the dish, divide cooked rice into 4 large serving bowls; top with spinach mixture, a few pieces of beef, and cucumber mixture. Place 1 egg atop each serving. Drizzle each bowl with 1 teaspoon of sesame oil, a sprinkle of sesame seeds, and a small amount of gochujang paste if desired.

MUSHROOM, POTATO AND GOAT CHEESE STRUDEL IN SWEET PEPPER SAUCE

Mushroom, Potato and Goat Cheese Strudel in Sweet Pepper Sauce image

Provided by Food Network

Yield 6 to 8 servings

Number Of Ingredients 24

1 1/2 cups warm water
750g bread flour
250g sugar
Melted butter
Pinch salt
1 pound Yukon gold potatoes, peeled and diced
1 onion, peeled and finely diced
2 tablespoons butter
1 1/2 pounds crimini mushrooms (or a mix of crimini, portobello, oyster and shiitake)
2 tablespoons white wine
2 teaspoons chopped fresh thyme
2 teaspoons chopped flat leaf parsley
1 teaspoon chopped fresh sage
1 cup goat cheese (or substitute with ricotta or cheddar)
Salt and pepper
1 tablespoon olive oil
1/2 onion, diced
3 bell peppers, diced (all 3 the same, either red, orange or yellow)
1 cup white wine
1 sprig fresh thyme
2 tablespoons heavy whipping cream
Salt and pepper
1/2 cup melted butter
1/2 cup plain bread crumbs

Steps:

  • For the Strudel Dough: In a mixing bowl with a paddle attachment, blend all ingredients until dough becomes stretchy and does not snap away from itself (10 to 15 minutes). Cover in plastic wrap and let relax for 1 hour. This can be made in advance and refrigerated but allow to return to room temperature before stretching.
  • For the Filling: Boil potatoes in salted water until cooked through. Drain, dice and set aside. In a large pan over medium heat, saute onions in butter until, almost translucent (5 minutes). Add mushrooms and continue sauteing fully cooked. Add wine and herbs and saute for an additional 2 minutes. Season with salt and pepper to taste. Place in a large bowl and allow to cool. Toss potatoes and goat cheese into mushroom mixture.
  • For the Sweet Pepper Sauce: In a medium saucepan, saute onions over medium heat for 3 minutes. Add peppers and saute until heated through. Add wine and thyme and simmer until peppers are soft, approximately 10 to 12 minutes. Remove thyme. Puree peppers with a hand blender or in a food processor. Strain. Season with salt and pepper. Add cream, heat to a simmer. Pour the sauce onto the plate and then place strudel on top.
  • To assemble Preheat oven to 350 degrees.
  • Place dough in the middle of a floured clean tablecloth. Press out as far as it can go. Then from underneath, start pulling and stretching the dough from the middle outward. Keep pulling the dough until it is almost translucent. If it tears, don't worry. Many layers will be folded. Stretch the dough out to about a 2.5 foot square. Brush entire dough (gently) with melted butter. Sprinkle with bread crumbs. Along one side of the dough, spread the filling, leaving a 3-inch overhang to fold over filling. Begin rolling the filling up in the dough, using the tablecloth to help you roll evenly. Place on a baking sheet. Bake for 1/2 hour. Serve with greens as a lunch or on its own as an appetizer with Chardonnay.

GRILLED SUMMER VEGETABLE BIBIMBAP

Grilled Summer Vegetable Bibimbap image

Flame-kissed vegetables-bell peppers, cabbage, mushrooms and zucchini-are the stars of this meat-free crispy rice bowl. They're basted with a sesame-soy-and-gochujang sauce until tender while cucumbers pickle in rice vinegar and sesame oil. Top with fried eggs, drizzle with more gochujang sauce and dinner is served.

Provided by Rick Martinez

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 18

1/2 cup vegetable oil, plus more for the grill grates
3 tablespoons gochujang
3 tablespoons soy sauce
3 tablespoons rice wine vinegar
2 tablespoons toasted sesame oil
2 tablespoons toasted sesame seeds, plus more for serving
1 tablespoon honey
3 garlic cloves, finely grated
1 medium Kirby cucumber, halved and thinly sliced
1/2 teaspoon sugar
Kosher salt
1 pound large mushrooms, such as cremini, portobello or shiitake (stems removed if using shiitake)
3 large red bell peppers, quartered
1/2 medium head green cabbage, cored and halved
1 large zucchini, cut on the bias into 1/2-inch slices
6 scallions, root ends trimmed
4 large eggs
6 cups cooked white rice (from 3 cups uncooked)

Steps:

  • Prepare a grill or grill pan for medium-high heat. Clean and oil the grill grates or grill pan.
  • Whisk together the gochujang, soy sauce, 1 tablespoon rice wine vinegar, 1 tablespoon sesame oil, 1 tablespoon sesame seeds, honey and half of the grated garlic in a medium bowl until combined. Reserve 3 tablespoons of the gochujang sauce for serving and set aside; the remaining sauce will be used to baste the vegetables while grilling.
  • Toss the cucumbers in a small bowl with the sugar and the remaining 2 tablespoons rice wine vinegar, 1 tablespoon sesame oil, 1 tablespoon sesame seeds and half of the grated garlic; season with salt. Set aside.
  • Grill the mushrooms, bell peppers, cabbage, zucchini and scallions on one side of the grill (reserving enough space for a skillet), turning and basting often with the gochujang sauce, until browned and tender, about 3 to 5 minutes per side. If using a grill pan, work in batches. Transfer to a cutting board and cut the cabbage, mushrooms and peppers into thin strips; transfer to a sheet tray, separating by individual vegetable if desired.
  • Meanwhile, prepare the eggs and crispy rice. Heat 4 tablespoons oil in a large grill-safe skillet (cast iron or stainless steel) on the other side of the grill and increase to high (or use the stove). Crack the eggs into the skillet, leaving space around each one, and cook until the whites are set and the edges are crisp, about 4 minutes; season with salt. Transfer to a plate.
  • Heat the remaining 4 tablespoons oil in the same skillet. Add the rice, patting it down into an even layer and breaking up any clumps, and fry, undisturbed, until the underside is golden brown and crispy, about 5 minutes; season with salt. Flip to cook the other side (it's OK if it breaks up on you) until crisp and light brown, about 3 minutes. Divide among serving plates. Top with the grilled vegetables, pickles and fried eggs. Drizzle with reserved 3 tablespoons gochujang sauce as desired.

1 cup finely chopped Italian parsley
1 garlic clove peeled
1 pound tri-colored fusilli pasta
1 1/2 tablespoons olive oil

Add the other tablespoon of vinegar and 2 more tablespoons of olive oil and beat until emulsified. Top the mixture with the remaining 2 tablespoons of olive oil. Stir in parsley. Add the garlic clove. Refrigerate until ready to use. Cook pasta per package instructions, drain, rinse with cold water until cool, add to bowl and toss with olive oil and garlic clove. Set aside. BIBIMBAP WITH GOCHUJANG-MARINATED BEEF

Bibimbap with Gochujang-Marinated Beef image

Bibimbap is a comforting and super-flavorful Korean rice bowl that is packed with individually cooked vegetables and proteins. Bibimbap means ''mixing into rice,'' and that is exactly how one eats this dish; choose which of the toppings offered you want to add to your bowl, then mix it in with a spicy sauce made with gochujang, a spicy fermented sauce. The version I offer here has beef and egg, plus several classic vegetables, all cooked in the same skillet.

Provided by Rick Martinez

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 18

3 tablespoons soy sauce
2 tablespoons gochujang (Korean hot pepper paste)
1 tablespoon honey or brown sugar
2 tablespoons rice vinegar
2 tablespoons toasted sesame oil
2 tablespoons toasted sesame seeds, plus more for serving
4 garlic cloves, finely grated
3/4 pound boneless ribeye, boneless beef short ribs, London broil or flank steak, thinly sliced
8 ounces leaf spinach (not baby spinach), rinsed and drained (see Cook's Note)
Kosher salt
1 medium Kirby cucumber, halved and thinly sliced
1/2 cup vegetable oil
8 ounces soybean sprouts, rinsed and drained
1 large carrot, cut into matchsticks
1 large red bell pepper, thinly sliced
4 large eggs, optional
6 cups cooked short-grain white rice for serving
3 scallions, thinly sliced

Steps:

  • Whisk the soy sauce, gochujang, honey, 1 tablespoon rice vinegar, 1 tablespoon sesame oil, 1 tablespoon sesame seeds and half of the garlic together in a medium bowl. Transfer 3 tablespoons of the soy marinade to a small bowl and set aside for serving.
  • Add the beef to the remaining marinade and toss to coat. Let sit at room temperature for about 30 minutes while you prepare the other ingredients. (The beef will absorb most of the marinade so there won't be a need to strain at the end.)
  • Meanwhile, stir the remaining 1 tablespoon sesame oil, remaining 1 tablespoon sesame seeds and remaining garlic together in a small bowl until combined. Fill a large pot two-thirds full of salted water and bring to a boil. Add the spinach and cook until just tender, 1 to 1 1/2 minutes. Drain, let cool, and squeeze the spinach dry. Coarsely chop the spinach and transfer it to a medium bowl. Toss with half of the sesame sauce and season with salt if desired. Set aside until ready to serve.
  • Toss the cucumber in a small bowl with the remaining 1 tablespoon vinegar and remaining sesame marinade; season with salt. Set aside.
  • Heat 1 tablespoon vegetable oil in a large nonstick skillet over high heat until the oil shimmers. Add the sprouts and season with salt. Cook the sprouts, tossing often, until translucent and crisp tender, about 2 minutes. Place in a mound on a serving platter.
  • Heat 1 tablespoon vegetable oil in the same skillet over high heat. Add the carrot, season with salt and cook, tossing often, until crisp-tender, 1 to 2 minutes. Place in a mound on the platter.
  • Heat 1 tablespoon vegetable oil in same skillet over high heat. Add the bell pepper, season with salt and cook, tossing often, until crisp-tender, 1 to 2 minutes. Place in a mound on the platter.
  • If making fried eggs, heat 3 tablespoons vegetable oil in same skillet over high heat. Crack the eggs into the skillet, leaving space around each one, and cook until the whites are set and the edges are crisp, about 3 minutes. Season with salt; transfer to a plate.
  • Working in 2 batches, heat 1 tablespoon vegetable oil in same skillet over high and cook the marinated beef, turning once, until browned on both sides, 2 to 3 minutes per batch, adding another tablespoon of oil to the skillet between batches. Transfer each batch to the platter. Add the cucumbers to the platter.
  • Divide the rice among 4 bowls. Sprinkle with sesame seeds and scallions. Serve the platter of ingredients for everyone to compose their own bowls. Pass the reserved soy marinade.
