PIMENTO CHEESE STUFFED BURGERS



Pimento Cheese Stuffed Burgers image

8 ounces extra-sharp yellow Cheddar, shredded
4 ounces white Cheddar (preferably Vermont Cheddar), shredded
8 ounces cream cheese, softened
4 ounces diced pimentos, drained and juice reserved
3 tablespoons mayonnaise
1 tablespoon finely chopped fresh chives
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
1/2 cup mayonnaise
A few dashes hot sauce
Dash Worcestershire
Pinch paprika
Kosher salt and freshly ground black pepper
1 pound 80/20 ground beef
1 pound ground pork
2 tablespoons plain breadcrumbs
2 tablespoons Worcestershire sauce
1 large egg, lightly beaten
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Vegetable oil, for oiling grill grates
4 hamburger buns, buttered and toasted
For serving: lettuce, sliced tomato, pickles, sliced red onion

Steps:

  • For the pimento cheese: Add the Cheddars, cream cheese, pimentos and mayo to a bowl and mix together. Add the chives, garlic powder, cayenne, smoked paprika and salt and pepper and mix until thoroughly combined.
  • Place the cheese mixture on a sheet of plastic wrap and form into a log. Freeze for a few minutes or refrigerate up to overnight.
  • For the sauce: Mix together the mayonnaise, hot sauce, Worcestershire, paprika and 1 tablespoon reserved pimento juice in a medium bowl. Season with salt and pepper.
  • For the burgers: Preheat a grill to medium heat.
  • Mix the meats, breadcrumbs, Worcestershire, egg, salt and pepper together in a bowl with your hands until completely combined. Divide the meat into 8 portions and shape each into large thin patties. Slice four 1/2-inch slices off the pimento cheese log (reserve the rest for another use...snacking!). Place a pimento cheese slice on four of the patties and then top them with the remaining four patties, sealing the sides of the patties to enclose the cheese. (See Cook's Note.)
  • Lightly oil the grill grates. Add the patties to the hot grill and cook until they reach an internal temperature of 160 degrees F, about 4 minutes per side.
  • Spread the sauce on the buttered buns. Top each with lettuce, tomato, pickles, onions and a patty and close the burgers. Eat with lots of napkins.

Vegetable oil, for the grill grates and buns
6 slices American or Cheddar cheese
6 seeded hamburger buns, split
Lettuce leaves, tomato slices, red onion slices, ketchup and mustard, for serving

Steps:

  • Prepare a grill for medium heat. Divide the ground beef into 6 even pieces and shape each into a 1-inch-thick patty. Press in the center of each patty so it is slightly thinner than the edges. Sprinkle generously on both sides with salt and pepper. Lightly oil the grill grates.
  • Grill the burgers, flipping once, until well browned and medium rare, 6 to 7 minutes per side, topping with a slice of cheese in the last few minutes of grilling. Lightly brush the buns with oil and grill until lightly toasted. Put the burgers on the bottom buns and top with the lettuce, tomato, onions and top buns. Serve with ketchup and mustard on the side.

These individually wrapped burgers are great to take along to picnics, cookouts or camping trips. The cheese is already stuffed inside, so all you need are your buns and condiments.

1 1/2 pounds ground beef
4 ounces Cheddar, cut into 16 small cubes
Kosher salt and coarsely ground black pepper
1/3 cup ketchup
2 tablespoons Worcestershire sauce
4 seeded hamburger buns, split and toasted
4 small leaves romaine lettuce
4 slices sweet onion, such as Vidalia or Maui
1 small vine-ripened tomato, sliced into 4 rounds
Potato chips or French fries, for serving

Steps:

  • 1. Preheat a grill over high heat. Divide the meat into four 6-ounce balls. Press 4 small cubes of cheese into the center of each ball and flatten into a 1/2-inch-thick patty about 4 inches in diameter, making sure the cheese stays wrapped in the meat. Sprinkle both sides of the patties evenly with 1 teaspoon salt and 1/2 teaspoon pepper. Wrap each burger in a piece of nonstick aluminum foil, twisting any excess foil at each end so the burger is wrapped in a single layer of foil only. Mix the ketchup and Worcestershire together in a small bowl.
  • 2. Grill the burgers for 5 minutes per side. Remove from the grill and carefully open up the foil packets, allowing the steam to escape. Place the opened foil packets back on the grill, add a spoonful of sauce to the top of each patty and continue to cook until the patty is cooked to at least medium to allow the cheese inside to fully melt, another 4 to 6 minutes.
  • 3. On the bottom half of each bun, spread a bit of sauce and top with a lettuce leaf, onion slice and tomato slice. Top with a patty, another spoon of the remaining sauce and the top of the bun. Serve with chips or fries.

4 slices country white bread
4 slices American cheese

Steps:

  • Spread just enough butter to cover both sides of each slice of bread.
  • In a large nonstick pan set over medium heat, add the bread slices and cook until they're an even golden brown on the first side, about 2 minutes. Flip 2 of the slices over and top each with 2 slices of the cheese. Place the other 2 slices of bread on top, toasted-side down, forming 2 sandwiches. Continue to cook the sandwiches until the bottoms are golden brown, about 2 minutes. Flip and cook the remaining side for an additional 2 minutes.

Steps:

  • In a large bowl, combine beef, Worcestershire sauce, garlic powder, salt, pepper and liquid smoke if desired, mixing lightly but thoroughly. Shape into four 4-in. square patties., In a large nonstick skillet, cook burgers in oil over medium heat until a thermometer reads 160°, 4-5 minutes on each side. Remove and keep warm., In the same skillet, heat 1 tablespoon butter over medium-high heat. Add onion; cook and stir until tender, 6-8 minutes. Remove and keep warm. Place cheese on 8 bread slices; top with remaining bread. Spread outsides of sandwiches with remaining 4 tablespoons butter. , In the same skillet, toast sandwiches over medium heat until golden brown and cheese is melted, 1-2 minutes on each side. These were always on a table at many of our family gatherings. It is the American version of the Calzone. A soft yeast roll stuffed with a delicious mixture of ground beef and cheese. I found this recipe in Taste of Home and it brought back good memories of a stuffed meat pie. Prep time does not include dough rising.

2 packages active dry yeast
3/4 cup warm milk, 110 to 115 degrees f
1/2 cup warm water (same temperature)
1/4 cup sugar
1/4 cup shortening
1 egg
1 teaspoon salt or 1 teaspoon seasoning salt
3 1/2-4 cups all-purpose flour
1 1/2 cups ground beef
1/4 cup chopped onion
1 (8 ounce) can tomato sauce
8 slices cheese, quartered (American or cheddar)

Steps:

  • In a mixing bowl, dissolve yeast in warm water.
  • Let set for 5-10 minutes.
  • Add milk, sugar, shortening, egg, salt, and 2 cups of flour.
  • Stir in remaining flour until a soft dough forms.
  • Turn dough on a floured surface and knead for about 5 minutes.
  • Place in a greased bowl, turning to distribute grease.
  • Put dough in a warm place.
  • Cover first with plastic wrap and then a towel.
  • Let set until dough doubles@ 1 hour.
  • While dough is resting cook beef mixture.
  • Cook beef and onion until beef is browned.
  • Drain and stir in tomato sauce.
  • Set aside.
  • Remove dough and punch down.
  • Divide into 16 pieces.
  • On a floured surface roll out dough into a five inch circles.
  • Put 2 pieces of cheese on cirlces and top with 3 Tbl.

  • Fold dough over to make a half circle and pinch edges together to seal.
  • Place on a greased baking sheet.
  • Cover and let rise in a warm place about 30 minutes.
  • Bake at 400 °F for 8-12 minutes or until golden brown.
