Easy grilled steak fajitas. Very delicious! You can add sour cream, tomatoes, or anything you like if you want to.

1 (1 1/4 pound) flank steak
1 tablespoon salt, divided
1 tablespoon ground black pepper, divided
2 limes
½ teaspoon chili powder
1 large green bell pepper, cut into strips
1 large red onion, cut into strips
1 pinch salt and ground black pepper to taste
1 (15 ounce) can black beans, rinsed and drained
1 serving olive oil cooking spray
1 (8 ounce) package shredded Mexican cheese blend
1 (10 ounce) package flour tortillas

Steps:

  • Coat both sides of the flank steak with 1 tablespoon each salt and pepper, pressing into the steak. Place in a large freezer bag. Cut both limes in half and squeeze juice into the bag; add chili powder. Make sure all is mixed well and remove the air from the bag. Place in a refrigerator and marinate for about 3 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Season bell pepper and red onion with salt and pepper. Place in a grill pan and set aside.
  • Put black beans in a small pot on the stove over medium heat to heat through.
  • Cook steak on the preheated grill until browned on one side, 5 to 7 minutes. Spray vegetables with cooking spray and place them on the grill. Cook until vegetables begin to caramelize, turning often so they don't burn, and steak is beginning to firm and is hot and slightly pink in the center, 5 to 7 minutes. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C) for medium doneness. Remove steak and vegetables from the grill.
  • Slice steak into thin strips. Place beans, steak, vegetables, and Mexican cheese onto the tortillas and serve.

1 lb skirt steak
2 tablespoons olive oil
salt, to taste
pepper, to taste
1 teaspoon chili powder
1 teaspoon cumin
1 onion, sliced
4 cloves garlic, sliced
3 bell peppers, sliced
1 jalapeño pepper, sliced
1 tablespoon butter
4 large tortillas
2 cups mexican blend cheese
guacamole
sour cream
salsa

Steps:

  • Season skirt steak with olive oil, salt, pepper, chili powder, and cumin.
  • Cook on high heat for roughly 3 minutes each side, for medium-rare.
  • Let the steak rest for 10 minutes.
  • While the steak is resting, sauté onion and garlic until slightly translucent. Add bell peppers, jalapeño, salt, and pepper, cook slightly.
  • Slice the steak into strips.
  • Mix the steak into the pepper mix. Remove from heat and set aside.
  • In a clean pan, melt butter. Lay the tortilla on the buttered pan, add cheese, fajita mixture, more cheese, then top with another tortilla and pat it down.
  • Flip the quesadilla over and cook the other side until it's golden.
  • Remove from pan and cut into quarters or eighths. Repeat these steps with the remaining tortillas.
  • Serve immediately with sour cream, salsa, and guacamole.
  • Enjoy!

Make a double batch of steak taco meat with my homemade sauce for both steak tacos and these steak fajita quesadillas.

14 oz beef shaved steak
4 tbsp butter (divided (or use vegetable oil instead))
2 cloves garlic
2 tbsp chili powder
2 tsp sugar
1 tsp smoked paprika
1/2 tsp red pepper flakes (add more for more spice)
1/2 tsp salt
1/3 cup light beer
1/2 cup sweet onion (sliced)
1 cup red and yellow bell peppers (sliced)
2 cups shredded cheese (Cheddar or Monterey Jack)
12 slices nacho jalapeño peppers
4 large flour tortillas

Steps:

  • In a large, non-stick skillet over medium - high heat, melt one tablespoon of the butter. Add the shaved steak and cook, stirring often, until no longer pink. Remove the steak from the pan, leaving behind the juices.
  • Over medium heat, add a second tablespoon of butter and melt. Add the garlic and cook, stirring often, until fragrant, about one minute.
  • Add the tomato paste, chili powder, sugar, smoked paprika, red pepper flakes and salt. Cook, stirring often, for an additional minute.
  • Stir in the beer and cook for a couple of minutes until smooth. Return the steak to the pan with the sauce and stir to combine and cook for a few minutes until heated through.
  • Remove the steak for the pan, leaving the juices behind. Add the onions and peppers. Cook over medium heat, stirring often, until they are softened, about 6 - 8 minutes.
  • Remove the peppers and onions. Add a bit of butter to the skillet and place a flour tortilla in the skillet on top of the melted butter. Layer half the tortilla with cheese, steak, peppers and onions and sliced jalapeños. Fold the tortilla in half. Grill on both sides until cheese is melted. Repeat with all four tortillas.

Vegetable oil, for grilling
3 cloves garlic, thinly sliced
1 large onion, thinly sliced
1 poblano pepper, seeded and thinly sliced
1 red bell pepper, seeded and thinly sliced
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
12 corn or small flour tortillas
1 1/2 pounds skirt steak, cut into four 5-to-6-inch pieces
1 tablespoon fresh lime juice, plus wedges for serving
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 cup fresh cilantro leaves, coarsely chopped, plus whole leaves for serving
Sour cream, for serving
Pickled jalapenos, for serving

Steps:

  • Preheat a grill over medium-high heat and lightly oil the grates with vegetable oil. Toss the garlic, onions, poblanos and bell peppers with the olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper and spread onto a 20-inch-long piece of heavy-duty aluminum foil. Bring the 2 sides together and fold over twice to seal. Bring the ends of the foil in and up and seal. Set aside.
  • Stack the tortillas and wrap in a piece of heavy-duty aluminum foil. Set aside.
  • Toss the pieces of skirt steak with the lime juice in a medium bowl and then sprinkle with the cumin, coriander, 1 teaspoon salt and 1/2 teaspoon pepper.
  • Place the steak and the vegetable packet on the grill. Cook the steak, flipping once, until the meat is cooked to medium, 7 to 10 minutes depending on the thickness. Cook the vegetable packet, flipping over once, until the vegetables are soft and lightly charred, about 12 minutes.
  • Transfer the steak to a cutting board to rest for 5 minutes. While the steak is resting, place the tortilla packet on the grill and cook, flipping once, until just warmed and pliable, 4 to 5 minutes.
  • Thinly slice the steak and place on a large platter. Open the vegetable foil packet (being careful of steam), toss with the chopped cilantro and place next to the steak on the serving platter. Place the lime wedges, whole cilantro leaves, sour cream and pickled jalapenos on the side for topping the fajitas. Serve with the warm tortillas.

1/2 cup Lawry's Santa Fe Chili Marinade
1 pound Top Sirloin boneless steak
1 thinly sliced green bell pepper
1/2 cup thinly sliced red onion pepper
4 tablespoons softened unsalted butter
4 six inch flour tortillas
2 cups Monterey Jack Cheese (shredded)

Steps:

  • Place grill pan over medium heat.
  • Place marinade and steak into a large zip top bag. Let sit in marinade for 30 minutes.
  • When ready, spray grill pan heavily with cooking spray and grill steak 6 minutes each side until cooked to your liking. 6 minutes is about medium rareness.
  • Remove steak and cover lightly with foil and let sit for 10 minutes. Slice into thin strips.
  • Place bell peppers and onion into grill pan and grill until softened, about 5-7 minutes. Remove.
  • Place a large non stick skillet over medium heat. Butter one side of each tortilla. Place a tortilla into hot skillet buttered side down and layer with cheese, steak strips, bell pepper and onion strips. Top with more cheese then place another tortilla on top, buttered side facing up.
  • Let cook until golden brown on each side and cheese is melted. Remove and continue cooking second quesadilla. Cut each quesadilla in half and serve.

I came up with this one night when I didn't know what to cook. I had leftover steak in the fridge, so I decided to get creative. These came out wonderful! The measurements are approximations, so feel free to change them according to your tastes. Serve with salsa, guacamole, and sour cream.

2 tablespoons vegetable oil, divided
½ onion, sliced
½ green bell pepper, sliced
salt to taste
4 flour tortillas
½ pound cooked steak, cut into 1/4-inch thick pieces
1 cup shredded Mexican cheese blend

Steps:

  • Heat 2 teaspoons oil in a 10-inch skillet over medium heat; cook and stir onion and green bell pepper in the hot oil until onions are softened, 5 to 10 minutes. Season mixture with salt and transfer to a bowl.
  • Brush 1 side of each tortilla with remaining oil. Place 1 tortilla, oil-side down, in the same skillet; sprinkle with 1/2 the steak, 1/2 the onion mixture, and 1/2 the Mexican cheese mixture. Place a second tortilla, oil-side up, onto cheese layer, pressing down with a spatula to seal.

A delicious and fast crowd pleaser with a south of the border flavor that will have you spending time with your family instead of slaving over a hot stove for hours.

1 lb flank steaks or 1 lb chicken breast, marinated
chopped garlic (in a jar is easiest)
2 tablespoons cooking oil
1 lime
3 teaspoons Worcestershire sauce
3 teaspoons liquid smoke (mesquite flavor my favorite)
1 large white onion
2 large green bell peppers
2 cups grated cheddar cheese (both is better) or 2 cups grated monterey jack cheese (both is better)
flour tortilla
guacamole (recommended) (optional)
salsa (recommended) (optional)
salt and pepper

Steps:

  • Cut flank steak into strips 1/4-inch wide and 3 inches long and marinate in Worcestershire sauce, liquid smoke, juice of 1 lime and garlic for 20 minutes.
  • (Note: boneless skinless chicken breasts should be "fileted" in half before cutting into 1/4x3-inch strips).
  • While meat is marinating, cut onion and bell pepper into 1/4-inch wide strips and heat in non-stick skillet with oil until they begin to sweat (don't let them become too soft).
  • Remove them to a paper plate to drain.
  • Drain meat and brown in same skillet until done.
  • Remove to paper plate to drain.
  • Wipe out the skillet so it is dry and begin to reheat it over a medium heat.
  • Take one tortilla and put a small amount of grated cheese, 1/4 of the meat (or amount to suit), onion and bell pepper to suit and cover with another small amount of grated cheese and top with a tortilla.
  • Carefully put "tortilla sandwich" in the heated dry skillet and cook until cheese melts (about 60-90-120 seconds). Flip and cook on other side same amount of time.
  • Tortilla will take on a lovely "tanned" appearance and become just slightly crispy.
  • This dinner sounds involved but is actually quite simple and very quick.
  • Kids and adults both will love it served with iced tea, pico de gallo, guacamole and salsa.
