1/4 cup olive oil, plus more for the skillet
3 tablespoons soy sauce
2 tablespoons sesame oil
1 tablespoon minced ginger
1 tablespoon maple syrup
1 tablespoon Chinese mustard
1 tablespoon sriracha
2 cloves garlic, minced
4 skin-on salmon fillets
1 bunch scallions, chopped, for topping

Steps:

  • Combine the olive oil, soy sauce, sesame oil, ginger, maple syrup, Chinese mustard, sriracha and garlic in a large bowl. Pour one-third into a small bowl and reserve. Add the salmon fillets to the large bowl. Marinate, covered, in the refrigerator for 30 minutes.
  • Heat a large nonstick skillet over medium-high heat. Add a drizzle of olive oil to coat the skillet. Add the salmon skin-side down and cook until crispy, about 5 minutes. Baste the flesh side with the reserved marinade. Flip and cook until the salmon is cooked through and the flesh side is golden brown, an additional 3 to 4 minutes. Top with the scallions.

2 sticks of fresh lemongrass
1 bunch of fresh coriander, (30g)
5cm piece of fresh ginger
4 cloves of garlic
½ x small bottle of low-salt dark soy sauce
1 large salmon fillet, (about 1kg), ask your fishmonger, scaled and pin-boned, from sustainable sources
4 tablespoons runny honey
2 red chillies
4 spring onions
2 limes

Steps:

  • Bash up your lemongrass. Pick the coriander leaves and finely slice the stalks. Peel and finely grate the ginger and garlic.
  • Mix the lemongrass, coriander stalks, ginger and garlic with the soy sauce, then rub all over the salmon fillet. Leave it to marinate for an hour or so, either in a plastic bag or on a tray covered with clingfilm.
  • Preheat your grill to its highest setting. When you're ready to cook the salmon, remove it from the marinade, brush with the honey and grill for 10 minutes.
  • Deseed the chillies and finely slice with the spring onions.
  • Fork up the cooked salmon a little so everyone can see the lovely, dark, sticky outside and the juicy, pink fish underneath.
  • Sprinkle the chillies and spring onions over the salmon with the reserved coriander leaves. Squeeze over the lime.

1 cup soy sauce
1 cup muscovado (dark brown) sugar
1 (5 inch) piece of fresh ginger root, peeled and minced
¼ cup olive oil
2 cloves garlic, smashed
1 (3 pound) whole salmon fillet with skin
1 untreated cedar plank

Steps:

  • Whisk together the soy sauce, muscovado sugar, minced ginger, olive oil, and garlic in a bowl, and pour into a resealable plastic zipper bag. Add the salmon fillet, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator overnight or up to 2 days.
  • About 1/2 hour before grilling, soak cedar plank in water.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the salmon from the marinade, and shake off excess. Discard the remaining marinade. Place the salmon, skin side down, onto the cedar plank.

1 Tbsp olive oil

  • Mix the butter, chives, ginger, lemon juice, and soy sauce. Set aside. Preheat a grill or grill pan. Season the salmon with salt and pepper and rub with the oil. Wipe the grill grates clean and rub with a paper towel dipped in oil. Add the salmon skin side down and cook for 4 to 5 minutes, until the skin is lightly charred and crisp. 1/3 cup soy sauce
1/2 lime, juice of

1 tablespoon rice wine vinegar
1 tablespoon honey

1 lb linguine (can use any long pasta)

1/2 red bell pepper, thinly sliced
1/4 lb sugar snap pea
1/2 cup carrot, shredded

3 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
2 cloves garlic (minced (about 2 teaspoons))
2 teaspoons grated fresh ginger
1 teaspoon honey
1/2 teaspoon garlic-chili paste (sriracha, or 1/4 teaspoon red pepper flakes)
1 pound skin-on salmon fillet* (at room temperature, cut into 3-4 portions)
2 teaspoons extra-virgin olive oil
Chopped green onions (for serving)
Toasted sesame seeds (for serving)

Steps:

  • Place a rack in the center of your oven and preheat to 425 degrees F. Place a large cast-iron skillet or other sturdy, ovenproof skillet on a burner set to high and heat for at least 10 minutes. You want the pan screaming hot or the salmon will stick to it.
  • In a small saucepan, stir together the soy sauce, rice vinegar, garlic, and ginger. Bring to a simmer over medium high, then remove from heat and stir in the honey and chili paste. Remove a few spoonfuls of the cooked glaze in a separate bowl for serving.
  • Drizzle the salmon with the olive oil and brush so that it is evenly coated. Place the salmon skin-side up on the hot skillet. Let cook for about 3 minutes, totally undisturbed, until the salmon forms a nice crust. When the salmon turns opaque on the sides and starts to turn opaque on top, use a flexible spatula to flip the salmon so that it is skin-side down. Brush or spoon the remaining glaze in the saucepan all over the top. One 14-ounce block extra-firm tofu, drained and sliced into eight 1/2-inch-thick steaks
Kosher salt and freshly ground black pepper

2 tablespoons light brown sugar

Steps:

  • Put the tofu steaks on a paper towel-lined rimmed baking sheet and top with more paper towels, pressing gently to remove excess moisture. Remove the paper towels and towel and sprinkle the tofu with salt and pepper on both sides.
  • Stir to combine the soy sauce, cilantro, lime juice, brown sugar, ginger, garlic and scallion whites in a medium bowl. Pour 1/3 cup of the marinade over the tofu steaks, flipping to coat both sides. Reserve the remaining marinade for serving.
  • Put the bok choy on another rimmed baking sheet and brush all sides with olive oil and sprinkle with salt and pepper.
  • Prepare a grill for medium heat and brush the grates of the grill with oil.
  • Put the tofu steaks and bok choy, cut-sides down, on the grill at an angle across the grates. Close the lid of the grill and cook for 5 minutes, then rotate both the tofu and the bok choy 90 degrees and cook another 5 minutes with the lid closed. Flip the tofu steaks and bok choy and cook for another 10 minutes with the lid closed, rotating 90 degrees halfway through to create crosshatch grill marks.
  • Remove the tofu and bok choy to a platter. Spoon the reserved marinade over the tofu and bok choy and sprinkle the tofu steaks with the scallion greens and toasted sesame seeds.

Salmon is my version of fast food. It's already so wonderfully flavorful on its own that I don't have to put much effort into it. A brush of oil and a sprinkle of salt and pepper, plus a few minutes in a hot oven or skillet and dinner is ready. In this recipe I whisk together marmalade, soy sauce and some freshly grated ginger, then I add a squeeze of fresh orange juice, pour it over the salmon, and then into the oven it goes. The result is sticky, sweet, tangy and oh so flavorful!

1/3 cup orange marmalade
1-inch piece fresh ginger, grated (see Cook's Note)

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet or baking pan with foil. Sprinkle the salmon generously with salt and pepper and place on the foil.
  • Whisk the marmalade, ginger, soy sauce, oil and orange juice together in a small bowl. Pour over the salmon. Drop the peel form the orange onto the baking sheet along with the salmon.   • Mix together soy sauce, honey, ginger, garlic spring onions and lime juice - taste to your liking and season with black pepper.
  • Rinse the fish with clean water and gently pat dry with kitchen paper.
  • Pour the sauce over the fish in a large bowl, making sure the fillets are covered. Seal the bowl with cling film and leave to marinade in the fridge for 20 minutes.
  • Once marinaded, loosely wrap the fish in individual foil parcels with a couple of spoonfuls of the marinade, leaving a 1 inch gap in the top of the foil.
  • Place on a tray in a pre-heated oven at around 160°C for 15-20 minutes. Pour the remaining marinade into the parcels half way through cooking. Meanwhile, cook your rice or noodles.
  • Serve with vegetables such as broccoli, green beans or red peppers. Unwrap the parcels and use a flat utensil to lift the fish out and place onto your plate.
  • Sprinkle the fish with sesame seeds and fresh chopped spring onion to garnish.

Steps:

  • Mix the butter, chives, ginger, lemon juice and soy sauce and set aside.
  • Preheat a grill or grill pan. Season the salmon with s & p and rub with the oil. Wipe the grill grates clean and rub with a paper towel dipped in oil. Add the salmon skin side down and cook for 4-5 minutes, until the skin is lightly charred and crisp.
  • Flip the fish and cook for another 2-3 minutes on the flesh side until the flesh flakes with gentle pressure from your finger but is still slightly translucent in the middle. (This will cook it to medium for well done leave it on another 2-3 minutes).
  • Serve the salmon with a generous spoonful of the flavored butter, which should melt on contact.
