NO FAIL BBQ BABY BACK RIBS (GRILL)
Pushing 52 years old, I have tried every BBQ rib recipe out there. Slow smoked, different rubs, etc.. Sure, lot of them good, some of them just OK. Problem is, never could seem to repeat a good recipe, so came up with this. Super easy, super simple, and one that has been requested at least 20 times by friends and family. If you like Sweet Baby Ray's Original BBQ sauce, you'll probably like this.

Steps:
- Remove silver skin from bone side of ribs. Never used to do this, but now understand why the pros do. Using the tine of a dinner fork helps get things started, then it just peels off.
- Put a large sheet of foil on the counter and place the ribs meat side down. You want enough foil to VERY lightly wrap (or tent) the ribs for grilling.
- All the spice measurements above are estimates. We like things a bit on the zippy side, but not burning hot -- just a little bite. With that said, we season the bone side of the ribs heavy with garlic powder, medium heavy with cayenne, medium heavy with pepper, and light with salt. Really hard to over do it, as after 4+ hours on the grill, the spices seem to mellow.
- Flip the ribs and repeat the seasoning. Again, may look heavy, but the flavors kinda vanish during cooking. Why you need to try it once and adjust to taste the 2nd time. I never taste the garlic no matter how much I put on, but the cayenne does adjust the spiciness. Even when we go pretty heavy with the cayenne, it is not over-powering.
- Lightly wrap the ribs. You want to create a tent on top so the foil does not touch the meat. Pull up the ends lightly and seal. You do want to seal things so moisture does not escape. You can put these in the fridge all day, or put on the grill immediately.
- I have a Weber Genesis gas grill that has a front, center and rear burner. Don't have to pre-heat, but I only turn on the front burner to low-medium -- grill will heat to about 250 degrees. Place the ribs towards the rear of the grill (away from the burner). Leave them there for 2 hours. Nothing you need to do except make sure the temp stays around 250. 200 is fine, 300 is fine -- but lower seems to produce better results.
- After 2 hours, open the foil and coat with BBQ sauce. Should be a lot of juice in the foil at this point. If not, add some water, beer, or something. Re-seal the foil and let them go another 2 hours.
- Now the tricky part. Pull the ribs towards the front the grill. Get a couple wide spatulas, open the foil, and carefully lift the rack of ribs from the foil and place directly on the center of the grill. At this point, the ribs will be pretty much done. Remove the foil from the grill. Turn on all the burners and coat the ribs with sauce. Close the lid. Things should start smoking from the sauce dripping and burning. If things are not smoking, turn up the heat. Keep an eye on things at this point. You do want a nice char, but you don't want to overdo it. Maybe 10-20 minutes for this step.
- Get the 2 spatulas and remove to a cookie sheet or platter. Enjoy.
- If you like Sweet Baby Ray's Original, you will like these. Fall off the bone every single time, and they require very little effort or attention. You can adjust the base seasoning to your liking. I have made these with the same general recipe and process from anywhere between 3 hours and 6 hours with very little loss in outcome. Hence the reason I call it "no fail".
SLOW COOKER BABY BACK RIBS
These are the best I've had, short of the actual grilling method of course! This is a very simple recipe that I came up with a few years ago. It's not rocket science, just ribs cooked in the slow cooker and finished in the oven. This is what I do when I want ribs during the week and have to work all day. I'm eating them within a half-hour of getting home, and they turn out perfect every time!

Steps:
- Season ribs with salt and pepper.
- Pour water into slow cooker. Layer the ribs into the slow cooker. Top the ribs with onion and garlic.
- Cook on High for 4 hours (or Low for 8 hours).
- Preheat oven to 375 degrees F (190 degrees C).
- Transfer ribs to a baking sheet. Discard onion and garlic. Coat ribs with barbeque sauce.

- Combine the brown sugar, chili powder, 1 tablespoon salt, 1 teaspoon black pepper, the oregano, cayenne, garlic powder and onion powder in a small bowl and rub the mixture on both sides of the ribs. Cover and refrigerate 1 hour or overnight.
- Preheat the oven to 250 degrees F. In a roasting pan, combine the broth and vinegar. Add the ribs to the pan. Cover with foil and tightly seal. Bake 2 hours. Remove the ribs from the pan and place them on a platter. Pour the liquid from the pan into a saucepan and bring to a boil. Lower the heat to a simmer and cook until reduced by half. Add the barbecue sauce.

- Preheat oven to 225 degrees.
- Season your ribs with Dale's marinade, your favorite rib rub, grill seasoning, or simply salt and pepper.
- Place ribs, meat side down, in baking dishes.
- Cover the baking dishes with aluminum foil and place in the oven.
- If you are using small baby back ribs, take out after 3.5 hours. If you are using regular baby back or St. Louis style ribs, then take out after 4 hours.
- Drain off the drippings. Flip the ribs over using two spatulas (and an extra set of hands if you have them) so the meat side is up. Be careful, as they may be so tender they fall apart.
- Put a layer of BBQ sauce on the ribs and return to the oven uncovered for an additional 20-30 minutes.
- Remove from oven and serve them up with a side of potato salad and some baked beans.
EASY SLOW-COOKER BBQ PORK RIBS
Steps:
- In a small bowl, combine the dry rub seasonings: salt, pepper, brown sugar, chili powder, smoked paprika, cumin, garlic powder. Set aside about 2 tablespoons of the seasoning to use for the corn. Cut the slab of pork ribs into 4 smaller sections; season the ribs well on all sides.
- Drop the chopped onion into the bottom of a slow cooker and arrange the ribs over the onions. Combine the red wine, Worcestershire and broth in a large measuring cup, then pour over the ribs. Cover the slow cooker and cook on 'High' heat for 4 to 5 hours, until the rib meat pulls away easily from the bone.
- Approximately 30 minutes before the pork ribs are ready, prepare the corn. Bring a large pot of water to a rolling boil and season with salt. Add the corn cobs and boil for 10 minutes. Remove the corn onto a large platter and coat generously in butter. Season with the remaining dry rub mixture; set aside.
- Preheat grill to 475F (medium-heat). Remove the ribs from the slow cooker and grill for 3 to 5 minutes per side with the grill closed, allowing the ribs to get some smoky flavor. At this time, also place the corn cobs on the grill and rotate along with the ribs. Using a rubber pastry brush, coat the ribs generously in barbecue sauce and grill for 1 more minute per side.
- Serve the ribs with an extra side of sauce and corn cobs with sprinkled with cilantro and a lime wedge.

- My Note: The genius of this recipe is the first step - roasting ribs in the oven. This removes fat and liquid that would otherwise cause soupy results in the crockpot. Use any sauce (I like 1 Cup ketchup, 1 Cup Stubb's barbecue sauce, 2 Tablespoons. brown sugar, 1 teaspoon Worcestershire, and Tabasco hot sauce to taste.) The original sauce recipe (which I've tried) isn't sharp or hot enough for our tastes. We use boneless beef chuck country ribs, 2 lbs. or more. Stir once during cooking time so ribs don't stick to sides and burn. To thicken sauce a bit, put the crockpot on High, with the lid ajar, during the last half hour.
- I didn't care for all the ingredients needed for the results. It tasted similar to what I tend to do for slow cooker ribs. I simplyt seasoned the ribs with garlic salt, onion powder, and black pepper; place in the crock pot and cover the ribs with a half a bottle of KC Masterpiece BBQ sauce. I let the ribs cook on low for about 8-10 hours. Then I place them in the oven on a baking sheet for a half hour so that the sauce caramelizes onto the meat. It works every time!
- The sauce tastes alot like ketchup. It is not horrible but it is below average to me. I substituted the 2 cup equivalent of my favorite BBQ sauce for the ketchup and they were delicious. I would also recommend rotating the ribs halfway through the cooking process if possible so that all the ribs are equally tender. This just became my favorite slow cooker recipe.
- These were the most incredible ribs I have ever tasted, in or out of a restaraunt! I followed other reviewers' advice and substituted bbq sauce for the ketchup, (2 cups) and ketchup for the chili sauce. (1 cup) I cut back on the vinegar to 2 1/2 tablespoons just because I thought 4 tablespoons was a lot. I also left out the hot sauce, simply because I didn't have any on hand. I used boneless Country Style Ribs. I couldn't get them out of the crock pot in one piece, they were soo tender!
- In My son Note's: He said for the crock pot suggestion. Best prep is simmering ribs in water bath (with minced garlic, seasoned salt & Emeril's southwestern spice), for 20 minutes; then prepare BBQ sauce of choice (approx 2 cups), add to drained ribs and cook in crock pot for 5-6 hours on low. Remove from crock pot and brown ribs on grill or under broiler.

BEST-EVER GRILLED RIBS
Steps:
- Preheat a grill (charcoal or gas) to 300˚, with the coals or flames only under one half of the grill.
- For the spice rub: In a small bowl, mix the brown sugar, smoked paprika, onion powder, garlic powder, salt, black pepper and cayenne (if using) to combine.
- Place the rack of ribs on a large sheet tray and remove the membrane from the underside of the ribs. Rub the vegetable oil all over both sides of the ribs, then sprinkle evenly with the spice rub.
- Place the ribs on the sheet tray, with the curves of the bones facing down. Add the chicken stock and vinegar to the tray. Wrap the tray tightly with aluminum foil and place on the grill over the side with no coals/flame. Cook over indirect heat until the internal temperature of the ribs reads 180˚ to 190˚, about 80 to 90 minutes.
- Increase the grill temperature to 375˚ and oil the grill grates well. Transfer the ribs directly over the grill grates and brush the tops with the BBQ sauce. Cover and cook for 5 minutes. Carefully turn the ribs over and baste the other side with the BBQ sauce. Cover again and cook for an additional 5 minutes. Continue basting and turning the ribs until the BBQ sauce has created a sticky coating and the ribs are charred in spots, 10 to 20 minutes longer.
- Transfer the ribs to a cutting board, cut into pieces and serve.

- 2. Combine in large pan. Water, salt, pepper, garlic, and sliced onion.

GRILLED SLOW-COOKED BBQ RIBS

- Preheat a grill for cooking over low heat.
- Remove the membrane from the bone sides of the ribs. Rub both sides of the ribs with the steak seasoning.
- Lay 1 rack of the ribs over a large sheet of aluminum foil. Fold up the sides and pour in half of the beer. Seal the foil, leaving enough room for the packet to fill with steam as it cooks. Repeat with the remaining ribs and beer. Arrange the foil packets on the grill and cook until the meat is tender, about 1 hour 30 minutes.

TENDER SLOW-GRILLED BEEF RIBS
Steps:
- Gather the ingredients.
- In a medium bowl, combine the wine, soy sauce, vegetable oil, barbecue sauce, if using, thyme, salt, pepper, and garlic. Mix well.
- Place the ribs in a shallow, non-metal baking dish and pour the marinade over them. Make sure the ribs are evenly coated.
- Cover with plastic wrap and refrigerate for 2 to 6 hours. Bring the ribs to room temperature before grilling.
- Prepare a gas or charcoal grill for indirect heat. Adjust the heat on the active burner to 250 F. - Once ribs reach an internal temperature of 165 F (make sure to check several ribs), remove from heat and serve.

- Set a pan of water on one side of your grill prior to turning on. This will be the side you are using for indirect heat. Make sure you put the grate back on.
- Preheat grill to about 200 minimum or 225 degrees maximum F. You are only turning on one side of your grill. Remember indirect heat for low and slow recipes.

- Preheat the grill. Preheat your grill for indirect grilling. The target temperature on your grill is 225 degrees F. I recommend using fruit woods like apple, peach, cherry, or hardwoods like hickory or oak.

- Rinse and pat ribs dry. Remove thin membrane from back of ribs by slicing into it with a knife and then pulling. (This will make ribs more tender and allow meat to absorb smoke and rub.)
- Sprinkle meat generously with Barbecue Rub. Massage rub into meat. Wrap tightly with plastic wrap, and chill 8 hours.
- Prepare a hot fire by piling charcoal on 1 side of grill, leaving other side empty. (For gas grills, light only 1 side.) Place cooking grate on grill. Arrange ribs over unlit side.
