2 pounds extra large (26/30) or jumbo shrimp, peeled (tails left on) and deveined, thawed if frozen
6 tablespoons extra virgin olive oil
1 cup basil leaves
3 large garlic cloves, roughly chopped
¼ teaspoon red pepper flakes
½ teaspoon salt
¼ cup grated Parmigiano-Reggiano
¼ cup walnuts
1 lemon, cut into wedges, for serving (optional)

Steps:

  • Thread the shrimp onto skewers, if desired. (I usually don't bother, unless the shrimp are on the smaller side, in which case they might slip through the grill grates.)
  • In a food processor or blender, combine the olive oil, basil, garlic, red pepper flakes, salt, Parmigiano-Reggiano and walnuts. Process until the mixture is well blended. Reserve two tablespoons of the pesto in a bowl large enough to hold all of the shrimp and set aside. Pour the remaining pesto over the shrimp and let sit at room temperature for about 30 minutes to marinate.
  • Preheat the grill to medium-high heat. Lightly dip a wad of paper towels in vegetable oil and, using tongs, carefully rub over the grates several times until glossy and coated. Place the shrimp on the grill and cook until plump and slightly charred, a few minutes per side. Transfer the cooked shrimp to the bowl with the reserved pesto and toss to coat evenly. Serve immediately.

1/4 cup orange juice
2 tsps McCormick® Ginger, Ground
1 tsp olive oil
1/2 tsp McCormick® Garlic Powder
1/4 tsp McCormick® Sea Salt Grinder
1 pound large shrimp peeled and deveined
2 tbsps toasted slivered almonds
1 cup fresh cilantro leaves
2 tbsps orange juice
1 tbsp olive oil
1 tbsp chopped seeded jalapeno pepper
1/4 tsp McCormick® Ginger, Ground
1/8 tsp McCormick® Sea Salt Grinder

Steps:

  • Mix orange juice, ginger, oil, garlic powder and sea salt in medium bowl. Reserve 2 tablespoons marinade for brushing. Add shrimp to remaining marinade in bowl; toss to coat well. Cover. Refrigerate 30 minutes.
  • Meanwhile, for the Pesto, place almonds in food processor; cover. Process until finely chopped. Add remaining ingredients; cover. Process until mixture is coarsely chopped. Set aside.
  • Place shrimp on grill rack sprayed with no stick cooking spray. Grill over medium-high heat 4 to 6 minutes or until shrimp turn pink, turning and brushing with reserved marinade. Serve shrimp with Asian Pesto.

1/2 cup walnut halves
Grated zest and juice of 1 large lemon
1/3 cup extra-virgin olive oil
Kosher salt
5 scallions, thinly sliced
1 cup packed fresh basil
1/2 cup packed fresh parsley
2 pounds large shrimp, peeled and deveined, tails intact
2 tablespoons vegetable oil
Kosher salt
2 teaspoons red pepper flakes
2 tablespoons red wine vinegar
Mixed greens, for serving

Steps:

  • Preheat a grill to high. Soak six 10-inch wooden skewers in water for at least 30 minutes.
  • Meanwhile, make the pesto: Pulse the walnuts, lemon zest and juice, olive oil and a pinch of salt in a food processor until the walnuts are in small pieces. Pulse in the scallions, basil and parsley until fairly smooth. With the machine on, drizzle in 2 to 4 tablespoons cold water to loosen. Transfer to a bowl and season with salt.
  • Make the shrimp: Thread the shrimp through the tail and top end onto the prepared skewers so they lie flat. Brush with the vegetable oil and season on both sides with salt and the red pepper flakes. Grill the shrimp on the hottest part of the grill until marked, 3 to 4 minutes; flip and grill until cooked through, 2 to 3 more minutes. Remove from the grill and drizzle with the red wine vinegar. Remove the shrimp from the skewers, if desired, and serve over mixed greens. Drizzle with some of the pesto and serve the remaining pesto on the side.

3/4 cup (packed) coarsely chopped fresh basil
1/3 cup macadamia nuts, toasted
4 1/2 tablespoons balsamic vinegar
1/2 cup plus 1 tablespoon olive oil (preferably extra-virgin)
For shrimp
1 cup canned unsweetened coconut milk
1 tablespoon Thai red curry paste
24 uncooked large shrimp (about 1 pound), peeled, deveined
2 ounces dried thin Chinese rice sticks (maifun) or angel hair pasta
4 cups thinly sliced Napa cabbage
4 cups thinly sliced bok choy leaves
1/2 cup chopped green onions
1/2 cup chopped fresh cilantro
Fresh cilantro sprigs

Steps:

  • Make dressing:
  • Blend basil, nuts and vinegar in processor until nuts are finely ground. With machine running, gradually add oil and blend well. Season to taste with salt and pepper. Transfer to small bowl. (Dressing can be made 1 day ahead. Cover and refrigerate. Bring to room temperature before using.)
  • Make shrimp:
  • Whisk coconut milk and curry paste in medium saucepan over medium-low heat until blended; bring to simmer. Add shrimp and simmer until shrimp are almost opaque in center, about 3 minutes. Remove from heat. Refrigerate shrimp in curry liquid, uncovered, until very cold, about 2 hours.
  • Place rice sticks in medium bowl. Cover with very hot water. Let stand until tender, about 25 minutes. Drain rice sticks. (If using pasta, cook in pot of boiling salted water until just tender but still firm to bite. Drain well; rinse pasta with cold water and drain again.) Using knife or poultry shears, cut rice sticks or pasta into shorter (about 6-inch) lengths. Place noodles in medium bowl and toss with enough dressing to coat.
  • Combine cabbage, bok choy, green onions and chopped cilantro in large bowl. Toss with enough dressing to coat. Season with salt and pepper. Divide greens among plates. Top with noodles. Drain shrimp; place atop noodles, dividing equally. Garnish with cilantro sprigs. Pass any remaining dressing separately.
