Number Of Ingredients 10

8 shell-on jumbo shrimp, deveined
2 teaspoons seafood seasoning, such as Old Bay
6 small red skin potatoes, cut into 1/4-inch slices
2 links andouille sausage (about 8 ounces), cut into 1/4-inch slices
16 littleneck clams, scrubbed
2 ears corn, cut into 1-inch wheels
4 tablespoons butter
1 lemon, sliced into 8 rounds
2 scallions, white and green parts, thinly sliced

  • Preheat a grill to medium-high heat.
  • Toss the shrimp with the seafood seasoning. Place two 12-inch sheets of heavy-duty aluminum foil per packet (8 sheets total for 4 packets) on a flat surface. Fold up the ends of the foil and seal into packets.
  • Place the packets on the grill, cover and cook until the clams open and the potatoes and shrimp are cooked, 15 to 20 minutes. Serve with grilled crusty bread.

GRILLED SHRIMP KEBABS - LOW COUNTRY BOIL RECIPE

Grilled Shrimp Kebabs - Low Country Boil Recipe image

Grilled shrimp kebabs, aka low country boil, are easy and as good for a weeknight supper as they are for a date night or a holiday celebration.

Provided by Jas

Categories     Main Course

Time 40m

Number Of Ingredients 9

1/2 pound large raw shrimp (peeled and deveined)
8 baby (new potatoes)
1/2 pound about 2 andouille sausages, cut into 1-inch rounds
2 small ears corn
Green onions (optional, cut 2-3 inches long)
½ stick butter (melted)
1 teaspoon Tabasco sauce (increase per taste)
1 teaspoon Old Bay seasoning
Salt and pepper to taste

Steps:

  • Boil potatoes in salted water for about 12-15 minutes. Add the corn in the last 5 minutes. Not only it is easier to get them onto skewers (I recommend using the metal ones, but if you're using the wooden skewers, this step is even more important) but the cooking time differs and you don't want undercooked corn. Rinse with cold water.
  • Cut corn into 1 ½ inch rounds. Thread potatoes, corn, shrimp, and sausage, and green onions onto skewers.
  • Lightly oil grill (an indoor griddle works well too) and heat to medium-high. Melt the butter and combine with Tabasco and Old Bay seasoning.
  • Grill kebabs brushing with butter mixture occasionally and turning until the shrimp are cooked through about 8-10 minutes.

LOW COUNTRY BOIL

Low Country Boil image

When Kardea Brown was growing up on Wadmalaw Island outside Charleston, SC, she'd often gather with family beneath the Spanish moss-covered tree in her great-grandfather's yard, and they would spill endless buckets of boiled crab, shrimp, sausage, corn and potatoes onto a newspaper-lined table. Like crawfish boils in Louisiana and clambakes in New England, Low Country boils are a regional summer staple - they're super fun. These days Kardea carries on the tradition with her girlfriends, hosting a boil right on the beach whenever they visit. It's the best kind of communal eating, she says. "Instead of breaking bread, we're breaking crab."

Provided by Kardea Brown

Categories     main-dish

Time 35m

Yield 8 to 10 servings

Number Of Ingredients 9

3 tablespoons seafood seasoning (such as Old Bay), plus more for sprinkling
3 pounds red-skinned new potatoes, halved if large
2 16-ounce packages kielbasa, cut into 1-inch pieces
8 ears of corn, shucked and cut into halves or thirds
4 pounds frozen crab legs
4 pounds jumbo shrimp (shells on)
2 sticks unsalted butter
5 cloves garlic, minced
Kosher salt and freshly ground pepper

Steps:

  • Heat an extra-large pot of water over medium-high heat (you can do this indoors or outside with a propane burner). Add the seafood seasoning and bring to a boil. Add the potatoes and sausage and cook until the potatoes are fork-tender, about 10 minutes. Add the corn and cook until tender, about 5 more minutes. Add the crab and cook another 5 minutes. Add the shrimp and cook until they turn pink, another 3 or 4 minutes.
  • Meanwhile, melt the butter in a small saucepan; remove from the heat and add the garlic and sprinkle with seafood seasoning. Drain the seafood mixture and transfer to a newspaper-lined table or a large platter. Season with salt and pepper. Serve with the garlic butter.
