Perfectly cooked in foil - juicy shrimp, tender bell peppers and onions can be wrapped into a warm tortilla for a super fast dinner that's packed with incredible flavor!

1 1/2 pounds medium shrimp (peeled and deveined)
1 red bell pepper (thinly sliced)
1 yellow or orange bell pepper (thinly sliced)
1 green bell pepper (thinly sliced)
1 onion (thinly sliced)
2 tablespoons avocado or olive oil
2 tablespoons taco seasoning
Juice of 2 limes + more for serving
Chopped fresh cilantro leaves, avocado or guacamole, cheese, salsa (optional, for serving)
12 Tortillas, for serving

Steps:

  • Preheat a gas or charcoal grill over high heat.
  • Cut four sheets of foil, about 12-inches long.
  • Combine shrimp, bell peppers and onion in a large bowl and toss with oil, taco seasoning and lime juice.
  • Divide shrimp, bell peppers and onion into 4 equal portions and add to the center of each foil in a single layer.
  • Fold the sides of the foil over the shrimp and veggies, covering completely and sealing the packets closed.
  • Place foil packets on the grill and cook about 12 minutes.*
  • Serve immediately with tortillas or in lettuce leaves and optional garnishes, if desired.

¼ cup vegetable oil
2 tablespoons cider vinegar
2 tablespoons water
1 (1.06 oz) packet mojito lime marinade mix (such as McCormick's® Grill Mates)
2 pounds raw jumbo shrimp, shelled and deveined
1 serving cooking spray
1 large onion, sliced into 1/2-inch rings
2 each yellow bell peppers, quartered
2 each red bell peppers, quartered
1 (8 ounce) package fajita-size flour tortillas

Steps:

  • Combine oil, vinegar, water, and marinade mix in a large bowl. Add shrimp and marinate for 30 minutes.
  • Preheat the grill to 300 degrees F (150 degrees C) and oil the grate with cooking spray.
  • Add onions to the hot grill, keeping rings intact. Add bell peppers. Grill for 3 to 5 minutes per side. Transfer to a cutting board and chop roughly.
  • Grill shrimp until opaque and cooked through, 1 to 2 minutes per side. Transfer shrimp to a bowl covered with aluminum foil to keep warm.
  • Heat tortillas on the hot grill for 1 to 2 minutes. Assemble fajitas with onion, peppers, and 3 to 4 shrimp per tortilla.

What do you get when you combine shrimp, peppers, onions and rice? The best fajitas ever! These Grilled Shrimp Fajita Foil Packets are easy and delicious making them one of my favorite dinners to make.

Number Of Ingredients 8

1 pound large shrimp, peeled and deveined
4 peppers, thinly sliced
1 onion, thinly sliced
2 tablespoons taco seasoning
2 tablespoons olive oil
juice of 1 lime
1/4 cup fresh cilantro, chopped
Serve with tortillas, salsa, sour cream, and rice (optional)

Steps:

  • Preheat grill over high heat.
  • Cut foil pieces into four - 12 inch squares.
  • Add shrimp, peppers, and onion to large bowl.
  • Mix taco seasoning, olive oil, and lime juice in small bowl. Pour over shrimp, peppers, and onion in large bowl. Mix until everything is evenly coated.
  • Evenly divide shrimp, peppers, and onion onto aluminum squares. Fold foil up and seal aluminum packets closed.
  • Place foil packets on grill for 10-12 minutes or until shrimp is cooked. Serve immediately with rice, tortillas, fresh salsa and sour cream.

Bring your favorite restaurant dish home with these personal-sized foil-packet fajitas. They take no time to prepare, clean-up is a breeze and they are totally customizable, so even the pickiest eater will dig in.

1 1/2 pounds boneless skinless chicken thighs, sliced into 1/2-inch strips
1 medium onion, sliced 1/4-inch thick
1 green bell pepper, sliced into 1/4-inch strips
1 red bell pepper, sliced into 1/4-inch strips
3 tablespoons fajita seasoning (see Cook's Note)
3 tablespoons olive oil
2 teaspoons adobo sauce (from a can of chipotles in adobo)
1 teaspoon ground cumin
Juice from 1 lime (about 2 tablespoons)
Eight 6-inch flour tortillas
Cooked rice, for serving
Shredded Cheddar or Monterey Jack, fresh cilantro, sour cream, salsa, sliced avocado and hot sauce, for serving

Steps:

  • Place a baking sheet in the oven and preheat to 400 degrees F. Tear off four 12-by-18-inch pieces of heavy-duty aluminum foil and set aside.
  • Toss the chicken with the onion and bell peppers in a large bowl.
  • Whisk together the fajita seasoning, oil, adobo sauce, cumin and lime juice in a separate small bowl. Pour over the chicken mixture and toss gently with tongs to coat evenly.
  • Divide the chicken and vegetable mixture among the 4 sheets of foil. Bring up two short sides to meet and fold over a few times to close tightly, then fold the remaining sides in and up to seal the packet completely. Repeat with the remaining foil packets.
  • Carefully remove the baking sheet from the oven, place the packets on in a single layer and return to the oven until the chicken is cooked through and the vegetables have softened slightly, 15 to 18 minutes.
  • Warm the tortillas by wrapping them in a clean kitchen towel and microwaving until warm, about 40 seconds. Serve the fajitas with the tortillas, rice and toppings of your choice.
