GRILLED HOT AND SWEET SAUSAGE TACOS WITH APRICOT-JALAPENO GLAZE, GRILLED PEPPER AND RED ONION SALSA

Steps:
- Salsa: Combine all the ingredients in a bowl and let sit at room temperature for at least 30 minutes before serving.
- Sausage tacos: Combine the preserves, jalapeno and lime juice in a food processor and process until smooth. Season with salt and pepper, to taste.
- Heat a grill to high. Brush the links with oil and season with salt and pepper, to taste. Grill until lightly golden brown. Cut the sausage in half lengthwise and brush the apricot glaze mixture on both sides. Grill until dark golden brown, then remove to a cutting board and slice.
- Grill the tortillas quickly on each side just to heat through, about 5 seconds per side. Fill with some of the hot and sweet sausage and top with some of the cheese and some of the salsa.

- Toss peppers and onions with olive oil, salt, and pepper.
- Grill for about 4 minutes or so per side, being careful not to burn.
- Place sausage and peppers in a warm flour tortilla and top with toppings of choice.

GRILLED KIELBASA TACOS
Make sure to cut the onions and peppers into big pieces so that they don't fall through the grill grates.

Steps:
- Prepare a grill for medium-high heat. Toss onion, bell peppers, and scallions with oil on a rimmed baking sheet; season with salt and black pepper. Grill vegetables until lightly charred and tender, about 2 minutes for scallions and 10 minutes for onion and bell peppers. Transfer to a cutting board as they are done; let cool.
- Slice onion into 1" wedges; place in a medium bowl and toss with lime juice. Remove skins from bell peppers, then cut into bite-size pieces; place in a small bowl. Place scallions on a platter.
- Grill sausage, turning halfway through, until lightly charred and warmed through, about 5 minutes. Transfer to platter with scallions.
- Lightly char tortillas and serve warm with kielbasa, scallions, onion, bell peppers, cilantro, hot sauce, and lime wedges for squeezing over.
