1 medium green pepper, sliced
1/2 pound fresh mushrooms, sliced
2 to 3 garlic cloves, minced
2 tablespoons canola oil
1/4 teaspoon salt
1/8 teaspoon pepper
8 slices sourdough bread
16 slices Colby-Monterey Jack or Swiss cheese, divided
8 slices deli roast beef
1/2 cup butter, softened
Garlic salt, optional

Steps:

  • In a large skillet, saute the onion, green pepper, mushrooms and garlic in oil until tender; sprinkle with salt and pepper. On four slices of bread, layer two slices of cheese, two slices of beef and a fourth of the vegetable mixture. Top with the remaining cheese and bread. , Butter outside of bread; sprinkle with garlic salt if desired. On a hot griddle or large skillet, toast sandwiches for 3-4 minutes on each side or until golden brown.

2 (8 ounce) packages fat-free cream cheese, softened
3 ½ tablespoons prepared horseradish
3 tablespoons Dijon-style mustard
12 (12 inch) flour tortillas
30 spinach leaves, washed with stems removed
1 ½ pounds thinly sliced cooked deli roast beef
8 ounces shredded Cheddar cheese

Steps:

  • Beat the cream cheese, horseradish, and mustard together in a bowl until well blended.
  • Spread a thin layer of the cream cheese mixture over each tortilla. Arrange spinach leaves evenly over the tortillas. Place two slices of roast beef over the cream cheese. Sprinkle with Cheddar cheese, dividing evenly between tortillas. Starting at one end, gently roll up each tortilla into a tight tube. Wrap with aluminum foil or plastic wrap to keep the rolls tight. Refrigerate at least 4 hours.
  • To serve for lunch, unwrap and slice into 2 or 3 pieces. Only cut the rolls you will be using that day so the others do not dry out. To serve for parties, unwrap and slice the rolls diagonally into 1 inch sections, and arrange on a serving platter.

I opened the fridge and knew I needed to use that Naan (flatbread), but I wanted a sandwich. Then everything just fell into place...I said, "carmelized onions would be great!" Then I was sad...

THINGS YOU WILL NEED:
2 naan (indian flatbread)
1/2 onion, slices about 1/4"
5-6 roast beef slices (from the deli)
1 c horseradish cheddar cheese (grated or slices to cover roast beef
5-6 pepperoncini peppers, stems and seeds removed rough chop
2 Tbsp mustard (coarse or german style) i used trader joe's garlic aoli mustard
2 Tbsp butter
1 Tbsp olive oil

Steps:

  • 1. Slice onions and caramelize in butter and olive oil. Remove with a slotted spoon to a bowl.
  • 2. Grate horseradish cheddar and rough chop peppers.
  • 3. Lightly spread mustard on Naan. Layer roast beef slices, then onions, grated horseradish cheddar, top with peppers.
  • 4. Place on a preheated barbecue grill (350). Turn after a few minutes to get good grill marks on the bottom and get a crispy, "wood oven-like" crust. WATCH it carefully....keep the heat low and move so as not to burn the bottom. When cheese is melted and is heated through, remove to plates.

8 ounces extra sharp cheddar cheese, grated
1 tablespoon cornstarch
1 (12-ounce) can evaporated milk
2 teaspoons Frank's Red Hot or other hot sauce
For the Roast Beef and Buns:
1 pound thinly sliced roast beef
4 pretzel buns or other rolls, split
For the Horseradish Sauce:
1/2 cup sour cream
1/2 cup prepared horseradish
2 tablespoons minced chives
1 tablespoon freshly squeezed lemon juice from 1 lemon
Kosher salt and freshly ground black pepper

Steps:

  • For the Cheddar Cheese Sauce : Add grated cheese and cornstarch to a large bowl, and toss until combined. Transfer to medium-sized saucepan. Pour in 1 cup evaporated milk and the hot sauce. Cook over low heat, whisking occasionally, until sauce is bubbly and homogenous, about 5 minutes. It will thicken considerably as it warms up. Keep warm, thinning cheese sauce with additional evaporated milk if it becomes too thick.
  • Meanwhile, for the Beef and Buns: Adjust racks to upper middle and lower positions and preheat oven to 300°F. Place roast beef slices in a heatproof dish, cover with aluminum foil, set on the bottom rack, and cook until warmed through, about 5 to 10 minutes. Meanwhile, wrap buns in aluminum foil, set on top rack, and cook until warmed, about 5 minutes.
  • For the Horseradish Sauce : Add sour cream, horseradish, chives, and lemon juice to a medium-sized bowl. Stir until combined. Season with salt and pepper.
  • Smear the cut-side of the bun bottoms with horseradish sauce, and top each with 1/4-pound of the sliced meat. Drizzle with some of the cheddar sauce and then crown with top bun halves. Serve immediately.

4 Tb mayonnaise
1/2 tsp horseradish
1/2 pound thinly sliced roast beef
2 red onions sliced
2 Tb butter divided
4 Sourdough bread slices

  • To Caramelize onions: Add one tablespoon butter to a pan over medium heat. Caramelize the onions until soft, fragrant and beginning to char, about 10-15 minutes. Once the onions are finished, turn off the heat and move them to one side of the pan. Add roast beef slices to the other side, just to warm them up a bit. Liberally butter bread slices. Place one slice of bread buttered side down and add mayo and horseradish to taste, as well as two slices of cheese. Top with warmed roast beef, desired amount of caramelized red onion (about one-quarter cup) and another three slices of cheese. Place the other piece of bread on top (butter side up). After about four minutes, check the bottom piece of bread by lifting the corner with a spatula. If browned to your liking, carefully flip and grill the other side, about four or five minutes. (You may want to cover the pan to help promote cheese melting.)

6 onion poppy seed hamburger buns (any hamburger buns can be substituted)
1 - 1 1/2 pounds roast beef deli slices
15 ounce can Ricos Premium Cheddar Cheese Sauce

Steps:

  • Preheat oven to 400 degrees.
  • Wrap the roast beef deli slices in foil. Using two foil packs will heat the meat up quickest.
  • Place the deli meat in oven for 15 minutes.
  • As the deli meat warms up in the oven, place the Ricos Premium Cheddar Cheese Sauce in a saucepan on a low-medium heat on the stovetop. Stir frequently for 10 minutes.
  • Assemble the sandwiches. Place a teaspoon of horseradish on each bottom hamburger bun, followed by four slices roast beef deli meat, then a dollop of the Ricos Premium Cheddar Cheese Sauce.

  • For the onions: Pour the buttermilk over the onions and let them sit for about 30 minutes.
  • Heat 3 inches of oil to 350 degrees F in a medium Dutch oven.
  • Whisk together the flour, cayenne, paprika and some salt and pepper. Remove the onions from the buttermilk and toss them in the flour until thoroughly coated. Fry in batches until the batter is golden, 2 to 3 minutes. Let drain on paper towels and season with salt while hot.

4 slices thick sourdough bread
1/3 lb thinly sliced roast beef (I use rare beef purchased at the deli.)
4 slices monterey jack with jalapeno pepper cheese, generous slices
1 teaspoon canned diced green chilis
mayonnaise
melted butter
salt

Steps:

  • Lay sliced bread on bread board.
  • Paint tops of bread slices generously with melted butter.
  • Flip bread slices over.
  • Spread mayonnaise generously on each slice of bread.
  • Assemble two sliced bread pieces with roast beef, cheese and 1/2 teaspoon diced green chilies.
  • Sprinkle with salt. Top sandwiches with other two slices of bread, mayo side down, butter side up.
  • Grill sandwiches on medium high heat griddle, with lots of butter on the grill beneath, until bottoms of sandwiches are golden brown and cheese begins melting.
  • Carefully flip sandwiches over using two utensils and grill again until bottom bread is also golden brown and cheese is melted.
  • Remove two sandwiches from griddle, slice each in half and arrange on two plates. Garnish plates.
  • Serve with dill pickles, yellow mustard, prepared horseradish and lots of napkins.
  • French fries, onion rings and cole slaw make wonderful additions to this meal.
