GREEK POTATO FOIL PACKS

Greek Potato Foil Packs image

These Greek Potato Foil Packs are incredibly delicious Greek style potatoes with fresh rosemary and oregano, lots of lemon zest and lemon juice, olives and garlic then grilled to perfection in a foil pack. So easy and so delicious, the perfect side dish to complete any meal!

Provided by Joanna Cismaru

Categories     Side Dish

Time 30m

Number Of Ingredients 11

1 1/2 pound baby potatoes ((I used tri colored baby potatoes))
5 cloves garlic (peeled)
1/2 cup Kalamata olives (pitted)
1 tablespoon fresh rosemary (chopped)
2 tablespoon fresh oregano (chopped)
zest from 1 lemon
2 tablespoon olive oil
juice from 1 lemon
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
1/4 cup feta cheese (crumbled, optional)

Steps:

  • You'll need 2 big sheets of foil, about 2 feet long. I like to double the foil to avoid oil or juices from seeping out while grilling. Place all the ingredients into the center of the foil, in the order that the ingredients are listed. You can add the feta cheese at this point or add it after the potatoes are cooked.
  • Wrap the foil tightly around the potatoes. Grill over medium high heat for 25 minutes or bake at 425 F degrees for about 30 minutes or until the potatoes are fork tender.
  • Garnish with crumbled feta cheese and serve.

BAKED POTATOES ON THE GRILL

Baked Potatoes on the Grill image

Ever wonder how to make baked potatoes on the grill? It's easy! Just wrap the potatoes in a double layer of foil (which keeps in the steam that cooks your potato) and transform your gas or charcoal grill into an oven. The result: a lightly smoke-flavored skin and a fluffy tender potato on the inside that you can flavor with a dollop of sour cream and your favorite seasonings.

GRILLED POTATOES

Grilled Potatoes image

Crispy grilled potatoes are easy and a perfect side to any BBQ recipe. Golden outside, tender inside, with no boiling or clean up required!

Provided by Erin Clarke / Well Plated

Categories     Side Dish

Time 30m

Number Of Ingredients 9

1 1/2 pounds baby red potatoes (or baby gold potatoes)
1 teaspoon dried rosemary
1 teaspoon garlic powder
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon dried oregano
2 tablespoons extra virgin olive oil
Grated parmesan (optional for serving)
Chopped fresh herbs such as parsley (rosemary, or basil, optional for serving)

Steps:

  • Rinse and dry the potatoes (no need to peel). Cut crosswise into ½-inch slices (if your potatoes are smaller than a golf ball, you can halve or quarter them). Place in a large bowl.
  • In a small bowl, stir together the rosemary, garlic powder, salt, pepper, and oregano.
  • Drizzle the potatoes with the oil, then sprinkle the spices over the top. Toss to evenly coat.
  • Preheat the grill to medium-high (about 375 to 400 degrees F).
  • Place two large (about 22 to 24 inches long) sheets of heavy-duty foil down on a large baking sheet (you'll use the baking sheet for easy transport) so that the foil pieces are slightly overlapping down the center to create a wider sheet. Coat with non-stick spray. Spread the potatoes onto the foil in a single layer (if you prefer not to have the food touch the foil, you can add a layer of parchment in between). Place two more overlapping sheets of foil on top, then fold up the edges all the way around to seal and create a packet. Leave some space towards the top of the packet to allow the air to circulate.
  • Using the baking sheet, carry the potatoes out to the grill, then with tongs slide the packet onto the grill. Cover then cook for 15 minutes.
  • Carefully open the foil then use the tongs to flip the potatoes over. They should be deeply golden on the first side (if not, continue to cook them for 3 to 5 minutes more). Place the foil loosely back over the top, close the grill, and cook for 5 to 10 additional minutes, until the potatoes are tender when pieced with a fork.
  • Slide the potato packet back onto the baking sheet, then transfer them to a serving bowl (or serve them right off of the foil). Serve warm, with a sprinkle of Parmesan and chopped fresh herbs as desired.

  • Wash the baby potatoes well, no need to peel them. Take a mixing bowl and combine the potatoes with the curry powder, paprika powder, salt, pepper and olive oil. Toss the potatoes with the spices and olive oil until well coated.
  • Tear a piece of 18 inches (or 50 cm) heavy duty aluminium foil. Put the coated potatoes in the middle of the foil sheet. Place the crushed garlic and rosemary sprigs over the potatoes.
  • Fold the opposite sides of the foil in towards the middle until the edges meet. Crimp around all the edges to seal. Leave enough room for the steam and heat to move inside the foil packet. The packet will look like a little purse.
  • Place the foil packet on the gas grill or wood/charcoal fire and cook for 40 minutes, or until soft. When cooked, remove the packet from the grill and let it cool for a few minutes. Open the foil packets carefully, the steam inside will be hot.
