2 boneless skinless chicken breast halves (4 ounces each)
1 teaspoon poultry seasoning
2 slices (1/2 ounce each) pepper jack cheese
2 center-cut bacon strips, cooked and halved
2 hamburger buns, split
4 lettuce leaves
4 slices tomato
1 slice onion, separated into rings
Dill pickle slices, optional

Steps:

  • Sprinkle chicken with poultry seasoning. Place chicken on oiled grill rack. Grill, covered, or broil 4 in. from the heat until a thermometer reads 165°, 4-7 minutes on each side. Top with cheese and bacon; cover and cook until cheese is melted, 1-2 minutes longer. , Serve on buns with lettuce, tomato, onion and, if desired, pickles.

4 to 6 sweet mini peppers ((seeds removed and cut in half lengthwise))
1 tbsp vegetable oil
4 slices bread ((any kind))
4 to 6 slices pepper jack cheese
2 slices pastrami
1 tbsp butter ((14g))

Steps:

  • Heat a grill pan on the stove. Brush vegetable oil onto prepared sweet mini peppers and place in the grill pan. Grill peppers for about 4 minutes on each side. Remove.
  • Place slices of bread on a clean work surface. Cover 2 slices of bread with pepper jack cheese. You may need to use more than a slice of cheese for each slice of bread. Layer roasted sweet mini peppers and pastrami on top of cheese. Top with remaining pepper jack cheese and sandwich with remaining slices of bread.
  • Melt butter in the grill pan. Place sandwiches in the pan and allow it to cook for 2 minutes. Flip and cook for another 2 minutes.

2 plum tomatoes, sliced 1/4-inch thick
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
1/4 cup chopped fresh cilantro leaves
1/4 cup chopped red onion
1 lime, zested
6 tablespoons melted butter
8 slices stale white bread, with no holes
8 (1-ounce) slices pepper jack cheese

Steps:

  • Heat the oven to 350 degrees F.
  • In a small bowl, drizzle the tomatoes with oil and season with salt and pepper, to taste. Line a baking sheet with parchment paper and put a cooling rack on top. Arrange the tomato slices on the rack. Roast until the tomatoes begin to caramelize on the edges, 20 to 25 minutes. Remove and let cool, then gently chop.
  • Pile the cilantro, onion, lime zest and a pinch of salt together on a cutting board. Chop vigorously until finely minced and combined. Mix in the chopped tomatoes.
  • On a griddle or a saute pan large enough to fit the sandwiches, add half of the butter on medium- high heat. Build the sandwiches directly on the grill by putting 1 slice of bread on the pan, making sure the bread gets moistened with the butter. Top with a slice of cheese, evenly sprinkle with 1 tablespoon of the onion-tomato mixture, a second slice of cheese and then top with another piece of bread. Repeat for the rest of the sandwiches, gently pressing down each sandwich with a spatula. After the cheese begins to melt a bit, check the bottom of the sandwich for color and if golden brown, gently flip. Add the other half of the butter around the edges and gently press each sandwich while toasting the second side. Remove when the bottom reveals a golden brown color and the cheese is melted, about 4 minutes. Arrange on serving plates and serve.

  • Brush both sides of each slice of bread with the butter.

I modeled this sandwich after one I enjoyed at a little hole-in-the-wall coffee shop in Cardiff by the Sea, in Southern California. It was wonderful and so is this!

4 slices thick sourdough bread
1/3 lb thinly sliced roast beef (I use rare beef purchased at the deli.)
4 slices monterey jack with jalapeno pepper cheese, generous slices
1 teaspoon canned diced green chilis
mayonnaise
melted butter
salt

Steps:

  • Lay sliced bread on bread board.
  • Paint tops of bread slices generously with melted butter.
  • Flip bread slices over.
  • Spread mayonnaise generously on each slice of bread.
  • Assemble two sliced bread pieces with roast beef, cheese and 1/2 teaspoon diced green chilies.
  • Sprinkle with salt. Top sandwiches with other two slices of bread, mayo side down, butter side up.
  • Grill sandwiches on medium high heat griddle, with lots of butter on the grill beneath, until bottoms of sandwiches are golden brown and cheese begins melting.
  • Carefully flip sandwiches over using two utensils and grill again until bottom bread is also golden brown and cheese is melted.
  • Remove two sandwiches from griddle, slice each in half and arrange on two plates. Garnish plates.
  • Serve with dill pickles, yellow mustard, prepared horseradish and lots of napkins.
  • French fries, onion rings and cole slaw make wonderful additions to this meal.

1 ¼ cups shredded Cabot Pepper Jack Cheese, divided
2 tablespoons jalapeño, finely chopped
½ tablespoon habanero pepper, optional, finely chopped
1 tablespoon green onion, finely chopped
6 jalapeño-flavored potato chips, lightly crushed

Steps:

  • Heat a large nonstick skillet over medium heat. Hold a slice of bread over the skillet to measure the space for the cheese crust. Place 2-4 jalapeño slices in the skillet where the bread will go, then top with ¼ cup Cabot Pepper Jack Cheese roughly the shape and size of the slice of bread. Place the bread on top of the cheese and press down lightly so the melting cheese sticks to the bread.
  • Top the bread with ¾ cup Cabot Pepper Jack Cheese, the chopped jalapeño, habanero (if using), green onions, and potato chips. Cover with the other slice of bread. Cook for 2-3 minutes, or until the cheese on the bottom forms a browned crust.
  • Using a spatula, lift the sandwich out of the pan and layer the remaining jalapeño slices and Cabot Pepper Jack Cheese in the skillet. Place the sandwich on top of the cheese in the pan, cheese-crust side up, and press down lightly to adhere. Cook for 3-5 minutes, or until the cheese crust is well browned and the cheese in the middle of the sandwich is completely melted. Let the sandwich rest for 1 minute before slicing.

  • To roast the peppers: Cut off the top of the jalapeno and cut a slit lengthwise. Part open the pepper and remove seeds/ribs. Try to keep the pepper attached at the other end and flatten. In a heated cast iron skillet, roast the peppers until they start to develop a light char on the skin. It took me about 5 minutes per side. Remove to a plate. Set aside for later use.
  • To assemble the sandwiches: Butter one side of each of the bread slices. Flip slices over and spread cream cheese on the inside of each slice. Sprinkle the granulated garlic evenly over all the slices. Place a small amount of pepper jack cheese on 2 of the slices. Place the roasted jalapenos on those slices. Sprinkle the remaining pepper jack on top of the jalapenos. Top with the remaining bread slices with butter side up.
  • Grill sandwiches in a non-stick skillet over medium heat. Flip and cook until golden brown on each side. About 3 minutes per side. Slice in half and serve immediately.
