The best Mediterranean turkey burgers with sun dried tomatoes, feta, and oregano. Grilled until juicy tender and served with tzatziki sauce and tomato cucumber salad.

1 1/2 lbs. ground turkey
1/2 white onion, grated (1/3 cup)
2 cloves garlic, minced
1/4 cup chopped sun-dried tomatoes in oil
1/4 cup crumbled feta cheese
1 tsp. dried oregano
1 Tbsp. mayonnaise (or full-fat sour cream)
Kosher salt and fresh black pepper
Burger buns, toasted
Pepper Jack cheese
Tzatziki sauce
Cucumber tomato salad (quick recipe below)
Lettuce

Steps:

  • In a large bowl, combine the turkey, grated onions, garlic, sun-dried tomatoes, feta, oregano, and mayonnaise. Season the mixture with salt and pepper, to taste. Using your hands, incorporate everything together.
  • Form the mixture into six patties and place on a parchment lined sheet pan. If it sticks too much to your hands, lightly oil your hands before forming into patties.
  • Lightly drizzle the patties with olive oil and let rest at room temperature while you preheat the grill.
  • Preheat the grill on hight heat. Clean and oil the grates. Place the patties on the grill and cook 3-4 minutes, covered. Reduce the heat to a medium, flip and continue to cook, covered, for 3-4 more minutes or until cooked through. Cook time will vary on thickness of the burgers. Make sure not to overcook the burgers. Around 3 minutes start checking for doneness. In the last 2 minutes of cooking, add the cheese.
  • Remove and let rest for 5-8 minutes before serving with toppings.

1 7-ounce container 2% plain Greek yogurt (about 3/4 cup)
1/3 cup crumbled feta cheese (about 2 ounces)
1 Persian or Kirby cucumber, grated
2 tablespoons chopped fresh mint
2 cloves garlic, grated
Kosher salt and freshly ground pepper
1 1/4 pounds lean ground turkey
2 tablespoons extra-virgin olive oil
4 sesame hamburger buns or potato rolls, split and toasted
Lettuce and tomato slices, for topping

Steps:

  • Combine the yogurt, feta, cucumber, mint, half of the garlic, 1 tablespoon water, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Refrigerate until ready to serve.
  • Combine the turkey, the remaining garlic, 1 teaspoon salt and a few grinds of pepper in a medium bowl. Form into four 1/2-inch-thick patties. Heat a large nonstick skillet over medium-high heat. Add the olive oil, then add the patties and cook until browned and cooked through, 4 to 5 minutes per side. Transfer to a plate.
  • Spread the yogurt sauce on the buns. Sandwich with the burgers; top with lettuce and tomato. Serve with potato chips.

1/4 cup Dijon mustard
1 heaping tablespoon clover honey
1 tablespoon fresh orange juice
1/2 teaspoon lemon zest
1 teaspoon fresh Meyer lemon juice, from Meyer lemons, if possible
Salt and freshly ground black pepper
1 1/2 pounds 90-percent lean, freshly ground turkey (not all white meat), chilled
Salt and freshly ground black pepper
8 slices goat cheese, sliced 1/2-inch thick
4 sesame seed hamburger buns, split and lightly grilled
Watercress, for serving

Steps:

  • For the Meyer lemon-honey mustard: Whisk together in a small bowl the mustard, honey, orange juice, lemon zest, lemon juice and season with salt and pepper. Cover and refrigerate for at least 30 minutes and up to 24 hours to allow the flavors to meld.
  • For the burgers: Preheat the grill to high. Form the meat into four 6-ounce burgers. If you are not going to cook right away, keep the burgers cold in the refrigerator. Sprinkle the burgers on both sides with salt and pepper. Grill until cooked through, 3 to 4 minutes on each side. During the last minutes of cooking, add 2 slices of cheese to each burger, cover the grill and let the cheese soften slightly, about 1 minute. Put the burgers on the buns, drizzle with some of the Meyer lemon-honey mustard and top with a few sprigs of watercress. Serve with extra mustard on the side.

4 frozen turkey burgers or 4 fresh beef burgers
2 whole roasted red peppers
4 English muffins or 4 whole grain buns
kalamata olive tapenade (olive paste)
mixed sprouts (optional)
1/2 cup cottage cheese
2 -3 sun-dried tomatoes packed in oil or 2 -3 reconstituted sun-dried tomatoes, chopped
1 -2 clove garlic, chopped
1/4 cup cilantro, chopped
Tabasco jalapeno sauce
italian seasoning
salt and pepper

Steps:

  • Make the cheese sauce by blending together the cheese and all ingredients following.
  • Whiz together in blender or food processer to form a chunky paste.
  • You may need to add a little milk or yogurt to get the right consistency.
  • Adjust seasoning to taste.
  • Grill or pan fry burgers.
  • For the last minute of cooking, place half a roasted red pepper on top to heat through.
  • Toast muffins or buns.
