1 small orange bell pepper, seeded and quartered
2 large Portobello mushroom caps, stemmed, sliced
1 small summer squash, cut on bias
1 (14-ounce) can artichoke hearts, drained, rinsed and quartered
1/4 cup olive oil, plus more to taste
Salt and freshly ground black pepper
1/2 cup feta cheese, diced
1/4 cup kalamata olives, pitted
3 cups baby spinach
1 cup packed basil leaves

Steps:

  • Place all vegetables in a large mixing bowl. Add 1/4 cup oil and season with salt and pepper, to taste. Toss well making sure each vegetable gets covered with oil. Place a grill pan over medium heat. Once heated, place your vegetables on grill and cook accordingly: grill mushrooms about 5 minutes per side; peppers and squash about 3 minutes per side.
  • Once all the vegetables are grilled place them in a large serving bowl to slightly cool. Dice and add feta cheese, pitted olives, spinach and basil leaves. Gently toss to mix well and drizzle more oil, to taste, if necessary and serve.

2 tablespoons chopped fresh basil leaves
3 tablespoons white wine vinegar
1 teaspoon Dijon mustard
1 teaspoon salt
1 1/2 pounds small red potatoes
1/2 teaspoon salt
2 tablespoons olive or vegetable oil
1 small red bell pepper, chopped (1/2 cup)
1/2 cup pitted ripe olives

Steps:

  • In tightly covered container, shake all vinaigrette ingredients.
  • In 2-quart saucepan, place potatoes; add enough water just to cover potatoes. Add 1/2 teaspoon salt. Cover and heat to boiling; reduce heat to low. Cook covered about 15 minutes or until potatoes are just tender; drain. Cool slightly; cut potatoes in half. Toss with 2 tablespoons oil.
  • Heat coals or gas grill for direct heat. Cover and grill potatoes over medium heat 5 to 10 minutes, turning occasionally, until golden brown and tender.
  • In large bowl, toss potatoes, bell pepper, olives and vinaigrette.

3 Yukon Gold potatoes, cubed
3 red potatoes, cubed
¼ cup canola oil
3 tablespoons distilled white vinegar
1 tablespoon Dijon mustard
½ teaspoon celery salt
¼ teaspoon pepper

Steps:

  • Preheat an outdoor grill for high heat.
  • Bring a large pot of salted water to a boil, and cook potatoes 10 to 15 minutes, until tender but firm. Drain, and transfer to a medium bowl.
  • In a small bowl, mix canola oil, vinegar, Dijon mustard, celery salt, and pepper. Toss 1/2 the mixture with the potatoes.
  • Arrange potatoes in a single layer on a sheet of foil, and place on the prepared grill. Turning occasionally, cook 7 to 9 minutes, until lightly browned. Remove from heat, and cool. Toss with remaining oil mixture to serve.

Mediterranean-style mustard potato salad with fresh dill, parsley, red onions and capers. The key to this potato salad is to dress the boiled potatoes while they're hot with the Dijon mustard dressing, this way, they will better absorb all the flavors. And for best results, allow the potato salad some time to marinate before serving.

1 1/2 lb small potatoes (such as new potatoes, Yukon gold potatoes, or red potatoes)
Water
tsp salt
1/4 cup chopped red onions
1/4 cup fresh chopped parsley
1/4 cup chopped dill
2 tbsp capers
1/3 cup extra virgin olive oil
2 tbsp white wine vinegar
2 tsp Dijon mustard
1/2 tsp ground sumac
1/2 tsp black pepper
1/4 tsp ground coriander

Steps:

  • Wash and scrub the potatoes and dry them well. Slice potatoes thinly using a mandoline slicer. I used this slicer (affiliate link).
  • Place potatoes in a pot and add water to cover by 1 inch. Bring to a boil. Add salt. Turn the heat down and allow the potatoes to simmer for about 6 minutes or so until they're tender (you should be able to poke the potatoes with a fork).
  • Add vinaigrette ingredients to a small bowl and whisk until well-combined.
  • When the potatoes are ready, remove from heat and drain well. Place them in a large mixing bowl and immediately dress them with the Dijon mustard dressing. Gently toss to coat.
  • Add onions, fresh herbs, and capers. Toss gently to combine.
  • Transfer the potatoes to a serving platter. For best results, allow the potato salad some time to marinade before serving. You can refrigerate it for 1 hour or so but be sure to bring it to room temperature before serving.

¼ cup chopped red onions
¼ cup chopped kalamata olives
¼ cup chopped fresh parsley

⅓ cup fresh lemon juice
¼ cup extra virgin olive oil
2 teaspoons Dijon mustard

Steps:

  • Place the potatoes in large pot and cover with water. Add salt and bring to a boil. Reduce to a simmer and cook until the potatoes are fork tender, about 15 to 20 minutes. Drain then set aside to cool.
  • When the potatoes are cooled, cut them into bite sized chunks and transfer to a large salad bowl.

2 lbs boiling potatoes, scrubbed but not peeled
salt & freshly ground black pepper
2 -3 tablespoons strained fresh lemon juice
cayenne pepper (optional)
3 -5 tablespoons extra virgin olive oil
1/3 cup finely chopped onion, preferably mild ones
4 small tomatoes (optional)
1/3 cup chopped parsley
2 teaspoons capers, drained (optional)
1/2 cup flavorful olive, such as kalamata, pitted and cut in half (optional)

Steps:

  • Cut any large potatoes in half to speed up the cooking.
  • Put the potatoes in a large saucepan, completely cover with water and add salt.
  • Bring to a boil.
  • Cover and simmer over medium-low heat until a knife can pierce the center of the largest potato easily and the potato falls from the knife when lifted, about 25 minutes.
  • Meanwhile prepare the dressing: In a small bowl whisk 2 tablespoons lemon juice with a pinch of salt, pepper, and cayenne pepper.
  • Add 3 tablespoons olive oil and whisk again.
  • Drain the potatoes in a colander, rinse them briefly and leave just until cool enough to handle.
  • Peel them if you like, and cut them into 1 inch cubes.
  • Put them in a large bowl and add the onions, 3 tablespoons dressing and a sprinkling of salt and pepper.
  • With a rubber spatula, fold together gently but thoroughly.
  • Let potatoes cool to room temperature.
  • Dice the tomatoes to add them to the salad, or cut them in thick wedges to use as garnish.
  • Whisk the remaining dressing, pour it over the potatoes and fold it together.
  • Add the parsley, capers, half the olives and the diced tomatoes to the potatoes and fold together lightly.
  • Taste, adjust seasoning, and add more lemon juice and olive oil if needed.
  • Garnish with the remaining olives and with the tomatoes, if you've cut them in wedges.

1/4 cup drained capers
1 cup black olives, pitted
1/2 cup fresh flat-leaf parsley, leaves

  • Heat grill or oven to 450 degrees. Roast peppers on grill or over gas flame until charred on all sides. Place in a bowl, and cover with plastic wrap until cool enough to handle. Remove skin by rubbing with a paper towel. Remove seeds and stem, cut pepper into 1/4-inch-thick strips, and set aside.
  • In a bowl, combine potatoes, 2 tablespoons olive oil, and 1/2 teaspoon salt. Grill potatoes until browned on both sides and tender, or roast on a baking tray in oven until nicely browned, about 40 minutes, turning halfway through cooking time.

2 tablespoons grill seasoning blend, 2 palm full (recommended: Montreal Steak Seasoning by McCormick Grill Mates)
2 tablespoons rosemary leaves, 3 sprigs, stripped and chopped
2 navel oranges, peeled and chopped
1 small red onion, thinly sliced
4-5 cups arugula, chopped, 2 bunches
2 tablespoons red wine vinegar

Steps:

  • Place potatoes in large bowl and toss with about 3 tablespoons extra-virgin olive oil, 2 tablespoons grill seasoning and rosemary. Grill potatoes 4 to 5 minutes on each side.
  • While the potatoes are cooking, combine oranges and red onion and dress with red wine vinegar and some extra-virgin olive oil.
  • Remove the potatoes from the grill to the dressed oranges and onions, toss to coat. When you grill potatoes they will be slightly drier than when you use other methods of cooking. By adding the potatoes to the dressing while they are hot, they really will soak in the dressing.
  • When ready to serve, add the arugula to the potatoes and toss to distribute.

  • Cut the potatoes as desired on a salad bowl. Add chopped cucumber, green onions and kalamata olives. I left the skin on for the cucumber, but you can peal it or leave it, it's up to personal taste.
  • Sprinkle with dill, salt and olive oil. You can use any type of vinegar you like. I usually alternate between balsamic vinegar and red wine vinegar. Balsamic vinegar tastes yummy but it can stain the potatoes a bit so be careful if you're serving to guests. Toss it and it's ready to serve!!!
