This is the marinade I use for the chicken in my chicken lime taquitos, but it is so wonderful plain, I thought I'd post it separately. You can use any chicken pieces you prefer. This is just wonderful!

1/2 cup lime juice
1/3 cup olive oil
4 green onions, chopped
4 garlic cloves, minced

  • Pound with a meat mallet to 1/4-in. thickness. In a shallow dish, combine the lime juice, oil, onions, garlic, 2 tablespoons dill and pepper; add chicken. Turn to coat; refrigerate, covered, 2-4 hours. , Drain and discard marinade. Grill chicken, uncovered, over medium-hot heat for 6-7 minutes on each side, or until a thermometer reaches 165 °. 1 lime, juiced
2 tablespoons honey
1 rounded teaspoon cumin
A handful cilantro, finely chopped, about 1/2 tablespoons
2 tablespoons extra-virgin olive oil, canola, or corn oil
Four 6 to 8-ounce boneless skinless chicken breast
1 teaspoon grill seasoning blend or coarse salt and pepper
Toppings: lettuce, tomato, red onion, and sliced avocado
1 cup prepared salsa verde
4 crusty rolls, split
Five Vegetable Slaw Salad, recipe follows
Assorted tortilla chips, for serving
1 pound packaged shredded cabbage
1 large red bell pepper, seeded and cut across into thin slices
1 large green bell pepper, seeded and cut across into thin slices
4 scallions, sliced thinly on an angle (greens and whites)
1/2 European seedless cucumber, halved lengthwise and thinly sliced
2 limes, juiced
1 /4 cup (3 healthy drizzles) honey
3 tablespoons (a couple of glugs) vegetable or light colored oil
Salt and pepper

Steps:

  • Combine first 5 ingredients in a small bowl. Sprinkle chicken with seasoning blend or salt and pepper. Coat chicken in dressing and set aside for 10 minutes.
  • Grill chicken on an indoor electric grill 6 to 7 minutes on each side or pan fry over medium high heat in a large nonstick skillet uncovered 6 minutes per side.
  • Slice chicken breasts on an angle and pile meat roll bottoms. Top with lettuce, tomato, red onion and sliced avocado. Spread salsa on roll tops as a condiment. Serve sandwiches with Five Vegetable Slaw Salad and assorted tortilla chips.
  • Combine vegetables in a bowl. In another small bowl, whisk lime juice and honey, and drizzle in oil to combine dressing. Pour dressing over slaw and season with salt and pepper, to taste.

4 slices bacon
Vegetable oil, for oiling the grill grates
Kosher salt and freshly ground black pepper
1/4 cup chipotle mayonnaise (or other spicy mayonnaise)
4 panini rolls, split
1 avocado, sliced
1 tomato, sliced
1 cup loosely packed fresh cilantro leaves
4 small radishes, thinly sliced

Steps:

  • Combine the chicken breasts and 1/2 cup of the Mexican Style Cilantro Lime Vinaigrette in a resealable plastic bag. Let marinate at room temperature for 15 minutes.
  • Meanwhile, cook the bacon in a large skillet over medium heat until crisp, about 5 minutes per side. Drain on paper towels.
  • Preheat an outdoor grill or grill pan to medium-high heat.
  • Oil the grills grate or grill pan. Remove the chicken from the marinade. Sprinkle with salt and pepper. Grill the chicken, turning once, until cooked through, about 4 minutes per side, depending on thickness.
  • Spread the mayonnaise on the cut surfaces of the rolls. Slice the chicken and add to the rolls. Break the bacon in half and place on top of the chicken. 1/4 cup extra-virgin olive oil
1/2 cup chopped cilantro
2 garlic cloves, chopped ((about 2 tsp.) )
2 limes juiced + the zest of 1 lime

Steps:

  • Place chicken breasts in a mixing bowl, baking dish, or plastic bag. You'll need something that can be covered/closed so the chicken can sit in the marinade.
  • Next, create the marinade. In a small mixing bowl, combine the olive oil, cilantro, garlic, lime juice, lime zest, cumin, salt & pepper. Mix until combined. Pour marinade over chicken and ensure all chicken gets coated with marinade.
  • Cover chicken and place in refrigerator. Let chicken marinade for a minimum of 30 minutes, but you can marinade overnight as well.
  • When ready, preheat grill to 400-425 degrees F. Take chicken out of fridge and allow to sit at room temp while grill is preheating (this helps the chicken to cook more evenly and create even juicier chicken).

1/2 cup fresh lime juice
1/2 cup extra virgin olive oil
2 teaspoons dry tarragon
1 tablespoon minced onion
1/2 teaspoon hot sauce

Steps:

  • Place olive oil, lime juice, onion, tarragon, salt, and hot sauce into a large, resealable plastic bag; shake to mix.
  • Add chicken thighs, coat with marinade, squeeze out air, and refrigerate for at least 4 hours. (I leave it in overnight).

1/4 cup fresh squeezed lime juice
1 tablespoon white vinegar

4 cloves of garlic, minced
1 inch nub of fresh ginger, peeled and minced
1/4 cup soy sauce or coconut aminos
1/4 cup lime juice
1/4 cup avocado oil or olive oil
1 tbsp fish sauce

Steps:

  • At least 1 hour prior to cooking combine minced garlic and ginger, lime juice, coconut aminos or soy sauce, avocado oil, and fish sauce in a large mixing bowl and whisk thoroughly. Add chicken breasts to the bowl and toss until they are evenly coated in the marinade. Cover the bowl and place in the fridge for at least 1 hour to marinate.
  • Clean your grill and preheat to high heat. Once the grill is hot, place marinated chicken on grill grates diagonally. Close the grille and cook for 3 minutes
  • Flip the chicken to the other side maintaining the same diagonal on the grill. Close the grill and cook for 3 minutes.
  • Flip the chicken and rotate 45 degrees - this will ensure the chicken cooks evenly and you get those X grill marks. Close the grill and cook for 3 minutes. Open the grill and flip again without rotating, close and cook for final 3 minutes - in total your chicken should cook for 12 minutes.

This is great as a main dish, but if you have left-overs or make a double batch, the chicken can be cut into strips and frozen, then used on salads or in wraps for lunch. I have two recipes I'm posting that use these chicken strips: Chili-Lime Chicken and Avocado Wraps, Chili-Lime Chicken Mexi-Ranch Salad. I also use the leftovers for impromptu fajitas. (In our house, these are "Make it your own self" meals.) I've never tried this marinade on flank steak, but I bet all of the above would be great with it as well. If you try it before I do, please let me know how it turns out!

4 cloves garlic (fresh, peeled)
⅔ cup lime juice (the juice of about 5 limes)
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon sugar
1 cup olive oil
1 cup water
3 - 5 pounds chicken (light or dark meat, as desired)

Steps:

  • Combine cilantro, garlic, lime juice, olive oil, salt, pepper, sugar, and water in a blender and pulse until well combined. (Makes about 3 cups total).
  • Add chicken to a gallon bag or other container and pour about half of the marinade over, making sure it is well coated. Reserve remaining marinade for later.
  • Allow chicken to marinate for desired time (but not longer than overnight).

1/4 teaspoon cayenne
1/4 cup vegetable oil
8 whole chicken legs (about 4 pounds)

Steps:

  • In a saucepan whisk together the zests, the juices, the sugar, the garlic, the cayenne, and salt and pepper to taste and simmer the mixture, stirring, for 5 minutes, or until the sugar is dissolved. Whisk in the oil and let the marinade cool.
  • In a large dish arrange the chicken, pricked in several places with a fork, in one layer, pour the marinade over it, and let the chicken marinate, covered and chilled, turning it once, for 1 to 3 hours.
