GRILLED TURKEY SAUSAGE KABOBS
We love SOPP: sausage, onions, potatoes, and peppers all fried up in one pan. It's delicious. This a a summertime take on this one-dish staple. Instead of pan-frying it, you skewer it and grill. Drizzle with more olive oil, salt, and pepper after grilling if desired.

Steps:
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Place potatoes into a microwave-safe bowl with water, cover, and cook on high power until tender, about 8 minutes.
- Cut each smoked sausage rope into 5 pieces. Chop each onion and bell pepper into 10 chunks. Separate the onion chunks in half.
- Thread onion, potato, sausage, 3 bell peppers, sausage, potato, and onion onto a metal skewer, in that order. Repeat with remaining skewers. Add remaining potatoes to each skewer.
- Place kabobs on a plate and drizzle generously with olive oil and season with salt and pepper.
- Cook kabobs on the preheated grill, with the lid open, for 3 minutes. Turn heat to low and close the lid for 3 minutes more. Flip kabobs and cook, with the lid closed, for 6 minutes more. Remove to a serving platter.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Combine bell peppers and onions in a large bowl. Add olive oil, Italian seasoning, salt, and pepper. Stir to combine. Using a toothpick, poke 4 holes into each sausage to prevent them from exploding on the grill.
- Place vegetables in a grill basket and cook for 2 minutes. Add sausage directly to the grate and grill for 4 minutes. Flip sausage over, stir vegetables, and grill for 4 minutes more.

ORZO WITH SAUSAGE, PEPPERS AND TOMATOES

- Using tongs, place the bell peppers over a gas flame. Cook, turning occasionally, until the skins are charred on all sides, about 5 to 6 minutes. (Alternatively, place the peppers on a baking sheet and broil for 5 to 8 minutes, until charred.) Place the charred peppers in a medium bowl. Cover the bowl with plastic wrap and allow the peppers to steam for 20 minutes. Under running water, peel away the charred skin from the peppers. Pat the peppers dry with paper towels. Remove the stem and seeds from the peppers and cut into 1/4-inch thick slices. Set aside.
- In a medium saucepan, bring the chicken stock, water, and kosher salt to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes.
- While the pasta is cooking: In a large skillet, heat the oil over medium-high heat. Add the turkey sausage and saute until cooked through, about 4 minutes. Add the garlic and cook for 1 minute. Add the bell peppers, tomatoes, and red pepper flakes, if using, and cook until heated through, about 2 minutes.
- Drain the pasta, reserving about 1/2 cup of the cooking liquid, and transfer to a large serving bowl. Add the sausage mixture, 1 tablespoon of the parsley, and season with salt and pepper, to taste. Toss well to combine all ingredients, adding reserved cooking liquid, if needed, to loosen the pasta. Top with the ricotta salata and sprinkle with the remaining parsley. Serve.

- Preheat the broiler. Pierce the sausages all over with a fork, arrange on a baking sheet and broil, turning halfway through, until golden brown, about 8 minutes (they will not be fully cooked). Transfer to a cutting board and cut in half on the diagonal.
- Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, fennel and onion and cook, stirring, until they soften slightly, 3 minutes. Add 1/2 teaspoon salt, the garlic, rosemary, red pepper flakes and fennel seeds. Cook, stirring, 1 more minute.

- If you are using a gas grill heat your grill to between 300 and 350 degrees. If you are using coals, wait until the coals turn grey. Cooking sausages to high will result in a burned outside, and an interior that is not cooked. Cooking the sausages too low will cause your sausage to dry out. Slice the pepper and onion into 1/4 inch thick slices.
- Brush pepper and onions with olive oil. Sprinkle onions and pepper with a bit of salt. Place onion and pepper slices on the grill. Place sausages on the grill and cook for approximately 6 to 7 minutes. Turn onion and pepper slices over when they begin to brown. Pepper and onion slices will cook faster on the second side, remove when they have browned to your desired level. Flip sausage over and cook on the other side for another 6 to 7 minutes or until the sausages have finished cooking. When cooking, please ensure that the turkey reaches an internal temperature of 165 degrees Fahrenheit. Assemble sandwiches by slicing the sausages into 1/4 to 1/3 inch thick diagonal pieces. Place 5 or 6 pieces of sausage on each bun and add pepper and onion slices. You may desire to add some mayonnaise or mustard to your sandwich.
