GRILLED ITALIAN PASTA SALAD
My Italian pasta salad takes advantage of summer by grilling the vegetables and then tossing them with homemade Italian dressing. Light, fresh, and easy!

Steps:
- Mix together all the dressing ingredients until well blended.
- In a medium bowl, toss the dressing with the mozzarella balls and sliced basil. Set the mozzarella aside to marinate while you make the rest of the salad.
- Cook the pasta in well salted water according to package directions. Drain the pasta and toss it with 1 tablespoon of olive oil. Let the pasta cool to room temperature.
- Heat the grill. Put the grilling basket on the grill and heat until very hot. Toss the summer squash and broccolini with a little bit of olive oil and add them to the grill basket. Grill on high until the vegetables are tender and charred, 7-8 minutes. Cut the vegetables into bite sized pieces.
- In a large serving bowl combine the pasta, summer squash, broccolini, cherry tomatoes, and kalamata olives. Pour the mozzarella and Italian dressing over the top and toss to combine.

ITALIAN CHICKEN PASTA SALAD

- Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente, according to the package directions. Drain in a colander, rinse with cold water and shake until very dry. Transfer the pasta to a large mixing bowl, drizzle 2 tablespoons of the olive oil over it and toss well to coat.
- Add the chicken, cucumber, tomatoes, olives, peppers, salami, onions and parsley. Season with salt and toss well to combine.
- In a small bowl, whisk together the vinegar and remaining 1/2 cup olive oil; pour it over the salad and toss well. Taste and adjust the seasoning if necessary. For best flavor, let the salad stand at room temperature for about 30 minutes before serving.
GRILLED SUMMER VEGETABLE PASTA

- Bring a large pot of salted water to a boil.
- Meanwhile, drain the tomatoes (reserving the juice for another use if desired). Heat 1 tablespoon of the olive oil in a medium saucepan over medium heat. Add the garlic and crushed red pepper flakes and cook, stirring, until aromatic, 1 to 2 minutes. Crush the tomatoes with your hand, adding them to the saucepan as you go. Season with salt and pepper. Add the basil and parsley sprigs (reserve the chopped herbs for later) and bring to a simmer over medium-high heat. Reduce the heat to low and cook at a very low simmer for about 15 minutes or until ready to serve.
- While the sauce cooks, heat a large double-burner grill pan over medium-high heat. Toss the pepper, squash, zucchini and onion with the remaining tablespoon olive oil, making sure to coat all sides. Sprinkle with salt and grill, turning once, until well-marked and crisp-tender, 4 to 6 minutes per side, depending on the vegetable. Transfer the onion to a large mixing bowl. Transfer the pepper, squash and zucchini to a cutting board and cut crosswise into strips. Add to the bowl with the onion and cover with foil.
- Cook the penne in the boiling water according to package directions. Drain and add to the bowl with the vegetables. Remove the herb sprigs from the sauce and stir in half of the chopped herbs. Add to the bowl and toss to coat.
- Serve the pasta in bowls topped with the remaining chopped herbs and Parmesan.
ITALIAN PASTA SALAD
This make-ahead Italian pasta salad is perfect for your next cookout! It's loaded with mozzarella, salami, olives, and tomatoes.

- For the dressing: Whisk together the vinegar, pesto, garlic, salt, and pepper. Gradually add the olive oil, whisking constantly until combined. Set aside.
- For the pasta salad: Add the cooked pasta to a large bowl. Add the tomatoes, salami, mozzarella, olives, bell peppers, onion, parmesan, salt, basil, and parsley. Whisk the dressing once more, then pour it over the salad, stirring to combine.
- Just before serving, sprinkle with more chopped basil, parsley, and parmesan, if you like.
GRILLED RATATOUILLE PASTA SALAD

- Prepare a grill for medium heat. Toss zucchini, eggplant, and 1/4 cup oil on a rimmed baking sheet; season with 1 tsp. salt and 1/2 tsp. pepper. Grill, turning often, until steamy, tender, and charred all over, 8-12 minutes. Return to baking sheet and let cool.
- Cook pasta according to package directions.
- Slice grilled vegetables into bite-size pieces and transfer to a large bowl. Add tomato, cheese, vinegar, thyme, and 1 1/2 tsp. salt, 1/2 tsp. pepper, and 1/2 cup oil and mix to combine. Drain pasta and immediately add to bowl with vegetables. Mix well to combine, then top with basil.
- Do Ahead: Vegetables can be grilled 3 days ahead. Transfer (whole) to an airtight container and chill.
GRILLED CHICKEN PASTA SALAD

- In a large resealable plastic bag, combine the first six ingredients. Cut each chicken breast into four strips; add to marinade mixture. Seal bag and turn to coat.
