GRILLED HOT HONEY BISCUITS WITH THYME-ROASTED PEACHES
Take advantage of fresh peaches by roasting them and serving them over warm biscuits drizzled with honey.

Steps:
- To make the Thyme-Roasted Peaches:.
- Cut the peaches in half and remove the pits. Cut the halves into 4 wedges each. Lay half of the peaches in two rows on a piece of aluminum foil large enough to fold over them on both sides.
- Scatter one tablespoon of the butter, half of the thyme and 1 tablespoon of honey over the peaches. Repeat this process with another piece of foil and the remaining peaches and ingredients.
- Lightly sprinkle salt over the prepared peaches. Bring the long ends of the foil to meet over the peaches and fold over to seal. Bring the short ends over and press together to seal. This will create two flat packets.
- Place the packets, seam-side down on a grill set to medium heat. Cook with the grill cover on for 5 minutes. Flip the packets and cook for another 5 minutes until the peaches are tender when pierced with a fork but not over cooked. Let rest.
- To make the Grilled Hot Honey Biscuits:.
- In a medium bowl, combine the flour, sugar, salt, baking powder and lemon zest. Add the butter and work it into the dry mixture with your fingers until the butter forms small pea-sized clumps. Stir in the buttermilk and gently knead the dough until it comes together.
- Roll into a 3-inch-thick log and cut into 8 even pieces. Press the biscuits into 1/2-inch thick disks. The biscuits should be flatter than normal to enable them to be cooked on the grill.
- Spray both sides of the biscuits with nonstick spray and place on the grill set to very low heat. Cook for 5 minutes on each side with the grill cover on. The biscuits are done when they are firm and not squishy in the middle. (NOTE: due to the inconsistent heat of grills, it's important to monitor the biscuit's cooking. If needed, flip the biscuits more than once to ensure they are cooked through without burning them.).
- Once the biscuits are done, remove from the grill and drizzle with the hot honey. Set aside to cool slightly.
- To assemble:.
- Top the biscuits with 3 or 4 pieces of peaches, making sure to include any delicious juices that seeped out and garnish with a dollop of crème fraiche or unsweetened whipped cream.

- Heat grill or Big Green Egg to 450°F. In the Egg, put the convEGGtor (legs pointing up) under the grill grate.
- Add the cold butter, flour, baking powder, salt, and thyme to the bowl of a food processor. Pulse until the butter is broken down into pea-sized bits in the flour.
- Pour the butter-flour mixture into a mixing bowl. Add the buttermilk and honey, and use a fork to stir until just incorporated.
- Pour the biscuit dough onto a floured surface and sprinkle flour over top. Quickly form into a ~1 to 1-½-inch thick disk. Use a 2-1/2 inch biscuit cutter to cut out biscuits by pushing - not twisting - the biscuit cutter down straight into the dough. Put the biscuits in a cast iron pan.
- Bake in the grill or BGE at 450°F for 12-15 minutes over indirect heat (i.e. over the convEGGtor in a BGE or over burners that are off in a grill) or until biscuits are cooked through and golden on top.
- Brush melted butter over the tops of the biscuits and serve.

GRILLED PEACHES WITH THYME, MASCARPONE AND HONEY
Steps:
- Preheat a grill to medium-high.
- Place the peaches cut side down onto the grill and cook until lightly charred, 2 to 3 minutes, depending on the grill. Transfer the peaches, cut sides up, to a grill-proof baking dish or baking sheet and drizzle evenly with the 6 tablespoons of honey. Sprinkle with the thyme, then place the dish on the grill and cover the grill. Continue to cook until the peaches are soft, about 5 minutes, again depending on the grill. Remove the baking dish from the grill and divide the peach halves between 6 dessert plates. Divide the mascarpone evenly among the plates and drizzle with additional honey, if desired. Serve immediately.
SPICY HONEY-GLAZED GRILLED PORK CHOPS WITH PEACH PICO DE GALLO
These grilled pork chops are flavored with a spiced-honey glaze that helps them get a nice char. Serve with a chunky peach pico de gallo.

- Trim excess fat from pork chops. Pat dry and season both sides with salt. Set aside.
- Mix red pepper flakes, garlic powder, onion powder, paprika, ½ tsp. cumin seeds, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a small bowl to combine. Heat honey in a small saucepan over medium just until warm. Remove pan from heat and stir in spice mixture. Set spiced honey aside.
- Toss peaches, red onion, jalapeño, lime juice, cilantro, remaining ½ tsp. cumin seeds, and remaining 2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt in a medium bowl to combine. Chill peach pico de gallo until ready to serve.
- Prepare a grill for 2-zone heat (for a charcoal grill, bank two thirds of coals on one side of grill and scatter remaining coals on other side; for a gas grill, set one burner to high heat and remaining burners to medium-low); oil grate. Grill reserved chops on hotter side of grill, moving to cooler side as needed to control flare-ups, until lightly charred on both sides, about 3 minutes per side. Move pork chops to cooler side of grill, cover, and grill, turning often and basting with reserved spiced honey, until an instant-read thermometer inserted into the thickest part of pork chops registers 145°, about 5 minutes longer. Transfer pork chops to a platter and let rest 10 minutes.
- Spoon peach pico de gallo over pork chops just before serving.

- Preheat a grill for medium heat.
- Melt butter in a skillet over medium heat. Add the garlic, and cook until fragrant, 1 to 2 minutes. Whisk in honey and lemon juice. Reserve half for basting, and brush the other half onto the chicken breasts.

ANISE & HONEY BISCUITS
These delightful, sweet biscuits were heavenly hot from the oven, drizzled with honey, but they also kept well and were good the next morning for breakfast and at lunch with a little cheese. I used anise seed from www.Penzeys.com, and it had a terrific flavor. The seeds soften during the baking process, and it smells like Springerle cookies when the biscuits are baking (but these are much faster to make!)

- Pre-heat oven to 425 degrees.
- Line a baking sheet with parchment or a silicon-baking mat.
- In a large bowl, combine the flour, baking powder, and salt.
- Cut in the cold butter with a pastry blender or two knives.
- Stir in the anise seed.
- Make a well in the center and pour in the milk and honey.
- Stir to form a soft ball.
- Knead a few times on a floured board.
